Someone gave me this recipe a few years back and it's become a household favorite. You can use mild, medium or hot salsa depending on your taste. I usually serve it with Spanish rice and Mexican-style canned corn. Very easy and quick!

4 skinless, boneless chicken breast halves
4 teaspoons taco seasoning mix
1 cup salsa
1 cup shredded Cheddar cheese
2 tablespoons sour cream

Steps:

  • Preheat oven to 375 degrees F (190 degrees C)
  • Place chicken breasts in a lightly greased 9x13 inch baking dish. Sprinkle taco seasoning on both sides of chicken breasts, and pour salsa over all.
  • Bake at 375 degrees F (190 degrees C) for 25 to 35 minutes, or until chicken is tender and juicy and its juices run clear.
  • Sprinkle chicken evenly with cheese, and continue baking for an additional 3 to 5 minutes, or until cheese is melted and bubbly. Top with sour cream if desired, and serve.

2 teaspoons rice wine vinegar
2 lemons, juiced
1 teaspoon granulated sugar
1 tablespoon sambal
1 pint fresh raspberries
1/2 cup canned diced pineapple
1/4 cup diced strawberries
1 kiwi, peeled and diced
2 tablespoons julienned red onion
1 tablespoon chopped cilantro leaves
1 teaspoon minced mint leaves
6 (6 to 8-ounce) chicken breasts, skin removed
2 tablespoons blackening spice
1 tablespoon grapeseed oil

Steps:

  • In a medium bowl, whisk together the vinegar, lemon juice, sugar, and sambal. Add the raspberries, pineapple, strawberries, kiwi, red onion, cilantro and mint and toss to combine. Cover and refrigerate for 20 to 30 minutes, ensuring flavors are well blended.
  • Rinse the chicken breasts, pat dry with a paper towels, then generously coat with the blackening seasoning. In a large heavy-bottom pan, over medium-high heat, add the grapeseed oil and allow the oil to heat. Carefully add the chicken, cover and cook for 4 minutes, then reduce the heat to medium-low, and turn the chicken over. Repeat the cooking process until the chicken has reached an internal temperature of 160 degrees F on an instant-read thermometer, normally taking 13 to 15 minutes. Remove the chicken from the pan to a serving platter to allow it to rest and finish cooking. When the temperature reaches 165 degrees F serve with the fruit salsa.

Stuffed Chicken Breasts with Caribbean Root Medley Mash, Sofrito Rum Reduction and Creole Fruit Salsa image

In this twist on the same old chicken and potatoes, I showcase the wide array of root vegetables used in Caribbean cuisine-it's not just rice and beans. I stuff chicken breasts with a mash consisting of a medley of vegetables: pumpkin, taro and Cuban or tropical sweet potatoes (auyama, yautia and batata). Big island flavors appear from sofrito and rum in the sauce while a fresh fruit salsa of pineapple, mango and papaya with guarapo (pineapple vinegar) provides a bright finish. This complete meal is an ode to growing up in the United, but a piece of my heart and stomach always lives on the island.

1/2 cup finely diced pineapple
1/2 cup finely diced mango
1/2 cup finely diced papaya
1/4 cup thinly sliced red onion
1/4 cup fresh lime juice or pineapple vinegar
1/4 teaspoon cayenne pepper or Tajín
2 teaspoons grated orange zest
1 1/2 tablespoons chopped fresh mint leaves
Fine sea salt and ground black pepper
1 head garlic, cloves separated and unpeeled
2 tablespoons olive oil, plus more for drizzling
4 ounces pumpkin (auyama), peeled, seeded and medium diced
4 ounces taro (yautia) or yuca, peeled, rinsed and medium diced
4 ounces Cuban or tropical sweet potatoes (batata), peeled and medium diced
2 cups low-sodium organic vegetable broth
Fine sea salt and ground black pepper
1/4 cup chopped red onion
2 tablespoons salted butter
1/4 cup heavy cream
2 tablespoons chopped fresh cilantro
2 teaspoons smoked sweet paprika
4 organic boneless, skinless chicken breasts, cleaned and trimmed
1 tablespoon sazón with culantro and achiote (see Cook's Note)
4 tablespoons dried oregano
4 tablespoons organic sofrito, such as Loisa
Fine sea salt and ground black pepper
3 tablespoons avocado oil

