1/4 cup coconut milk
2 tablespoons reduced sodium soy sauce
2 1/2 teaspoons yellow curry powder
1 1/2 teaspoons turmeric
3 cloves garlic, minced
1 tablespoon freshly grated ginger
1 tablespoon brown sugar
1 tablespoon fish sauce
2 pounds boneless, skinless chicken thighs, cut into 1-inch chunks
1 tablespoon canola oil
Kosher salt and freshly ground black pepper, to taste
3 tablespoons creamy peanut butter
1 tablespoon reduced sodium soy sauce
1 tablespoon freshly squeezed lime juice
2 teaspoons brown sugar
2 teaspoons chili garlic sauce, or more, to taste
1 teaspoon freshly grated ginger

Steps:

  • To make the peanut sauce, whisk together peanut butter, soy sauce, lime juice, brown sugar, chili garlic sauce and ginger in a small bowl. Whisk in 2-3 tablespoons water until desired consistency is reached; set aside. In a medium bowl, combine coconut milk, soy sauce, curry powder, turmeric, garlic, ginger, brown sugar and fish sauce. In a gallon size Ziploc bag or large bowl, combine chicken and coconut milk mixture; marinate for at least 2 hours to overnight, turning the bag occasionally. Drain the chicken from the marinade, discarding the marinade. Preheat grill to medium high heat. Thread chicken onto skewers. Brush with canola oil; season with salt and pepper, to taste. Add skewers to grill, and cook, turning occasionally, until the chicken is completely cooked through, reaching an internal temperature of 165 degrees F, about 12-15 minutes. Serve immediately with peanut sauce.

That peanut butter is relegated to the sandwich while sesame butter (tahini) is seen as an exotic food item is one of the wonderfully preposterous anomalies of American cooking. In the rest of the world, especially Asia, peanuts are special, used not only as a garnish but as a main ingredient in sauces. One such sauce incorporates coconut milk and classic Thai seasonings: curry paste or powder, nam pla, lime and cilantro. The coconut milk and peanuts make the mixture too powerful-tasting for most fish and too heavy for most meat. It is perfect, however, when teamed with chicken on the grill, especially boneless thighs.

1/2 cup natural peanut butter, preferably chunky
1 tablespoon curry paste or curry powder, or to taste
1/2 teaspoon salt
3/4 cup fresh or canned coconut milk, approximately
1 tablespoon nam pla or soy sauce
1 tablespoon lime juice
1 1/2 to 2 pounds boneless chicken thighs, cut into large chunks
Chopped fresh cilantro leaves for garnish
Lime wedges

Steps:

  • Start charcoal or gas grill or heat broiler; fire should be moderately hot, and rack should be at least 4 inches from heat. If using wood skewers, soak them in water.
  • Put peanut butter in a small saucepan over medium heat; add curry paste or powder, salt and enough coconut milk to achieve a creamy but quite thick consistency. Cook over low heat, whisking, until smooth; do not boil. Cool a bit, then stir in nam pla and lime juice.
  • Marinate chicken in this mixture for 5 minutes to an hour. Skewer chicken chunks, then grill or broil slowly, until nicely browned and cooked through, 10 minutes or longer. Serve hot, garnished with cilantro and accompanied by lime.

4 boneless chicken breasts
1/4 cup lime juice (or lemon)
1/4 cup water
2 tablespoons vegetable oil
2 teaspoons curry powder
1/2 teaspoon salt
1/3 cup smooth peanut butter
1/3 cup water
1 clove garlic
2 tablespoons lime juice (or lemon)
2 tablespoons soy sauce
1 teaspoon sugar

Steps:

  • Cut the chicken lengthwise into 1/4 inch (1/2 cm) strips- you'll get about 4 or 5 strips from each breast.
  • Thread these strips zigzag fashion onto bamboo skewers, about 3 or 4 strips per skewer.
  • Don't squash the zigzags too tightly- leave them loosely threaded so the marinade can soak in.
  • Arrange the skewers in a glass baking dish.
  • In a small bowl, combine the marinade ingredients& pour over the chicken skewers in the baking dish; allow to marinate, refrigerated, for at least one hour, but no longer than three or else the chicken will disintegrate.
  • Meanwhile, make the dipping sauce.
  • In a blender combine all the sauce ingredients and blend until completely smooth.
  • Pour into a small bowl.
  • Preheat the barbecue, then grill chicken skewers over medium heat, brushing lightly with the marinade, about 5 minutes per side.
  • The chicken should be cooked through but not dried out.

