Chicken, asparagus, and mushrooms are sauteed in a garlic and olive oil base. You can add more mushrooms if desired. Serve with rice or pasta, and a glass of white wine!!!

½ teaspoon dried parsley
½ teaspoon dried basil

1 ½ cloves garlic, minced

1 ½ teaspoons white cooking wine
2 skinless, boneless chicken breast halves, sliced
½ pound fresh asparagus, trimmed and cut into thirds
1 cup sliced fresh mushrooms

Steps:

  • Melt the butter with the olive oil in a skillet over medium-high; stir the parsley, basil, oregano, garlic, salt, lemon juice, and wine into the butter mixture. Add the chicken; cook and stir until the chicken is browned, about 3 minutes. Reduce heat to medium; cook, stirring occasionally, until the chicken is no longer pink inside, about 10 more minutes.
  • Add the asparagus; cook and stir until the asparagus is bright green and just starting to become tender, about 3 minutes. Stir in the mushrooms and cook an additional 3 minutes to let the mushrooms release their juice. Serve hot.

1 1/2 - 2 lbs. Chicken Breast ((cut into bite-size pieces))
1-2 teaspoons Salt
1/2 teaspoon Pepper
1/2 teaspoon Onion Powder
6 Tablespoons Butter
2 teaspoons Minced Garlic
1 lb. Asparagus ((cut the end off))
1/2 cup Chicken Broth
1 Lemon ((juiced))
1/4-1/2 teaspoon Red Pepper Flakes ((optional))

Steps:

  • Heat a large skillet over medium-high heat. Add butter to pan and then garlic. Saute for 1 minute. Watch carefully as garlic can easily burn and turn bitter.
  • Season chicken breast with salt, pepper, and onion powder. Add to skillet and sauté for 5-7 minutes, or until it starts to become a golden color. Once it is cooked add chicken broth and using a wooden spoon, stir all of the browned bits from the bottom of the skillet. Let simmer for several minutes.
  • While the chicken is cooking, fill pot with water and bring to a boil. Once the water reaches a boil, add asparagus and cook for 2 minutes.
  • Move the chicken to one half of the skillet. Add the asparagus to the other half of the skillet. Saute the asparagus for 2-3 minutes or until desired doneness. If you prefer the asparagus to be more cooked, then increase the cooking time.
  • Sprinkle lemon juice all over the chicken and asparagus. Check for seasoning and add more salt, if needed. Sprinkle on red pepper flakes, if using. Pour garlic butter all over the chicken and asparagus and serve.

1 bunch fresh asparagus spears, chopped (about 2 cups)

1/2 cup Gold Medal™ all-purpose flour
2 teaspoons salt
1/4 teaspoon pepper
3 cups fat-free (skim) milk
2 cups diced cooked chicken

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In small bowl, mix cubed bread, cheese and 1/4 cup of the melted butter. Line baking dish with half of the bread-cheese mixture; set remaining half aside.
  • In 10- or 12-inch skillet, sauté or steam asparagus until cooked but slightly crisp. Layer asparagus over bread in dish.
  • In same skillet, cook onion in remaining 1/4 cup melted butter until browned. Stir in flour, salt and pepper. Cook and stir about 1 minute. Gradually add milk, cooking and stirring about 5 minutes or until smooth and thick.
  • Stir in cooked chicken; pour over asparagus. Sprinkle evenly with remaining bread-cheese mixture.

1 1/2 lbs chicken breasts, cubed
1 cup Minute Rice
1 bunch asparagus (big, fat ones -remove bad ends and slice in 1 - 2 inch pieces)
1 onion, medium chopped
8 ounces sliced water chestnuts
1 tablespoon olive oil
1 1/4 cups chicken stock
lemon juice (One big fresh squeeze from 1/2 lemon)
1 1/2 teaspoons roasted garlic
salt (at the addition of every ingredient)
pepper (at the addition of every ingredient)

Steps:

  • Heat pan on medium heat (5.5). Add oil and swirl. Brown onions for about 8 minutes. Remove from pan and reserve.
  • In the same pan, brown chicken breast (cook it almost all the way through). Deglaze with the lemon juice. Add asparagus stems. Cover and cook until almost done then add tips and water chestnuts. Return cover.
  • From time to time, you may have to spash some chicken stock in the pan.
  • Add 1 cup minute rice. Toss. Add 1 - 1/4 cup chicken stock. Toss and pat mixture down, even in the pan. Cover. Bring to a boil then remove from heat.
  • Allow to stand for 5 minutes with the lid on to cook the rice, before serving.

Melt 2 TBSPs butter in a large pan/skillet over medium-high heat Stir in garlic and herbs and cook another minute or so until the garlic is fragrant. 2.
