CHICKEN AND BACON SHISH KABOBS
Tangy marinated chicken and mushrooms, wrapped in bacon and skewered. Excellent for entertaining and trying something new! These are a must-try! (They can also be broiled instead of grilled, if you're low on time.)

Steps:
- In a large bowl, mix the soy sauce, cider vinegar, honey, canola oil, and green onions. Place the mushrooms and chicken into the mixture, and stir to coat. Cover, and marinate in the refrigerator at least 1 hour.
- Preheat grill for high heat.
- Remove the mushrooms and chicken from the marinade and shake off excess. Pour the marinade into a small saucepan and bring to a boil over high heat. Reduce heat to medium-low and simmer for 10 minutes; set aside.
- Wrap the chicken chunks with bacon, and thread onto skewers so that the bacon is secured. Alternate with mushroom halves and pineapple chunks.
- Lightly oil the grill grate. Arrange skewers on the prepared grill. Cook 15 to 20 minutes, brushing occasionally with remaining soy sauce mixture, until bacon is crisp and chicken juices run clear.

CHICKEN BACON "SUSHI"
I saw this bacon sushi idea online somewhere, but I did not save it, so I had to wing it from memory and kept it as simple as possible. I made it for the March Madness final and the whole family loved it! I made it in the toaster oven on convection at 400 degrees F (200 degrees C) and kept a close eye on it.

- Preheat oven to 425 degrees F (220 degrees C). Measure out a 20-inch square piece of parchment paper on a baking sheet.
- Lay out slices of bacon side-by-side, overlapping slightly, to create an even layer on the parchment paper.
- Combine ground chicken with barbeque seasoning; spread evenly onto the bacon layer from edge to edge. Place Havarti cheese slices lengthwise on top. Lift the parchment paper to help you roll a log, starting with the edge of bacon closest to you.
- Bake in the preheated oven, rotating baking sheet every 15 minutes, until bacon is crispy and chicken is cooked through; an instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C), about 1 hour.
- Remove from oven and cool until easily handled, about 15 minutes. Slice into bite-sized "sushi".

GRILLED BACON SUSHI ROLL
Do you love sushi but find that it's not giving you the Vitamin B (bacon and beef) that you need? This delicious twist on sushi will provide just what the doctor ordered and will have you invited to every BBQ in your neighborhood! Serve with barbeque sauce.

Steps:
- Arrange bacon slices side by side, facing lengthwise, on a sushi mat.
- Mix ground beef and spice rub together in a large bowl. Spread in a thin layer over bacon, leaving 1 inch of bacon uncovered on the end furthest from you. Cover beef with prosciutto. Line jalapeno strips across the end closest to you. Place cheese sticks next to jalapeno strips.
- Roll up bacon tightly towards the uncovered end.
- Preheat grill to 350 degrees F (175 degrees C). Grill bacon roll seam side-down over indirect heat until crisp, about 25 minutes. Brush some barbeque sauce on top. Continue grilling until barbeque sauce is glazed, about 5 minutes. Add remaining barbeque sauce; grill for 5 minutes more.
- Remove from grill and coat evenly with fried onions. Slice and serve with chopsticks.
