Chicken Fajitas Foil Packets with seasoned chicken, rice, bell peppers, and onion cooked together in tin foil for an easy all-in-one tin foil dinner. Cook them on the grill, in a campfire, or even in the oven, so you can enjoy them all year round.

1 1/2 cups minute rice (, brown or white)
1 1/2 cups water
1 pound boneless skinless chicken breasts (, cut into thin strips)
2 bell peppers (, any color, sliced into thin strips)
1 yellow or purple onion (, sliced into thin strips)
2 Tablespoons olive oil
1 packet fajita seasoning or taco seasoning (, divided)
tin foil (, for wrapping)
small flour tortillas
guacamole
salsa
sour cream
fresh cilantro
hot sauce
limes

Steps:

  • Combine rice, water, and 2 tablespoons taco seasoning and stir. Set aside for 5 minutes.
  • Add chicken, bell peppers and onion to a large bowl. Drizzle with oil, and season with the remaining taco seasoning packet, stirring gently to evenly coat everything.
  • Coat four large pieces (about 12'' long) of tinfoil with cooking spray.
  • Divide the rice and remaining liquid evenly between the pieces of tinfoil. Add chicken and vegetables on top.
  • Bring the sides of the tinfoil up, sealing the tinfoil closed to form foil packs, ready to cook.

Perfect for camping, these chicken fajitas are made easily in a foil pouch and grilled until smoky and charred!

1 lb chicken tenders (, sliced lengthwise into thin strips)
1 medium red or yellow onion (, peeled and sliced)
1 medium red bell pepper (, seeded and sliced)
1 poblano pepper (, seeded and sliced)
1/4 cup olive oil
lime slices (, optional)
1 Tbsp chili powder
1/2 Tbsp paprika
1 tsp sugar
1 tsp cornstarch
1/2 tsp onion powder
1/4 tsp garlic powder
1/4 tsp ground cumin
1/4 tsp black pepper
1/8 tsp cayenne pepper
1/2 tsp kosher salt
flour tortillas (soft taco sized)
sour cream or Mexican crema
guacamole
salsa
minced fresh cilantro or parsley

Steps:

  • Heat grill over MED HIGH heat. Lay out 4 large squares of aluminum foil. Heavy duty is best, or else use double layers of regular foil.
  • To a large mixing bowl, add chicken, onion, both peppers and olive oil. Toss together to coat. Add all seasoning ingredients and toss to coat well.
  • Add 1/4 of the chicken fajita mixture to half of the foil sheet and top with a slice of lime (if using). Fold the other half of the foil sheet over the top and carefully pinch the edges to seal it shut. Repeat with remaining fajitas mixture and foil sheets.
  • Place foil packets on prepared grill and cook over MED HIGH heat about 12-15 minutes, until chicken is cooked through.
  • Serve on tortillas and with desired toppings.

2 packages Foster Farms Refrigerated Grilled Chicken Strips
1 bell pepper, any color, sliced
1/2 a medium-sized onion, sliced thinly
1 cup baby portabella mushrooms, cut into quarters
Other vegetables as desired, sliced
1 packet fajita seasoning
Vegetable oil
Heavy-duty aluminum foil
Tortillas

Steps:

  • In a large bowl combine the chicken and vegetables. Sprinkle the fajita seasoning over the vegetables and chicken and drizzle a little oil to help coat the mixture.
  • Dump the mixture in the middle of a large rectangular piece of aluminum foil. Fold the foil over the mixture lengthwise. Roll up the ends of the foil tightly. The packets can be refrigerated until ready to cook.
  • When ready to cook, place the foil packet on a grill grate or in the embers of a campfire. All to cook until all the veggies are soft but still crisp, about 15 minutes.
  • Serve immediately in tortillas warmed over the fire.

This Chicken Fajita Foil Packets is a family favorite! Easy to customize, loaded with chicken, peppers, red onions and a homemade fajita seasoning, and perfect for making ahead for an easy camping meal!

2 boneless, skinless chicken breasts (thinly sliced)
1 sweet bell pepper (red or orange, sliced)
1 green bell pepper (sliced)
1/2 large red onion (thinly sliced)
2 tablespoons oil
2 teaspoons chili powder
1 teaspoon garlic powder
1 teaspoon cumin
3/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon onion powder
1/4 teaspoon paprika
Tortillas, sour cream, and salsa for serving as desired

Steps:

  • Preheat the grill to medium high, roughly 400 degrees F
  • Place all ingredients (chicken through paprika) in a large bowl. Stir until everything is evenly coated.
  • Place two pieces of tin foil one on top of the other. Spray lightly with non stick spray, and spoon 1/4 of the fajita mixture in the center. Fold and seal packet completely.
  • Repeat 3 times with the remaining fajita mixture to make 4 packets.
  • Place over direct heat on the grill. Cook for 12-15 minutes (for even cooking, rotate once halfway through) until chicken reaches an internal temperature of 165 degrees F.
  • Serve with tortillas and toppings as desired.