Steps:

  • For the creole fruit salsa: Combine the pineapple, mango, papaya, red onion, lime juice or pineapple vinegar, cayenne pepper or Tajín, orange zest, mint leaves and salt and pepper to taste in a medium bowl. Toss until well combined and set aside for serving.
  • For the Caribbean root medley mash: Preheat the oven to 350 degrees F. Line a rimmed baking sheet with aluminum foil.
  • Place the garlic on the prepared baking sheet. Drizzle with olive oil and toss to combine. Roast until fork tender, 20 to 25 minutes. Pop the roasted garlic out of the peel and discard the peel. Leave the oven on for your chicken breasts!
  • Meanwhile, combine the pumpkin, taro, sweet potatoes and vegetable broth in a stockpot. Season with salt, cover with a tight-fitting lid and bring to a boil. Cook over medium heat until all the vegetables are very tender, 20 to 25 minutes. Drain the vegetables.
  • Meanwhile, heat a large skillet over medium heat. Once it's hot, heat the 2 tablespoons olive oil. Add the chopped red onions and cook, stirring, until softened and lightly browned, about 5 minutes. Transfer to a food processor or large bowl. Add the root vegetables, butter, cream, cilantro, paprika and roasted garlic to the onions. Process or mash with a potato masher to your desired consistency but still thick. Add salt and pepper to taste. Set the mash aside.
  • For the chicken: Slice the chicken breasts horizontally and open each one like a book. Sprinkle each with 3/4 teaspoon of the sazón and 1 tablespoon of the dried oregano. Spread 1 tablespoon of the sofrito on each breast. Season the chicken with salt and pepper. Place 1/2 cup of the mash in the center of each butterflied breast and tie with kitchen twine to enclose the stuffing.
  • Heat the avocado oil in a large cast-iron or other ovenproof skillet over medium-high heat. Once your skillet is very hot, add the stuffed chicken breasts and cook until seared, 2 to 3 minutes per side. Transfer the skillet to the oven and bake until the internal temperature of the chicken reaches 170 degrees F, about 20 minutes. (If you don't have an ovenproof skillet, bake the chicken on a rimmed baking sheet.) Remove the twine, slice each chicken breast into 3 rounds and set aside.
  • For the sofrito rum reduction: While the chicken is in the oven, heat a medium skillet over medium-low heat. Add the olive oil and garlic paste and cook, stirring quickly, for 30 seconds, then add the sofrito. Stir to combine. Add the honey and oregano sprigs and cook over medium-high heat until reduced by one-fourth, 3 to 5 minutes. Add the rum and cook, scraping up any browned bits from the bottom of the skillet. Decrease the heat to low and simmer for 4 to 5 minutes or until reduced to your desired consistency. Remove and discard the oregano sprigs.
  • For serving: Place the chicken on a plate and add some of the reduction and 1/2 cup of the salsa on the side. Garnish with lime zest and edible flowers, if using.

1/4 cup plus 1 tablespoon fresh lime juice
1/4 cup plus 1 tablespoon olive or vegetable oil
2 tablespoons tequila or gin, if desired
2 teaspoons chopped jalapeño chili
4 boneless, skinless chicken breast halves (about 1 1/4 pounds)
3/4 teaspoon salt
1/4 teaspoon pepper
2 medium peaches, peeled and chopped
1 medium orange, peeled and chopped
4 medium green onions, thinly sliced (1/4 cup)
10 yellow or red cherry tomatoes, seeded and diced
1/4 cup chopped fresh cilantro
1 tablespoon grated orange peel
1 teaspoon grated lime peel
4 cups bite-size pieces mixed salad greens

