Number Of Ingredients 11

1 whole chicken (about 3 1/2 pound), backbone discarded and chicken cut French style into 8 pieces (see cooks' note, below)
1 tablespoon vegetable oil
3 tablespoons unsalted butter, divided
4 medium leeks (white and pale green parts only), finely chopped (2 cups)
2 tablespoons finely chopped shallot
4 medium carrots, halved diagonally
1 cup dry white wine (preferably Alsatian Riesling)
1 1/2 pound small (2-inch) red potatoes
2 tablespoons finely chopped flat-leaf parsley
1/2 cup crème fraîche or heavy cream
Fresh lemon juice to taste

Steps:

  • Preheat oven to 350F with rack in middle.
  • Pat chicken dry and sprinkle with 1 teaspoon salt and a rounded 3/4 teaspoon pepper. Heat oil with 1 tablespoon butter in a wide 3 1/2- to 5-quart heavy ovenproof pot over medium-high heat until foam subsides, then brown chicken in 2 batches, turning once, about 10 minutes total per batch. Transfer to a plate.
  • Meanwhile, wash leeks and pat dry.
  • Pour off fat from pot, then cook leeks, shallot, and 1/4 teaspoon salt in remaining 2 tablespoons butter, covered, over medium-low heat, stirring occasionally, until leeks are pale golden, 5 to 7 minutes. Add chicken, skin sides up, with any juices from plate, carrots, and wine and boil until liquid is reduced by half, 3 to 4 minutes. Cover pot and braise chicken in oven until cooked through, 20 to 25 minutes.
  • While chicken braises, peel potatoes, then generously cover with cold water in a 2- to 3-quart saucepan and add 1 1/2 teaspoons salt. Bring to a boil, then simmer until potatoes are just tender, about 15 minutes. Drain in a colander, then return to saucepan. Add parsley and shake to coat.
  • Stir crème fraîche into chicken mixture and season with salt, pepper, and lemon juice, then add potatoes.

8 ounces cremini mushrooms, quartered
1 can (28 ounces) whole peeled plum tomatoes in juice, drained, and broken up
1/4 cup all-purpose flour
1/4 cup dry white wine, such as Sauvignon Blanc
1 celery stalk, thinly sliced
1 small onion, halved and thinly sliced
1 sprig fresh rosemary or 1/2 teaspoon dried rosemary, crumbled
Coarse salt and ground pepper

Steps:

  • In a 5-quart slow cooker, stir together chicken, mushrooms, tomatoes, flour, wine, celery, onion, rosemary, 2 teaspoons salt, and 1/4 teaspoon pepper.
  • Cover; cook on high setting until meat is tender, 4 hours. Do not lift the cover of the slow cooker while cooking. To serve, discard rosemary sprig.

Chicken With Mixed Mushrooms and Cream image

This succulent chicken recipe came to The Times from Amanda Hesser in 2003, but it's as timeless as they come. Here, riesling lifts a rich cream sauce, while mushrooms add a distinct earthiness. Make it on a weeknight when you have a little more time to spend in the kitchen, and want something special on the table. Your loved ones will thank you.

2 tablespoons olive oil
4 tablespoons butter
3 cups mushrooms (any mix, such as cremini, chanterelle, blue foot and shiitake), sliced 1/4-inch thick
3 sprigs thyme
Sea salt and freshly ground black pepper
4 chicken thighs, preferably organic
4 chicken drumsticks, preferably organic
1/2 cup chicken broth
1/4 cup finely diced onion
1/3 cup riesling
1/4 cup heavy cream

Steps:

  • Heat oven to 325 degrees. Heat 1 tablespoon oil and 1 tablespoon butter in a medium skillet over medium heat. When melted and bubbling, add mushrooms and thyme. Cook, stirring occasionally, until softened and browned on edges, 10 to 15 minutes. Discard thyme, and season with salt and pepper to taste; set aside.
  • Heat remaining oil and 1 tablespoon butter in a large sauté pan over medium-high heat. Season chicken with salt and pepper and add it skin-side down to the hot pan. Brown well on all sides, about 10 minutes. Pour in broth and bring to a boil. Cover and place in oven until very tender, about 30 minutes.
  • Transfer chicken to a plate, and pour pan juices into a bowl. Return pan to medium heat, and add remaining 2 tablespoons butter. When it foams, add onion and sauté until translucent. Add riesling and bring to a boil, reducing by half. Add 1/2 cup of cooking juices, and reduce by half.
  • Add cream and simmer for 3 minutes. Return chicken to pan, and add mushrooms. Simmer, basting, about 2 minutes. Serve hot.

