1 fluid ounce amber rum
3 fluid ounces pineapple juice
2 fluid ounces sweet and sour mix
2 fluid ounces cream of coconut (such as Coco Lopez®)
1 fluid ounce half-and-half cream
ice cubes, as needed
¼ fluid ounce dark rum

Steps:

  • Pour the light rum, amber rum, pineapple juice, sweet and sour mix, cream of coconut, and half-and-half cream into the pitcher of a blender with ice; blend until the cocktail has a slushy texture. Pour the slushy mixture into a glass.
  • Slowly and gently drizzle the dark rum over the drink so it just floats on top; serve.

  • Note: This recipe is my adaptation of "The Authentic Piña Colada" printed on back of the Coco Lopez Real Cream of Coconut® can, which is the same as this but uses all (3 ounces) regular rum only ~ It's a great drink but I just love the inclusion of part coconut rum to make it even better!

To wash it all down, diners choose from the wines of Chile, Argentina and Spain - or from cocktails like the restaurant's namesake Chicama Colada.

2 ounces Simple Syrup, recipe follows
1 1/2 ounces rum, such as Smith and Cross
1 ounce heavy cream
2 tablespoons shredded sweetened coconut
1 teaspoon vanilla extract
2 small fresh red chile peppers, stemmed and seeded, plus a chile slice, for garnish
1 cup sugar

Steps:

  • Add the pineapple juice, Simple Syrup, rum, cream, coconut, vanilla and chile peppers to a blender, add ice to just above the liquid level and blend until smooth. Pour into a glass, garnish with a chile slice and serve.
  • Combine the sugar and 1 cup water in a small saucepan and bring to a boil. Cook, stirring, until the sugar dissolves. Remove from the heat and let cool completely. Keep covered in the refrigerator up to 1 month.

30ml yuzu sake
70ml pineapple juice, plus pineapple leaves to garnish (optional)
15ml coconut liqueur (we used Kalani)
15ml lime juice, plus a lime wedge to garnish (optional)
15ml mango cordial (see below)
ice
200 sugar
200g chopped mango (prepared weight)
50ml lemon juice

Steps:

  • First, make the mango cordial. Tip the sugar into an airtight container, add the mango and leave at room temperature for 24 hrs. After 24 hours, add 100ml water and stir. Strain the liquid into a jug through a fine mesh sieve, discarding the mango. Stir in the lemon juice. Will keep in a sealed container in the fridge for up to a week.
  • Put a hurricane glass into the fridge to chill. Pour the sake, pineapple juice, coconut liqueur, lime juice and 15ml of the mango cordial into a cocktail shaker filled with ice. Shake vigorously for approximately 10 seconds. Once the glass is cold, strain in the cocktail and garnish with pineapple leaves or a lime wedge, if you like.

1/2 cup sweetened shredded coconut
1 can (20 ounces) crushed pineapple, undrained
1/3 cup white rum
1 package white cake mix (regular size)
1/2 cup butter, melted
1/2 cup warm water
Whipped cream and maraschino cherries, optional

Steps:

  • Preheat oven to 350°. Evenly spread coconut, nuts and pineapple in a greased 13x9-in. baking dish; drizzle rum over top. Sprinkle with cake mix. Drizzle with butter and water, Bake until golden brown and bubbly, about 45-50 minutes. Serve warm with whipped cream and cherries, if desired.
