Chicken con Vino e Aglio (with Wine and Garlic) image

Pan-fried white wine chicken. Excellent with cream-sauced pasta or risotto.

½ cup olive oil
½ cup orange juice
½ yellow onion, chopped
2 cloves garlic, or more to taste, minced
2 tablespoons herbes de Provence
2 skinless, boneless chicken breast halves, pounded to an even thickness
salt and ground black pepper to taste
2 tablespoons olive oil, or to taste

Steps:

  • Whisk white wine, 1/2 cup olive oil, orange juice, yellow onion, garlic, and herbes de Provence together in a large glass bowl. Add chicken and toss to coat. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 3 hours.
  • Remove chicken from the marinade, shake to remove excess liquid. Season chicken with salt and pepper and let it rest at room temperature for 5 minutes. Discard remaining marinade.
  • Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Fry chicken in hot oil until no longer pink in the center and the juices run clear, 3 to 4 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

4 boneless skinless chicken breast halves (6 ounces each)
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon olive oil
2 cups sliced baby portobello mushrooms (about 6 ounces)
1 medium onion, chopped
2 garlic cloves, minced
1/2 cup dry white wine or reduced-sodium chicken broth

Steps:

  • Pound chicken breasts with a meat mallet to 1/2-in. thickness; sprinkle with salt and pepper. In a large skillet, heat oil over medium heat; cook chicken until no longer pink, 5-6 minutes per side. Remove from pan; keep warm., Add mushrooms and onion to pan; cook and stir over medium-high heat until tender and lightly browned, 2-3 minutes. Add garlic; cook and stir 30 seconds. Add wine; bring to a boil, stirring to loosen browned bits from pan. Cook until liquid is slightly reduced, 1-2 minutes; serve over chicken.

4 garlic cloves, thinly sliced
1 lb broccoli, cut into spears, lengthwise
6 ounces dry white wine
1 tablespoon red chili pepper flakes (optional)
1 lemon, zest of

Steps:

  • In a 12 to 14 inch saute pan, heat the olive oil and garlic until just sizzling.
  • Add the broccoli and cook, tossing regularly for 8-10 minutes, until the stem is tender.
  • Use the wine to slow the cooking down if the garlic begins to brown.
  • When the broccoli is tender, add the chili flakes and zest.
  • Place on platter and enjoy!

1 cup sliced mushrooms (about 3 ounces)
1 tablespoon minced garlic
1 whole boneless chicken breasts (about 12 ounces), halved

1 tablespoon lemon juice
1 tablespoon minced fresh parsley

Steps:

  • Heat oil in heavy medium skillet over medium heat. Add mushrooms and garlic and sauté until mushrooms begin to brown, about 5 minutes. Transfer mushrooms to plate; keep warm. Season chicken with salt and pepper. Add chicken to skillet and cook until brown on both sides, turning once, about 6 minutes. Add wine and lemon juice to skillet and continue cooking until liquid is reduced to 2 tablespoons, about 2 minutes. Place chick atop mushrooms. Drizzle chicken with pan juices.