2 tablespoons butter or neutral oil, like corn or grapeseed
4 medium to large onions (about 1 1/2 pounds), sliced
Salt and freshly ground black pepper
1 1/2 to 2 cups off-dry Riesling
One 3- to 4-pound chicken, cut into 8 or 10 serving pieces

Steps:

  • Put the butter in a skillet large enough to hold the chicken and turn the heat to medium. Add the onions, a large pinch of salt, and some pepper and cook, stirring occasionally, until the onions soften completely and begin to melt into a soft mass, about 20 minutes.
  • Add 1 1/2 cups of the wine and let it bubble away for a minute, then tuck the chicken pieces among the onions; sprinkle the chicken with salt and pepper. Turn the heat to low and cover the pan.
  • Cook, turning the chicken pieces once or twice, for 40 to 60 minutes, or until the chicken is very tender (the meat on the drumsticks will begin to loosen from the bone). If the dish appears to be drying out at any point, add the remaining wine.
  • Serve the chicken, spooning the onions and their liquid over it.
  • Variations
  • Cook the onions for 10 minutes or so longer before adding the wine, until they darken in color and become even softer.
  • While the onions are cooking, brown the chicken by putting it, skin side up, in a 500°F oven for about 20 minutes. When you add the chicken to the onions, include some of its juice.
  • Tuck a couple of bay leaves and/or a few sprigs of fresh thyme in among the onions after they've begun to soften.
  • Sauté about 1/4 pound of bacon or salt pork cut into 1/2-inch chunks in the pan before adding the onions.
  • Cook about 1/2 pound of sliced mushrooms (or an ounce or two of dried porcini mushrooms, reconstituted) along with the onions.
  • Cook 1 tablespoon or more of chopped garlic with the onions.
  • After cooking, puree the onions and their liquid in a blender for a cream like sauce; use it to top the chicken.

2 teaspoons olive oil
1 (10 ounce) package sliced cremini mushrooms
1/3 cup ruby port
1/3 cup reduced-sodium chicken broth
2 teaspoons all-purpose flour
2 garlic cloves, minced
1/2 teaspoon dried thyme

Steps:

  • Sprinkle the chicken with the salt and pepper. Heat 1 teaspoon of the oil in a large nonstick skillet over medium-high heat. Add the chicken and cook until lightly browned, about 3 minutes on each side. Transfer to a plate; set aside.
  • Add the remaining 1 teaspoon oil to the skillet. Add the mushrooms and cook, stirring, until browned, about 4 minutes.
  • Stir together the port, broth, and flour in a small bowl until smooth. Pour into the skillet. Add the garlic and thyme; cook, stirring constantly, until the sauce thickens and bubbles, about 1 minute.
  • Return the chicken to the skillet, turning to coat with the sauce. Reduce the heat and simmer, covered, until cooked through, about 3 minutes on each side.

1/2 cup flour
1 teaspoon paprika
1 teaspoon salt
1/4 teaspoon fresh ground pepper
4 boneless chicken breast halves
2 tablespoons butter or 2 tablespoons olive oil
8 ounces cremini mushrooms, sliced
1 cup riesling wine or 1 cup other good white wine
1/4 cup whipping cream

Steps:

  • Mix flour, paprika, salt and pepper on a plate. Coat chicken on all sides with the flour mixture.
  • Heat butter or olive oil in a large skillet over medium-high heat; add chicken. Cook, turning, until browned on both sides, about 3 minutes per side; reduce heat to low. Cover; cook chicken until no longer pink in the middle, about 10 minutes. Remove chicken to a platter.
  • Add mushrooms to skillet; turn heat to high. Cook, stirring, until lightly browned, about 3 minutes. Stir in riesling, scraping up browned bits on bottom of pan. Cook until slightly reduced, about 5 minutes. Stir in cream; heat 1 minute. Season with salt and pepper if needed. Return chicken to the sauce; turn to coat. Heat to warm, about 2 minutes.
  • This is great served over noodles.
