This Chicken and Sausage Penne Jambalaya is my delicious personal take on a classic recipe, loaded with chicken and Italian sausage that will be ready in only 30 minutes!

6 ounce chicken breast ((1 breast) skinless boneless, cut small pieces)
1/2 teaspoon chili powder (mild)
1/2 teaspoon salt (or to taste)
1/2 teaspoon pepper (or to taste)
1 tablespoon olive oil
2 links Italian sausage (cut in 1 inch pieces)
1 small onion (chopped)
1/2 bell pepper (chopped)
3 cloves garlic (minced)
28 ounce diced tomatoes ((1 can) juice included)
1 cup chicken broth (low sodium)
8 ounce penne (uncooked)
1 tablespoon hot sauce
2 green onions (chopped)
4 sprigs cilantro (chopped)

Steps:

  • Season the chicken with chili powder, salt and pepper.
  • Heat the olive oil in a large skillet. Add the chicken and sausage to the skillet and cook for 6 minutes just until the chicken and sausage start to brown.
  • Add the onion and bell pepper to the skillet and cook for 2 minutes until the onion is translucent. Stir in the garlic and cook for another minute until fragrant.
  • Add the diced tomatoes, chicken broth, penne and hot sauce to the skillet; stir well.
  • Cook for 15 minutes until the penne is al dente.
  • Garnish with green onions and cilantro

2 pounds boneless, skinless chicken thighs, cut into 1 ½-inch cubes
1 pound smoked sausage (such as Conecuh sausage), cut into 1-inch pieces
1 large white onion, chopped (about 2 cups)
1 large green bell pepper, chopped (about 1 ½ cups)
1 cup chopped celery (about 1 stalk)
3 garlic cloves, minced
2 bay leaves
1 tablespoon Creole seasoning
1 teaspoon dried thyme
1 teaspoon dried oregano
2 cups uncooked converted rice
3 cups chicken broth
2 (14.5 oz.) cans diced fire-roasted tomatoes
Sliced scallions (optional)

Steps:

  • Heat oil in a Dutch oven over medium-high. Add chicken and sausage, and cook, stirring constantly, until browned on all sides, 8 to 10 minutes. Remove with a slotted spoon to paper towels; blot with paper towels.
  • Add onion, bell pepper, celery, garlic, bay leaves, Creole seasoning, thyme, and oregano to hot drippings; cook over medium-high until vegetables are tender, 5 to 7 minutes. Stir in rice, and cook until fragrant, about 3 minutes. Stir in chicken broth, tomatoes, chicken, and sausage. Bring to a boil over high. Cover, reduce heat to medium, and simmer, stirring occasionally, until rice is tender, about 20 minutes. Garnish with sliced scallions, if desired.

1-1/2 pound chicken breast and thigh meat, boneless and skinless, cut into chunks
2 tablespoons vegetable oil
3/4 pound sweet Italian link sausage, sliced in ¼ inch rounds
2 cups chopped onion
1 cup chopped celery
1 cup chopped green pepper
2 teaspoons chopped garlic
2 1/2 cups chicken stock
1 teaspoon purchased Cajun Seasoning Mix, or to taste
2 cups long grain rice
1/2 teaspoon salt, or to taste
1/2 teaspoon fresh ground pepper, or to taste
1 cup chopped green onions and/or tomatoes (optional)

Steps:

  • In large Dutch oven, warm oil. Add chicken and sauté over medium high heat until browned. Add sausage to pot; sauté with chicken. Remove both from pot.
  • Add onions, celery, green pepper and garlic; sauté until tender, about 9-10 minutes. If making red jambalaya, add paprika. Return chicken and sausage to pot. Add stock (or stock and tomato juice, or Bloody Mary mix if making red jambalaya) and Cajun seasoning and bring to a boil.
  • Add rice and return to boil. Cover and reduce heat to simmer. Cook 25 minutes. After 10 minutes of cooking, remove cover and quickly turn rice from top to bottom completely. Continue cooking for remaining time. Season with salt and pepper to taste. Add green onions and chopped tomatoes, if desired.

