CHICKEN CHESTERFIELD
Chicken breasts covered with a savory sauce of horseradish and brown mustard then topped with melted white cheddar cheese and bacon--served over a bed of steamed green beans. This can easily be cut in half to serve four.

Steps:
- Preheat oven to 375°F.
- Combine mayonnaise, horseradish, mustard, Worcestershire sauce and cayenne in a bowl and mix thoroughly.
- Cover and chill.
- Lightly spray a foil-lined baking pan with cooking spray.
- Place chicken breast fillets in baking pan and bake for 20 minutes or so until chicken is done (170°F on meat thermometer in thickest part of the chicken). When chicken is done, place on an ovenproof serving platter.
- Top breast fillets with the horseradish-mustard sauce, sprinkle with the cheese and then the bacon pieces.
- Broil 1 to 1 1/2 minutes, or until the cheese is blended with the sauce and lightly browned.
- To serve, first spoon steamed green beans onto plate and top with chicken breast.
- Sprinkle lightly with paprika.
UTICA CHICKEN RIGGIES
This local favorite is almost impossible to find anywhere outside a 20-mile vicinity of Utica, NY. It is a creamy, spicy chicken and pasta dish that is sure to please anyone's taste buds. Enjoy!

Steps:
- In a large pot melt butter and then add chicken.
- Cook chicken over medium heat just until they begin to turn white.
- Add mushrooms to chicken and cook for 5 minutes.
- Add peppers and onions cook 5-7 minutes (I usually season the veggies and chicken with salt and pepper at this point).
- Add water, bullion, tomato sauce, heavy cream, and spices.
- Bring to a boil, cover and simmer for 20 min, stirring occasionally.
- Add olives and simmer for 5 minutes.
- In a small bowl mix corn starch with 2-3 tbsp cold water until dissolved.
- Add corn starch to sauce, stirring continuously until it thickens.
- If it is very runny just let stand to thicken.
- Stir in cooked pasta and serve immediately, sprinkling each serving with grated or shredded Parmesan cheese.
