ITALIAN POTATO PIE
My family has many different versions of potato pie. This is one of them. I serve this with a garden salad.

Steps:
- Cover the potatoes with salted water and boil till tender. Drain and mash.
- Stir in softened butter, sour cream, chives, seasoned salt and pepper.
- Butter and lightly flour 9 1/2-inch deep pie plate. Spread in mashed potatoes.
- Arrange 6 oz. Mozzarella cheese on potatoes. Top with tomatoes. Sprinkle with basil and oregano.
- Top with remaining Mozzarella cheese, Parmesan cheese and melted butter. Bake at 425°F for 25 to 30 minutes or until cheese if melted. Cool slightly before cutting.

THE ITALIAN IRISHMAN'S PIE
This is a recipe my Irish aunt gave me. Her husband is Italian, and she developed this recipe to blend things they both like. It is a variation of Shepherd's Pie. For richer flavor, substitute beef broth for water in gravy.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Grease a 2-quart casserole dish.
- Heat olive oil in a skillet over medium heat; cook and stir Italian sausage until browned and crumbly, about 10 minutes. Use a slotted spoon to transfer sausage to prepared casserole dish. Drain drippings and reserve 2 tablespoons drippings in the skillet.
- Melt 2 tablespoons margarine in a separate skillet over medium heat; cook and stir apple and onion slices until tender, about 8 minutes. Place apple and onion in casserole dish with sausage.
- Lightly stir sausage, apple, and onion together; season with salt, black pepper, and oregano.
- Brown flour in reserved drippings in skillet over medium heat. Whisk water into flour until thick gravy forms, about 3 minutes.
- Pour gravy over sausage mixture in the casserole dish; spread mashed potatoes over the top with a spoon, creating peaks. Lightly brush mashed potatoes with 1 tablespoon melted margarine.
- Bake in the preheated oven until the potatoes are lightly browned and the sausage mixture is bubbling, about 30 minutes.

ITALIAN COTTAGE PIE
Add a little 'mamma mia' to a beef stew with pancetta and oregano, and a crunchy topping of Parmesan-coated potatoes

Steps:
- First make the Beef with red wine & carrots (see 'Goes well with'). You will need half the finished stew for this recipe.
- Heat oven to 220C/200C fan/gas 7. Cook the potatoes in boiling, salted water for 10 mins until almost done. Drain well, then mix with the butter and half the Parmesan.
- In a large saucepan, fry the pancetta or bacon until golden. Stir in the fresh oregano leaves or dried oregano, then add the beef stew and heat through. Tip into an ovenproof dish and top with the cheesy potatoes, overlapping. Sprinkle with the remaining Parmesan and bake for 20 mins until golden and crisp on top. Serve with a green salad.

- Boil potatoes in salted water until tender, then drain and mash.
- Stir in butter, sour cream, chives, seasoned salt and pepper.
- Butter and lightly flour a 9" deep pie plate.
- Spread in mashed potatoes.

- Combine flour, sugar and salt in a bowl; cut in the shortening and butter until crumbly. Add water and mix lightly with a fork. Shape dough into a ball; divide in half. On a lightly floured surface, roll out one half to fit a 9-in. pie plate. For filling, combine potatoes, onion, salt, pepper and parsley. Spoon into crust; dot with butter. Roll out remaining dough to fit top of pie; place over filling. Seal and flute edges; make several slits in top crust. Bake at 375° for 1 hour. - Preheat oven to 450 degrees, with rack in lowest position. In a large skillet, heat oil over medium. Add onion and carrots; season with salt and pepper.
