- Heat the lard in a heavy pot and brown the chicken on all sides. Transfer the chicken to a plate. In the same oil, add the onions and fry until golden brown. Add the garlic and tomatoes (and pepper if using) and fry another 2-3 minutes. Remove the pot from the heat and stir in the paprika, salt and pepper (paprika becomes bitter if scorched).
- Return the chicken to the pot and place it back over the heat. Pour in the chicken broth. The chicken should be mostly covered. Bring it to a boil. Cover, reduce the heat to medium-low and simmer for 40 minutes. Remove the chicken and transfer to a plate.
- In a small bowl, stir the flour into the sour cream/cream mixture to form a smooth paste. Stir the cream mixture into the sauce, whisking constantly to prevent lumps. Bring it to a simmer for a couple of minutes until the sauce is thickened. Add salt and pepper to taste. Return the chicken to the sauce and simmer to heat through.
- Serve the chicken paprikash with Hungarian nokedli, which is like German Spaetzle only they're very short and stubby. You can make nokedli with a spätzle scraper and using this recipe for the dough.

- Fill a large pot with water and bring to a boil over high heat. In a large bowl, mix together the eggs, 2 teaspoons of salt, and 1/2 cup of water. Gradually stir in 2 1/2 cups of flour to make a stiff batter. Using two spoons, scoop out some batter with one spoon and use the second to scrap off the spoonful of batter into the boiling water. Repeat until several dumplings are cooking. Cook dumplings for 10 minutes or until they float to the top; then lift from the water and drain in a colander or sieve. Rinse with warm water.
- In a large skillet over medium-high heat, melt butter and add chicken; cook until lightly browned, turning once. Add onion to skillet and cook 5 to 8 minutes more. Pour in 1 1/2 cups of water, and season with paprika, salt, and pepper; cook 10 minutes more, or until chicken is cooked through and juices run clear. Remove chicken from skillet and keep warm.
- Stir 2 tablespoons of flour into sour cream; then slowly stir into the onion mixture remaining in the skillet. Bring the mixture to a boil, stirring constantly, and cook until thickened.
- To serve, add dumplings to the sour cream/onion mixture, then spoon onto dinner plates adding a piece of chicken.

PAP'S CHICKEN PAPRIKASH

- For the chicken paprikash: Preheat the oven to 400 degrees F.
- Season the chicken with one-third of the paprika (1 tablespoon plus 1 teaspoon), 1 tablespoon salt and some pepper.
- Heat the oil and chicken fat or butter in a large ovenproof pan over medium heat. When hot, add the chicken and brown for 2 minutes per side; remove to a plate. Add the onions, cabbage and remaining paprika (2 tablespoons plus 2 teaspoons) and cook, stirring occasionally, until starting to soften, 3 to 4 minutes. Add the flour and cook the roux, stirring, for 2 minutes. Stir in the stock, making sure there are no lumps.
- Return the chicken to the pan skin-side up. Bake until the chicken is cooked through and measures 160 degrees F, 20 to 35 minutes.
- For the spaetzle: While the chicken is cooking, bring a saucepan of water to a boil.
- Sift the flour and 1 teaspoon salt into a bowl. Make a well and mix in the eggs and milk.
- Dampen a plastic cutting board and place the dough mixture on it. Cut off strips of dough into the water and cook for 3 minutes. Drain the spaetzle and rinse under cold water. Set aside until the chicken is done.
- Add the spaetzle to the chicken pan, stir in the sour cream and parsley if using and serve.

I really love making anything Hungarian, since the recipes tend to be simple and easy to make, as well as comforting and delicious, and the names are never not fun to say. Top with extra sour cream and freshly sliced chives on top.