4 large cloves garlic, grated
Kosher salt
8 Do-si-dos® or Peanut Butter Sandwich cookies
1/3 cup peanut butter, softened
3 tablespoons low-sodium soy sauce
4 tablespoons fresh lime juice
2 tablespoons red wine vinegar
1 to 1 1/2 tablespoons hot sauce
2 teaspoons garlic powder
1/2 teaspoon red pepper flakes
1 large knob fresh ginger, peeled and grated

Steps:

  • Position an oven rack in the middle of the oven and preheat the oven to 400 degrees F. Line a baking sheet with aluminum foil.
  • Rub the drumsticks with the garlic, season with salt and arrange far from one another on the prepared baking sheet. Bake on the middle rack until the chicken is cooked through (165 degrees F) and the juices run clear, 25 to 30 minutes.
  • In a medium bowl, mix the cookies with 1/2 cup warm water; crush the cookies with the back of a spoon until they form a paste. 1 teaspoon palm sugar or brown sugar

1 cup coconut milk

1 large Japanese cucumber, peeled, halved and thinly sliced

Steps:

  • In a bowl, combine all the marinade ingredients except the chicken. Slice the chicken into long, thin strips, about 3 inches long by 1 inch wide, and add to marinade. Turn chicken to coat, cover and refrigerate for up to 4 hours.
  • Meanwhile, prepare the sauce: Bring the coconut milk to a simmer in a small saucepan. Whisk in curry paste until dissolved, about 1 to 2 minutes. Whisk in peanut butter, stock and sugar, reduce heat and cook until smooth, stirring constantly, about 5 minutes. Remove from heat and add tamarind juice and salt. Set aside to cool to room temperature.
  • Prepare relish: Place cucumber, shallot, and chili slices in a small bowl. Heat the vinegar, sugar and salt in a small saucepan, stirring, until mixture reaches a boil and sugar is dissolved, about 3 minutes. Remove from the heat, cool to room temperature, and then pour over cucumber mixture. Garnish with cilantro leaves and set aside.
  • Prepare grill and thread marinated chicken onto soaked bamboo skewers. Place on grill and cook 5 to 7 minutes, or until cooked through, turning once. Serve with peanut sauce and cucumber relish.

1 1/2 tablespoons brown sugar
1 1/2 tablespoons minced fresh ginger

Steps:

  • In a medium sized bowl, whisk together the chicken stock, coconut milk, soy sauce, shallot, garlic, fish sauce, brown sugar, lime zest, and ginger. Add the chicken strips and marinate for 1 hour. Remove the chicken from the marinade and discard the marinade.
  • Spray a nonstick grill pan with cooking spray and preheat over a medium-high flame. While pan is heating, thread chicken onto skewers. Grill 2 to 3 minutes per side, until meat is cooked through and has light grill marks.
  • Serve chicken skewers with Peanut Dipping Sauce, and garnish with basil or cilantro and chopped peanuts.

1 teaspoon seasoning salt

1 pound skinless, boneless chicken thighs, cut into 1/2 inch strips
1 clove garlic, minced

Steps:

  • CHICKEN SATAY: In a blender, combine all the ingredients except the chicken. Pulse the blender until the shallot, cilantro, and garlic break down into a sauce like consistency. Add the chicken strips into a gallon-sized zip-top bag and pour the prepared marinade over the chicken. Zip the bag and squish to coat the chicken evenly. Place the zip-top bag on a plate and refrigerate for at least 3 hours and ideally overnight.
  • PEANUT DIPPING SAUCE: Add all the ingredients for the peanut dipping sauce in a medium bowl and use a whisk to combine. If your peanut sauce is thick, you can add in 1 tablespoon of hot water at a time to help thin it to desired consistency. I only needed 1 tablespoon for this. Top with crushed peanuts if desired.
  • CHICKEN SATAY CONTINUED: When you're ready to grill, preheat the grill on medium high for 5-10 minutes and oil the grates. Meanwhile, remove the chicken pieces from the marinade and place the chicken (like an accordion) on skewers. Pierce the chicken with the skewer and zig-zag the chicken through the skewers making sure to secure both ends on the stick. Place the chicken on the hot grill, cover and cook for 4-7 minutes, flipping half way through. The chicken is cooked through when it is slightly firm to the touch or registers 165ºF on a thermometer. Remove, the chicken and serve immediately with the peanut dipping sauce.
