"This melt-in-your-mouth Chicken Marsala is based on a recipe picked up in a cooking class," recalls Greta Igl in Menomonee Falls, Wisconsin. "But the basil and splash of lemon are my own touches. We've tried this dish in many restaurants, but always agree our homemade version tastes best. It's so easy...and if we're lucky enough to have leftovers, they reheat beautifully in the microwave."

2 boneless skinless chicken breast halves (5 ounces each)
2 tablespoons all-purpose flour
3/4 teaspoon minced fresh basil or 1/4 teaspoon dried basil
Dash salt and pepper
2 tablespoons butter, divided
2-1/4 cups sliced fresh mushrooms
1 garlic clove, minced
1/2 cup Marsala wine or chicken broth
1-1/2 teaspoons lemon juice
2 tablespoons grated Parmesan cheese

Steps:

  • Flatten chicken to 1/2-in. thickness. In a resealable plastic bag, combine the flour, basil, salt and pepper. Add chicken, one piece at a time, and shake to coat. , In a large skillet over medium heat, cook chicken in 1 tablespoon butter for 4-5 minutes on each side or until a thermometer reads 170°. Remove and keep warm. , In the same skillet, saute mushrooms in remaining butter until tender. Add garlic; cook 1 minute longer. Add wine and lemon juice, stirring to loosen browned bits from pan. Bring to a boil; cook until liquid is reduced by a third., Return chicken to the pan. Sprinkle with cheese. Reduce heat; simmer, uncovered, for 1-2 minutes or until heated through.

Light healthy Chicken Marsala Recipe with Tomatoes and Basil. A fresh and fragrant meal with a tangy pop of cherry tomatoes to brighten the sauce.

2 large boneless skinless chicken breasts (or 6 chicken cutlets)
1/4 cup all purpose flour
1 tablespoon butter
1 tablespoon olive oil
1 pint cherry tomatoes
1 shallot (peeled and sliced)
3 cloves garlic (peeled and minced)
1 pound cremini mushrooms (sliced thin)
1/2 cup marsala wine
1/4 cup chicken broth
1/4 cup fresh chopped parsley
1/4 cup fresh basil leaves
Parmesan cheese (for garnish)

Steps:

  • If working with whole chicken breasts, slice each one into 3 flat cutlets. Place them on a cutting board and cover with plastic wrap. Use a meat tenderizer (or rolling pin) to beat the chicken cutlets into thin even pieces. Place the flour in a shallow dish and season with 1 teaspoon salt and 1/2 teaspoon ground pepper. Then coat the chicken cutlets in flour and dust off.
  • Heat a large skillet over medium-high heat. Add 1/2 tablespoon butter and 1/2 tablespoon oil to the skillet. Once melted, add 3 cutlets to the skillet at a time, cooking for 2-3 minutes per side. Remove and cover with foil. Then repeat with the remaining cutlets.
  • Add the tomatoes to the skillet and let them blister on several sides, swirling the pan a few times. Once the first tomato pops, remove from the skillet and cover with foil.
  • Add the remaining butter and oil to the skillet. Then add the mushrooms, shallots, and garlic. Saute the mushrooms until they are soft. Then add the marsala wine and broth. Cook until most of the liquid is absorbed. Add the chicken and tomatoes back to the skillet and toss. Turn off the heat and toss in the fresh basil leaves and parsley. Serve warm with parmesan cheese, if desired.

Eight 4-ounce chicken breasts
2 cups Italian breadcrumbs
1/2 cup olive oil
1 tablespoon chopped garlic
1 pound sliced mushrooms
2 red tomatoes, chopped
1 tablespoon chopped fresh parsley
Pinch ground black pepper
Pinch dry basil
1 1/2 cups Marsala wine
1 cup chicken broth
1/2 cup ounces marinara sauce
3 ounces heavy cream

Steps:

  • Bread chicken breast on both sides in Italian breadcrumbs. Place a very large saute pan over high heat with olive oil. Once the oil is hot, add all the chicken breasts. Cook until lightly browned, then turn over and cook the same on the other side. Push the chicken breast to one side of the pan and drain all the oil out. Place chicken in the pan back on high heat and add garlic, mushrooms, tomatoes, parsley, pepper and basil. Add Marsala, chicken broth, marinara and cream. Let it reduce on high heat until sauce thickens and is a golden brown gravy. Take the chicken breast out first and place on plates. Pour the Marsala sauce on top to cover the chicken, then serve.

Italian style chicken over rice in a thick, tomato gravy that contains some red wine. This one's simple, yet will be a big hit.