- Season chicken generously on both sides with salt. Heat olive oil in a heavy, deep-sided pan (that comes with a lid) over high heat and brown the chicken well, skin-side down, about 5 minutes; flip and continue to sear until other side is browned, 3 to 4 minutes more. Turn off heat. Transfer the browned chicken to a plate and reserve until needed; spoon out excess chicken fat if desired.
- Add onions and a pinch of salt to the same pan and saute over medium until golden, about 5 minutes. Add garlic, tomato paste, and flour and cook, stirring, another 3 to 4 minutes to form a tomato roux. Stir in 1 teaspoon kosher salt, freshly ground black pepper, smoked paprika, and sweet paprika and cook for 1 minute. Add chicken broth and bring to a simmer over high heat.
- Reduce heat to medium-low and transfer chicken and accumulated juices back into the pan. Baste the tops with the sauce, cover the pan with the lid, and simmer, basting occasionally with the sauce, until the chicken is no longer pink in the centers and is fork-tender, 45 to 60 minutes. Remove the chicken and transfer to a plate.
- Skim some fat off the top of the sauce if desired. Whisk heavy cream and sour cream into the sauce and bring to a simmer, stirring occasionally. Transfer the chicken and any juices back into the sauce. Simmer, uncovered, basting often, until chicken is heated through and very tender, about 10 minutes. Taste and adjust seasoning if needed.

- Place a large pot or Dutch oven over medium heat and cook bacon until crisp, about 4 minutes. Add onion and cook until soft and translucent, 3 to 5 minutes, stirring once or twice. Add chicken and tomatoes. Cover and cook over medium-low heat for 10 minutes. Stir in paprika. Pour in 1/2 cup to 3/4 cup water and season with salt. Cover and simmer over low heat for 25 minutes. Remove lid and cook an additional 5 minutes.
- Transfer chicken to a plate and keep warm. Mix sour cream and 1 teaspoon cold water together in a small bowl. Add mixture to the pot and stir until gravy is evenly colored and smooth. Return chicken to the pot, cover and simmer on low for another 30 minutes.
- Meanwhile, stir flour and salt together in a bowl. In a separate bowl mix egg and water together. Gradually add flour mixture and stir together until dumpling batter is very thick and mixture breaks from a spoon.
- Bring 2 quarts of water to a boil in a large pot. Add 2 teaspoons salt.
- Drop 1/2 teaspoons of dumpling batter into the boiling water. Dumplings will rise to the surface in about 1 minute; boil for 5 minutes more. Use a slotted spoon to transfer dumplings to a bowl. Repeat steps until batter is used up and all dumplings are cooked. Mix 1 teaspoon of butter with cooked dumplings. Add dumplings to chicken mixture in the pot and allow to heat through.

Spices lose their flavor over time but few as quickly as paprika, which starts out tasting of pepper and sunshine but deteriorates in but a few months to sawdust and bitterness. For this recipe, get some new at the market: sweet or hot Hungarian paprika is best, but the generic article isn't terrible and the smoky Spanish varieties known as pimentón de La Vera would not be out of place either, lending a deep, woodsy aroma reminiscent of cooking over an open fire. It's a dish that pairs beautifully with butter-slicked egg noodles.

- Heat oven to 400. Season the chicken aggressively with salt and pepper. Heat the oil and 1 tablespoon of the butter in a large, heavy, oven-safe sauté pan or Dutch oven set over high flame, until the butter is foaming. Sear the chicken in batches, skin-side down, until it is golden and crisp, approximately 5 to 7 minutes. Then turn the chicken over, and repeat on the other side, approximately 5 to 7 minutes. - Add tomatoes and broth, whisk until smooth and then nestle the chicken back in the pan, skin-side up. Slide the pan or pot into the oven, and cook until the chicken has cooked through and the sauce has thickened slightly, approximately 25 to 30 minutes.
- Meanwhile, set a large pot of heavily salted water to boil over high heat. Cook noodles in the water until they are almost completely tender, approximately 7 to 8 minutes. Drain the noodles, and toss them in a bowl with the remaining butter, then toss again to coat.
- Place the chicken on top of the noodles, then add the sour cream to the sauce, stir to combine and ladle it over the whole.

I got this basic recipe off Allrecipes, but I changed it around a bit and now this is a family favorite. Traditionally made with a whole chicken or chicken thighs, my version seems to work best for my family. Warm and comforting, I call it my "man pleaser" supper. Serve over white or brown rice, even over noodles if you wish, and make a dark leafy green salad for a complete and hearty meal.

