There are few dishes in life that I have zero willpower to resist even if my life depended on it and Mariquitas...

Number Of Ingredients 4

3 Green Plantain Peeled
4 cups Cold Water
2 tsp salt
Canola or Vegetable Oil

Steps:

  • Peel plantains and then slice thinly either by hand or by using a mandolin slicer
  • Then place sliced plantain into bowl with cold water and add salt. Mix until well combined
  • Continue slicing plantains and placing into water until all done
  • Once the plantain are all sliced, drain water & heat up canola or vegetable oil
  • Very carefully place plantains into oil
  • Gently nudge plantains so that they don't clump up together while frying
  • After about 5 mins, remove plantains and drain excess oil onto a paper towel
  • Once all of the plantains are fried, garnish with salt & enjoy!

Found this on a web site. According to the 3 guys from Miami it is a Cuban sauce used for dipping fried plantain chips. What could be bad? I think Mariquitas are actually the chip so this is a chip sauce. But I could be wrong too.

8 garlic cloves
1/4 cup cilantro, chopped
1 lime, juice of, only
2 tablespoons white vinegar
1/2 cup olive oil
salt and pepper

Steps:

  • Place the garlic, cilantro, lime juice, and vinegar in a food processor and puree until combined well.
  • Heat the olive oil in a small saucepan until hot, but not smoking.
  • Remove pan from heat.
  • Pour the pureed mixture into the oil whisking constantly for a minute or two.
  • Serve warm.
