GARDEN CHICKEN
This colorful, delicious casserole is not only flavor packed, but it is also a sight to behold. You can't beat this boutiful dish for family or company.

Steps:
- In a large skillet over medium heat, saute chicken and garlic in butter for 15 minutes. Remove chicken and set aside.
- With butter in skillet, saute squash, zucchini, and sweet bell pepper and cook just until tender crisp.
- In a small saucepan, melt 3 tablespoons butter and add flour, seasoned salt, salt, black pepper, and pesto seasoning. Stir to form a paste.
- Over medium high heat, gradually add broth, stirring constantly, until thick.
- Stir in cream and heat thoroughly.
- In a large bowl, combine chicken vegetables, broth-cream mixture, and drained pasta.
- Transfer to a greased 9x13 inch casserole dish.
- Cover and bake at 350 degrees for 30 minutes.
- Uncover and sprinkle parmesan cheese over top of casserole and return to oven for 5 minutes.

This is a recipe that my grandma would always make for us for dinner. We always used green peppers and fresh tomatoes as a topping for this but you can easily add in any vegetables to this dish. Steps:
- 1. Brown 1/2 pound of lean ground beef until no longer pink. (Drain if any grease remains).
- 2. Add in one small chopped onion and saute for 4 minutes or until onions are translucent.
- 3. Add the rice and stir.
- 4. Add in beef bouillon cubes, dry mustard, and black pepper. Cover and simmer for 20 minutes.
- 5. Chop peppers and tomatoes into cubes and reserve. (or use 1 1/2 cups of vegetables of your choice)
- 6. Reserve two slices of American cheese. With the other three slices cut them into triangles to make six triangles.
- 7. After rice has cooked for 20 minutes add in two slices of cheese and stir.
- 8. Add chopped peppers, tomatoes, and any other vegetable to the top of the rice dish in the pan.
- 9. Top with the six cheese triangles, reduce heat and cover with lid just to melt the cheese. (About five minutes).

Steps:
- Cut yellow, red and green peppers into thin strips.
- Snap ends off green beans and keep long unless they are really long then snap in two.
- Finely dice red onion.
- Dice fresh tomato.
- Using a fork sift flour, pepper, chicken seasoning and onion powder in a shallow dish.
- In a separate shallow dish beat the two eggs.
- Dredge the chicken breast through the egg then through the flour.
- Add 3 Tbls margarine and 1 tsp olive oil and minced garlic from a jar in large deep skillet until hot.
- Lightly brown chicken over medium heat until light brown then set aside.
- Melt remaining margarine and olive oil.
- Add the red, yellow and green peppers, green beans and red onion and tomato and saute until green beans and peppers are tender but not soggy about 4-10 minutes depending on your idea of tender.
- Add 2 cups of water and the Knorr Homestyle Chicken Stock.
- Bring to a boil
- Turn burner to medium low and add chicken back to skillet and cover with lid.
- Simmer until chicken is done all the way through about 3 minutes depending on the thickness of your chicken breast.
- Prepare basmati rice using package directions.
- Serve chicken and vegetables and "gravy" over rice.
CHICKEN SAUTé WITH GARLIC
Steps:
- Brown the chicken pieces in the butter, turning each piece to color evenly. When pieces are browned, add chopped garlic and continue cooking for a minute or two. Add salt and freshly ground pepper to taste and 1/2 cup white wine. Cook gently over a low flame until chicken is tender. Remove chicken to a hot platter and pour the pan juices over it. Garnish the sautéed chicken with finely chopped parsley.
CHICKEN SAUTé WITH SHERRY

- Melt butter in skillet and sauté chicken pieces, turning to color on all sides-do not let them get too brown, the chicken should be just a delicate golden color. Reduce flame and add salt, pepper, and ginger. Add 1/2 cup sherry and cook gently for 15 to 20 minutes, turning chicken once or twice to bathe it evently in the juices. When tender remove to a hot platter. Add remaining sherry to pan, turn up heat, cook, and stir, scraping up the brown crust from the pan and blending it into the sauce. When blended and hot, pour sauce over chicken. Serve with sautéed or fried potatoes and a green salad. With this, drink a dry white wine.