4 skinless, boneless chicken breast halves - cut into bite size pieces
1 teaspoon Italian-style seasoning
1 teaspoon garlic powder
½ teaspoon dried sage
2 (14 ounce) cans stewed tomatoes, drained
2 tablespoons dry brown gravy mix
¼ cup Marsala wine

Steps:

  • Heat oil in a large skillet over medium high heat. Add chicken and saute for about 5 minutes, until browned. Season with Italian-style seasoning, garlic powder and sage and saute for another 10 minutes, until chicken is almost cooked through and juices run clear.
  • Pour tomatoes and liquid over chicken, then add gravy mix and wine and stir all together. Reduce heat to low and simmer for about 20 minutes. Serve hot over cooked rice, if desired.

A classic veal Milanese consists of pounded veal cutlets or chops that have been breaded in crumbs and sometimes Parmesan, then fried until the coating is burnished and brittle. Accompanied by a crisp, bright salad, it's a meal both cooling and rich. In this version, chicken breasts replace the veal, and a salad of tomatoes and mozzarella tossed with garlicky basil oil acts as the foil to the meat. If you want to work ahead, you can coat the cutlets in crumbs up to 4 hours ahead. Store them on a wire rack in the fridge. But try to serve them freshly fried when their coating is at its crunchiest.

1 1/2 pounds chicken cutlets, pounded 1/4-inch thick
Kosher salt and freshly ground black pepper, as needed
2/3 cup plus 1/4 cup extra-virgin olive oil
2/3 cup basil leaves
1 fat garlic clove, finely grated or minced
1 pound cherry or grape tomatoes, halved
8 ounces fresh mozzarella, cut into 1/2-inch pieces
1/2 cup all-purpose flour
2 large eggs, beaten
1 1/4 cups panko bread crumbs
1/4 cup grated Parmesan
2 tablespoons unsalted butter
Lemon wedges, for serving

Steps:

  • Lightly season chicken cutlets all over with salt and pepper; let rest while you make the basil oil.
  • In a blender or food processor, combine 2/3 cup oil, basil, garlic and salt to taste; purée until smooth.
  • In a medium bowl, toss tomatoes and mozzarella with about half of the basil oil and salt to taste. Set aside.
  • Place flour in a shallow bowl or plate. Pour eggs into another shallow dish; combine panko and Parmesan in a third dish.
  • In a large skillet, melt butter and remaining 1/4 cup oil over medium heat. As it heats, dip a chicken cutlet in flour, shake off excess, then dip in eggs. Shake off excess, then dip both sides in panko mixture and transfer to a rimmed baking sheet. Repeat with remaining cutlets.
  • When oil is hot, fry 2 cutlets at a time until bottoms are golden, about 3 minutes. Flip and fry until golden and crispy all over, about another 3 minutes. Transfer to a paper towel-lined plate. Sprinkle immediately with salt.
  • Taste tomato-mozzarella salad and add more salt and-or basil oil if needed. Serve cutlets topped with a squeeze of lemon, a drizzle of remaining basil oil and tomato-mozzarella salad.

1 3- to 4-pound chicken, cut up
Coarse salt and freshly ground pepper
2 tablespoons safflower or vegetable oil
2 tablespoons olive oil
1 large onion, chopped
2 cloves garlic, minced
2 carrots, scraped and sliced
1 tablespoon tomato paste
4 ripe tomatoes, peeled, seeded and chopped
1/2 cup white-wine vinegar
3/4 cup dry white wine
1 teaspoon fresh thyme leaves
1/2 cup creme fraiche
1 cup basil leaves, snipped

Steps:

  • Wipe the chicken pieces dry with paper towels, sprinkle with salt and pepper and brown the pieces a few at a time in the safflower oil in a large skillet. Set the pieces aside and pour off the fat from the skillet.
  • Heat the olive oil in the skillet and gently soften the onion with the garlic and carrots over medium heat. Stir in the tomato paste, tomatoes, vinegar, wine and thyme leaves. Add the chicken pieces, cover and simmer over medium heat for 30 to 40 minutes, or until they are cooked. Stir occasionally, turning the pieces over in the sauce.
  • Remove the chicken to a serving dish and keep it warm in a low oven. Bring the sauce to a boil, and cook for about 10 minutes to reduce by about one-third. Stir in the creme fraiche and bring to a boil. Cook for five minutes. Correct seasoning and pour the sauce over the chicken pieces. Sprinkle with basil and serve at once.