1 package(s) italian sausage ( hot or mild) cut into bite size pieces
2 - chicken breasts cut into bite size pieces also (i often use left over baked chicken or rotisserie chicken if i have it on hand)
1 large red bell pepper chopped
1 large onion diced
4-5 - celery stalks chopped
2 tablespoon(s) garlic minced
1/4 cup(s) white wine
1 1/2 cup(s) long grain white rice
3 cup(s) chicken broth
- tony chaceres seasoning to taste
- salt and pepper to taste

Steps:

  • Heat the oil on medium in a large skillet. Cook chicken through, about 5 minutes and remove from pan. Add more oil if needed and add sausage and cook through. Remove from pan.
  • If needed, add a bit more oil and add diced onion, pepper and celery to pan and sauté for about 5 minutes or until the veggies begin to soften. Add garlic and sauté for about 2 minutes. At this point, I deglaze the pan with the white wine. If you chose not to use the wine pour a bit of the chicken stock in and get all the bits of sausage and browned goodness off the bottom of the pan.
  • Return the meats to the skillet and stir. Add the rice, chicken broth and Tony's. Also add salt and pepper. Amount of salt will depend on the amount of Tony's and the amount of salt in the broth. Bring to a boil. Cover and reduce to simmer and cook for 18-20 minutes. Stir to mix all ingredients well.
  • I serve with salad and crescent rolls.

1 cup red bell pepper, finely chopped

2 bay leaves
2 1/2 cups chicken breasts, chopped

1 teaspoon dried basil

Steps:

  • Heat oil in a large Dutch oven over medium-high heat. Add sausage; cook about 8 minutes, stirring occasionally.
  • Add bell pepper, onion, celery, and bay leaves; cook until vegetables are golden brown, stirring occasionally.
  • Add chicken and next 8 ingredients (through garlic); cook 4 minutes, stirring occasionally.
  • Add diced tomatoes and broth, and bring to a boil. Stir in rice.
  • Cover, reduce heat, and simmer 20 minutes. Discard bay leaves. Stir in green onions.

CAJUN CHICKEN AND SAUSAGE JAMBALAYA

2 pounds mild smoked pork sausage, or any lean high-quality smoked pork sausage, sliced 1/4-inch thick
2 1/2 pounds boneless skinless chicken thigh meat
1 1/2 pounds onions, diced
2 tablespoons minced fresh garlic
1 pound tasso, cubed
3/4 tablespoon whole fresh thyme leaves
3/4 tablespoon chopped fresh sweet basil leaves
1/2 tablespoon coarsely ground black pepper
1/2 tablespoon white pepper
1/2 tablespoon red pepper flakes
1/3 gallon chicken stock
1 1/4 pounds long-grain rice
1 tablespoon freshly chopped curly parsley leaves

Steps:

  • The most important thing is to use the right equipment and I would suggest the following: a 2-gallon cast iron Dutch oven, a high BTU gas stove, and a large stainless steel chef's spoon.
  • Use high heat to preheat the Dutch oven and add the sausage. Using a chef's spoon or large spoon, constantly move the sausage from the bottom of the pot. Be careful not to burn the meat. (Normally I use Manda's sausage because it has little fat, however at this point you may want to drain off all of the excess grease to reduce the fat content from the dish.)
  • Add the thigh meat and brown the chicken on all sides. Again use the spoon to scrape the meat from sticking and burning to the bottom of the pot. Browning the sausage and chicken meats should take 20 minutes. Be careful not to over cook the thigh meat to the point that it shreds.
  • Lower the heat to medium and add the onions and garlic; saute for about 15 minutes or until the onions are very limp and "clear". Scrape the bottom of the pot to remove all the "graton". This is where the jambalaya gets its distinct brown color and taste.
  • Add the tasso, thyme, basil and black and white pepper. Simmer over low heat for 10 minutes. This will give the seasonings time to release their oils and flavors.
  • At this point the jambalaya concentrate can be transferred to smaller containers, cooled to room temperature, covered and refrigerated for future use. (This is what we do commercially; it allows the seasonings to marry.)
  • When you are ready to cook the jambalaya, add the stock to the concentrate and bring to a rolling boil. Add the rice, reduce the heat to medium and gently break up the rice. Using the stainless steel paddle, continue to insure that the rice is not sticking to the bottom of the pot; this is very important!
  • After about 5 minutes, fold in the parsley. Continue to scrape the pot to insure that no rice sticks to the bottom. When the jambalaya returns to a boil, reduce heat to the lowest possible setting and simmer, covered, for at least 25 minutes. Do not remove the cover while the rice is steaming.
  • If Manda's brand sausage is not available, any lean smoked sausage can be substituted. You may have to remove any excess grease from the pot after frying down an unknown sausage.
  • For a richer jambalaya substitute turkey stock for the chicken stock called for above.
  • If no stocks are available, then chicken soup base can be used. Be careful with your seasoning, as bases are usually full of salt.
  • Alternate Method:
  • The jambalaya is best when served directly out of the cast iron pot. While the rice is steaming, the sausage and meat will have a tendency to float to the surface of the jambalaya. Therefore, after the rice has steamed for 25 minutes, use the paddle to gently fold in the meat and seasonings into the cooked rice. This should only be done once or twice, the rice will loose a lot of heat and the rice will break apart.
  • Also note, I do not add salt to my jambalaya. This is because I like to use herbs, tasso and seasonings to satisfy the need for salt. I would suggest having the table set with salt shakers and a selection of hot pepper sauces.

This is an easy recipe that has never let me down. I sometimes use shrimp instead of chicken, which is another tasty option. Just be sure to add the shrimp near the end of cooking time so it doesn't overcook. You might want to start with less than the recommended 1/8 teaspoon cayenne if you are very sensitive to it.

1/2 lb hot Italian sausage or 1/2 lb hot smoked turkey sausage
1 onion, chopped
1 celery rib, chopped
2 cloves garlic, minced
1 lb boneless skinless chicken breast
1 teaspoon oil
1 (16 ounce) can whole tomatoes
1 cup rice
1 teaspoon black pepper
1/8-1/4 teaspoon cayenne pepper
1 teaspoon oregano
1/2 teaspoon thyme
1 1/2 cups chicken stock

Steps:

  • Thaw the okra and slice the sausage into 1/2-inch slices.
  • Cut chicken into bite-size pieces.
  • Heat oil in a large Dutch oven.
  • Add the sausage and cook over medium heat for 5 minutes.
  • Add the chicken, sear both sides, and remove.
  • Add the onion and the celery to the pan and cook until softened, about 5 minutes.
  • Add the garlic and cook 1 minute.
  • Drain the tomatoes, reserving the liquid, and add to the pan.
  • Break up the tomatoes with a fork or your cooking spoon.
  • Stir in the rice, black pepper, cayenne, oregano, and thyme.
  • Measure the reserved tomato juice and enough chicken stock to equal 2 cups liquid and add to the pan along with the chicken.
  • Bring the mixture to a boil over medium-high heat.
  • Lower heat, cover and simmer 10 minutes.
  • Add thawed okra, recover and cook until the rice is tender, about ten minutes.

Steps:

  • Position rack in bottom third of oven and preheat to 350°F. Cook bacon in very large pot over medium-high heat until brown but not yet crisp, stirring often, 8 to 10 minutes. Add smoked sausage, andouille, and tasso. Sauté until meats start to brown in spots, about 10 minutes. Add onions, celery, and bell peppers. Cook until vegetables begin to soften, stirring occasionally, 10 to 12 minutes. Mix in chicken. Cook until outside of chicken turns white, stirring often, 5 to 6 minutes. Mix in paprika, thyme, chili powder, and 1/4 teaspoon cayenne. Cook 1 minute. Add diced tomatoes with chiles and broth; stir to blend well. Add more cayenne, if desired. Mix in rice.
  • Bring jambalaya to boil. Cover pot. Place in oven and bake until rice is tender and liquids are absorbed, 45 to 48 minutes. Uncover pot. Mix chopped green onions into jambalaya; sprinkle jambalaya with chopped parsley and serve.
