Steps:
- Brush the aubergine slices on both sides with oil and fry gently in a pan until golden brown. Season with salt and ground black pepper.
- Heat the oven to 220°C (200°C in a fan oven), 425°F, gas 7.
- Heat the remaining oil and the butter in a large pan. Fry the chicken, onion, garlic and the mushrooms until golden brown. Season with salt and ground black pepper and stir in half the thyme.
- Transfer to a baking dish and top with the aubergine and mozzarella slices. Sprinkle with the remaining thyme and bake for around 15 minutes.
OVEN BAKED CHICKEN AND AUBERGINE (EGG PLANT) PARMIGIANA
Parmesan crusted chicken breasts with meltingly tender aubergines in a tangy tomato sauce and a melted mozzarella topping, this tasty dish is great with ciabatta or baguette and assorted salad leaves. A wonderful version of the Italian classic where the chicken is quickly pan fried to seal in all those lovely juices before being oven baked for ease and convenience. This can be prepped earlier in the day making it a great and tasty meal for a dinner party or company; prepare to oven bake stage and then cover with cling film and store in the fridge - allow to come to room temperature before baking. (Prep time includes pan frying the chicken and aubergines.)

Steps:
- Aubergines. Fry the aubergine slices in olive oil until golden brown, then set aside. OR, brush them lightly with olive oil and spread the slices on a baking (cookie) sheet and place in a pre-heated oven (200C/400F/Gas 5) for about 15 minutes or until golden brown and slightly crispy.
- Tomato sauce. Heat the olive oil in a heavy-based saucepan. Add the onion and garlic and fry until softened, around 5 minutes. Add the chopped tomatoes and fry for a further 3-5 minutes, mixing well. Add the capers, tomato puree, olives and red wine. Season with salt and freshly ground pepper. Bring to the boil. Reduce heat and simmer for 10-15 minutes.
- Mix the breadcrumbs and parmesan cheese together, then beat together the eggs with the water. Dip the chicken in the egg mixture, then coat thoroughly in the breadcrumbs and parmesan cheese.
- Heat the olive oil in a heavy-based frying pan. Add the coated chicken and fry until golden on both sides - about 5 minutes. Set aside.
- Preheat the oven to 180°C/350F/Gas 4. Oil a shallow ovenproof dish and rub with garlic. Place the aubergines in a layer over the base of the dish and then add the fried chicken breasts and pour half of the tomato sauce in and around the chicken.
- Layer the sliced mozzarella over the chicken, then spoon the remaining tomato sauce over the chicken breasts. Sprinkle with a little more grated parmesan. Tuck a few fresh oregano leaves in and around the chicken and sauce.
- Bake the chicken for 40 to 45 minutes until cooked through.
- Serve the chicken on a bed of mixed salad leaves, flavoured with a squeeze of lemon and garnish with basil or oregano and more Parmesan shavings.

CHICKEN TOMATO MOZZARELLA BAKE
You can most certainly use skin on chicken pieces for this recipe, but adjust baking time. This is easy and delicious! If you prefer a spicy sauce, then add in some crushed red pepper flakes to the tomato sauce, also if you want more sauce, then add about another 1-1/2 cups tomato sauce.

- Grease a shallow baking dish.
- Place the sliced onions in bottom of the dish; set aside.
- In a shallow bowl or dish, combine the bread crumbs, 1/2 cup Parmesan cheese, seasoning salt, pepper, cayenne pepper (if using) and garlic powder.
- Coat the chicken is eggs, then in bread crumb mixture.
- Brown the chicken in hot oil in a frypan until browned, and place on top of the onions in the baking dish.

- Preheat oven to 350 degrees Fahrenheit.
- Peel and slice eggplant.
- Lay between two layers of paper towels for 15-20 minutes to drain moisture from eggplant, then discard paper towels.
- Line bottom of 13x9 inch baking dish with the chicken breast slices.
- Cover chicken with the eggplant slices.
- Sprinkle breadcrumbs over eggplant.
- Cover breadcrumbs with mozzarella cheese slices (or grated if you prefer).
- Pour marinara sauce over cheese.
- Sprinkle Parmesan cheese over top.
- Bake for 30-40 minutes at 350 degrees.
LAYERED MEDITERRANEAN MOZZARELLA EGGPLANT (AUBERGINE) BAKE
If anyone is searching for an absolute fantastic eggplant recipe, then this is one you will have to try! To save time combine the bread crumb mixture, and fry the onion and garlic ahead of time or even a day ahead. I would suggest to double this recipe, otherwise you might tend to eat the whole casserole yourself LOL... it is that good!

- Prepare a cookie sheet and coat with non-stick cooking spray (you might need two sheets for the eggplant slices).
- In a bowl mix bread crumbs with about 1-1/2 teaspoons seasoning salt, pepper 1 teaspoon garlic powder and 4 tablespoons Parmesan cheese).
- In a shallow baking dish or bowl dip the eggplant slices in the egg whites and then coat in the seasoned bread crumb mixture.
- Place the eggplant slices on prepared baking sheet/s and spray the eggplant slices liberally with cooking spray; set aside.
- In a medium frypan heat the olive oil over medium heat.
- Add in onion and garlic; cook until softened.
- Add in oregano, 1 teaspoon salt or seasoning salt and pepper; cook for 1 minute.
- Increase heat to high and add in the chopped tomatoes; cook until thickened (about 10-12 minutes) then remove from heat, add/mix in basil (if you are using dry basil add in with the oregano),.
- Set oven to broil and broil the eggplant slices one pan at a time for 3-5 minutes (per side) until brown.
- Set oven to 400 degrees.
- Layer the eggplant slices in a greased 1-1/2 - 2-quart baking dish.
- Top with the tomato/onion mixture.
- Then top the slices with mozzarella cheese and remaining 1/3 cup Parmesan cheese.
- Bake uncovered until cheese is bubbly, about 15 minutes.
- Delicious!

Steps:
- Slice the eggplants in half longways - sprinkle the surface with salt. Allow to stand for 30 minutes, rinse and pat dry.
- Brush/spray a baking tray with a little oil. Place the eggplants on a single layer and bake at 200oC for 7-10 minutes.
- Meanwhile, slice the chicken through the middle length ways (so you have 6 half fillets). Coat the chicken with seasoning.
- Place the chicken on top of the hot eggplant.
- Mix the garlic with the pasta sauce (or leave out if it already has enough for your personal taste).
- Pour sauce over the chicken and cover with the cheeses.
- Bake for 45-50 minutes (until the chicken is cooked through).
- Serve with salad and crusty bread.
