- Make the icing hands: Line 3 baking sheets with parchment paper. Beat the meringue powder and water in a large bowl with a mixer on medium speed until medium glossy peaks form, 3 to 4 minutes. Beat in the vanilla. Gradually beat in the confectioners' sugar until the icing is thick and stiff peaks form; add more water, 1/2 teaspoon at a time, if the icing is too thick to pipe. Transfer to a pastry bag fitted with a 1/8-inch round tip.
- Pipe hands (2 1/2 inches tall and 1 1/2 inches wide) onto the prepared baking sheets. (Do not press the pastry tip against the baking sheet -- the hands might break.) Pipe and fill a 1-inch triangle "anchor," pointed-side down, at the bottom of each hand. Pipe knuckles onto each finger. Reserve the remaining icing in a resealable container to fix any broken bones. Let the hands dry overnight.
- Make the pudding: Whisk the milk, granulated sugar, cocoa powder, cornstarch and salt in a large saucepan until smooth. Cook over medium heat, whisking occasionally, until thickened slightly, about 15 minutes.
- Whisk the egg yolks in a medium bowl. Gradually whisk about 1/2 cup of the warm milk mixture into the egg yolks, then pour the mixture into the saucepan. Continue to cook over medium heat, whisking, until thickened, about 9 minutes. Remove from the heat and whisk in the chocolate until melted and smooth. Whisk in the butter and vanilla. Divide the pudding among 12 small bowls. Place a piece of plastic wrap directly on the surface of each and refrigerate until set, at least 2 hours or overnight.
- Loosen the hands from the parchment with an offset spatula. Use the reserved icing to repair any broken bones. Gently press the hands into the pudding cups and sprinkle with crushed cookies.

- Starting with the bowl as the head, form a skeleton shape by arranging any or all of the vegetables- or use others.
- Be creative.
SKELETON CRUDITE
Steps:
- Stir together yogurt, mayonnaise, peach jam, orange juice, curry powder and pepper in a skull size bowl or scooped-out head of lettuce. Refrigerate.
- Assemble skeleton.
HALLOWEEN SKELETON COOKIES
I bake these creepy skeleton cookies every year for Halloween, but they work also for Day of the Dead. You can use any cut-out-cookie recipe as the base. I usually cut out 2 different-shaped figures using my gingerbread men cookie cutters.

- Cream sugar and butter in a bowl with an electric mixer until creamy. Add eggs, 1 1/2 teaspoons vanilla extract, and almond flavoring and mix well.
- Stir flour, baking powder, and salt together in a second bowl. Add flour mixture to the creamed butter mixture and mix to combine. Wrap in plastic wrap and chill in the refrigerator for 3 to 4 hours or overnight.
- Preheat oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.
- Dust a work surface with 2 tablespoons confectioners' sugar and roll out dough into a 1/4-inch-thick circle. Cut out figure shapes with a gingerbread man cookie cutter and arrange cut-out cookies on prepared baking sheets.
- Bake in the preheated oven for 8 to 10 minutes. Remove from baking sheets carefully and transfer to wire racks. Cool completely, about 20 minutes.
- Stir 1 cup confectioners' sugar and milk together in a small bowl until smooth. Beat in corn syrup and 1/4 teaspoon vanilla extract until icing is smooth and glossy. Add more corn syrup if icing is too thick.
- Spoon icing into a piping bag with a small plain tip. Draw a filled-out circle inside the head for the skull and a skeleton on the body, including 3 horizontal lines for the ribs. Let cookies stand until icing dries completely, about 2 hour, best overnight.
- Use black decorating gel to draw eyes, a nose, and a mouth on the skull and let cookies dry again, about 1 hour.

- Reserve 1 cup of juice and mix in cornstarch. In a large stock pot, mix sugar with cherries and remaining juices and cook until bubbling, stirring constantly. Add the reserved juice/cornstarch mixture and stir to combine. Cook for about 3 minutes until thickened.

- Preheat oven to 400 degrees F. Coat a smooth surface in flour and roll out 2 rounds of pie crust lengthwise. Line the bottom of a 9x13 baking pan with dough. Trim the excess and pinch the edges of the pie crust. Fill the crust with filling. Cut 6 1-inch strips of pie crust. Use small square cookie cutter to cut out 9 squares. Twist the strips and arrange across the pie to create ribs. Place the squares down the center of the ribcage. Brush crust with egg. Bake 35-45 minutes until the crust is golden brown and juices begin to bubble.