Steps:

  • Mix 1/4 cup lime juice, 1/4 cup olive oil, 1 tablespoon tequila and 1 teaspoon chili in shallow glass or plastic dish. Sprinkle chicken with 1/2 teaspoon salt and 1/8 teaspoon pepper. Add chicken to marinade; turn to coat. Cover and refrigerate 30 minutes.
  • Mix remaining ingredients except salad greens in glass or plastic bowl. Stir in remaining 1 tablespoon lime juice, 1 tablespoon olive oil, 1 tablespoon tequila, 1 teaspoon chili, 1/4 teaspoon salt and 1/8 teaspoon pepper. Cover and refrigerate while grilling chicken.
  • Heat coals or gas grill. Remove chicken from marinade; reserve marinade. Cover and grill chicken 4 to 6 inches from medium heat 10 to 20 minutes, brushing 2 or 3 times with marinade, until juice of chicken is no longer pink when centers of thickest pieces are cut. Discard any remaining marinade.
  • Divide salad greens among 4 plates. Slice chicken; arrange on greens. Spoon fruit salsa over chicken.

TOMATO-PINEAPPLE SALSA:
4 plum tomatoes, chopped
1 cup cubed fresh pineapple
1/2 cup chopped sweet red pepper
1/3 cup chopped red onion
1/4 cup lime juice
3 tablespoons minced fresh cilantro
1 jalapeno pepper, seeded and finely chopped

Steps:

  • In a large resealable plastic bag, combine the first eight ingredients; add chicken. Seal bag and turn to coat; refrigerate for 4 hours. Meanwhile, in a small bowl, combine salsa ingredients. Cover and refrigerate until serving. , Drain and discard marinade. Grill, covered, over medium heat for 5-6 minutes on each side or until a thermometer reads 170°. Serve with salsa.

This is an easy and refreshing chicken dinner, great in the summertime. Nice served with mashed potatoes and salad. The salsa is also yummy served with fish!

1 fresh, ripe mango
½ red onion, finely diced
1 bunch cilantro, finely chopped
½ green bell pepper, minced
1 fresh red chile pepper, seeded and chopped
4 skinless, boneless chicken breasts
1 egg
¼ cup milk
1 cup dried bread crumbs
¼ cup olive oil
1 sprig fresh cilantro, for garnish

Steps:

  • TO MAKE SALSA: In a small bowl, combine the mango, onion, cilantro, green bell pepper and red chile pepper. Put aside until serving time.
  • Lightly pound the chicken breasts with a mallet to flatten. Beat the egg and milk together. Then coat them in the egg/milk mixture then the breadcrumbs. Chill for 1/2 hour.
  • Saute the chicken in olive oil until cooked through and juices run clear. Drain and serve with the mango salsa. Garnish with cilantro leaves.

3 tablespoons olive oil
1 1/2 teaspoons cumin
3/4 teaspoon salt, divided
1/4 teaspoon pepper
6 chicken breast halves, bone-in,about 3 lbs
2 nectarines, pitted and cut into 1/2 inch pieces,about 1 1/2 cups
1 cup chopped red onion
1/3 cup chopped cilantro
2 tablespoons rice wine vinegar or 2 tablespoons white wine vinegar
1 tablespoon lime juice
1 1/2 teaspoons grated lime zest
1 clove garlic, minced

Steps:

  • Preheat the oven to 375 degrees F.
  • Comine 2 Tbsp oil, cumin, 1/2 tsp salt and pepper and brush the mixture on the chicken breasts.
  • Arrange prepared chicken on a baking sheet and place in the oven to roast for 40 minutes, or until the juices run clear.
  • In a small bowl, combine nectarines, onion, cilantro, vinegar, lime juice, lime zest, garlic and remaining oil and salt.
  • Cover with plastic wrap and place in the refrigerator until chicken is ready.
  • When chicken is cooked, transfer the pieces to serving plates and either top with the salsa, or serve it on the side.