- Open can of petite diced tomatoes and place in a strainer over a bowl to drain the liquid. Set aside and do not discard liquid.
- In a large frying pan or dutch oven, place the oil or bacon grease and start heating over medium heat.
- Chop the onion into bite size pieces and saute in the pan, about 3 - 4 minutes. Mince the garlic and add to the onion. Saute until onion is translucent and soft. Add the salt, black pepper and crushed red pepper and mix well.
- Sprinkle the Hungarian Paprika over the onion/garlic mixture and mix well, coating all the onion with the paprika. Make sure your pan is not too hot as this mixture will seem a bit dry. Add the chicken and the water and mix. Water should just barely cover the chicken. You can add more water if you need to.
- Simmer gently on the stove for about 45 minutes uncovered, adding more water if necessary, just enough to keep the mixture gently bubbling as it simmers. After the 45 minutes, add in the tomatoes and mix completely, simmer for 5 minutes more, chicken should be tender.
- In the bowl with the reserved tomato liquid, add the flour and the 8 oz of sour cream and mix well with a wisk. Pour over the chicken in the pan and mix well, bringing the pan up to a boil to thicken the sauce. Cook this for 2-3 minutes, sauce will be thick. Season with more salt, pepper and crushed red pepper to your taste.

- In a large skillet, brown chicken chunks in olive oil. Once, browned remove chicken from skillet.
- Add onions and garlic to the same skillet and saute for about 5 minutes

- NOTE:I use 6 boneless skinless chicken breast halves to serve 6 because we like extra sauce.
- Shake chicken in flour, salt, and pepper in a plastic bag.
- Coat well.
- Save remaining flour for gravy.
- Brown chicken, part at a time, in butter and oil in Dutch oven.
- Remove chicken when browned, pour off drippings, and return 1 tablespoonful to kettle.

- Measure 2 tablespoons of saved flour and add water to make paste.
- Stir into broth.
- Cook, stirring constantly, until gravy thickens and boils 1 minute.
- Blend sour cream and whipping cream in a small bowl and stir into gravy.
- Return chicken and reheat slowly to boiling.
- Serve over noodles or dumplings.

Steps:
- Combine flour, 1 teaspoon paprika and black pepper in large resealable plastic bag.
- Add chicken pieces; shake to coat.
- Remove from bag and shake off excess flour. Melt butter in a large skillet over medium heat.
- Add chicken; brown 4 to 5 minutes per side or until chicken is tender.
- Remove from skillet.
- Add onion; cook until tender.
- Reduce heat to low.
- Stir in chicken broth, sour cream and remaining paprika; mix well.
- Cook until just heated through.

EASY CHICKEN PAPRIKASH
I loved Chicken Paprikash, but hated the bones! So changed a few things in the recipe to make it easier to make and enjoy. This tastes even better as leftovers after the flavors have more time to blend, just don't forget to add with the Sour Cream and a little dried dill. (Fresh Dill if you have it)

Steps:
- Heat the olive oil in a large pot over medium-high heat. Add the sliced onion and peppers and pan roast. I like a little char on the edges, and remove from pan when the skins start to pull away from the peppers.
- Season the chicken thighs with salt and pepper. Cook the chicken in the same pot used for the peppers and onion until browned, 4 to 5 minutes per side. Remove from the pot.
- Add the onions, bell pepper back to the pan and add garlic, cooking until the garlic is tender.
- Add stewed tomatoes, paprika, 1/2 teaspoon salt and 1/4 teaspoon black pepper and bring to a boil.
- Return chicken to the pot in the vegetable mixture and simmer, partially covered, until the chicken is cooked through.
- To serve: in 4 bowls, divide the noodles into equal servings, top with chicken and sauce, top with sour cream and a sprinkling of dill.

CHICKEN PAPRIKASH WITH DUMPLINGS
My mom made this for us growing up. With the dumplings on top - it's real comfort food.

- Wash chicken and pat dry. Cut up chicken into large, bite size pieces. Combine flour, 2 1/4 tsp salt and pepper. Use to coat chicken well. Reserve remaining flour mixture.
- In 4 tbsp hot oil in a large dutch oven, brown chicken and remove to a platter. Add remaining oil to pan. Stir in paprika and onions. Saute until tender (5 minutes). Stir in reserved flour mixture until well blended. Gradually stir in chicken broth. Bring to a boil, stirring.
- Add browned chicken and carrots. Simmer, covered 45 minutes or until chicken is tender.
- Meanwhile make dumpling mixture. In a medium bowl, combine biscuit mix, salt and milk. Mix with fork until well blended.
- Drop batter by rounded tablespoons onto stew that has been simmering for 45 minutes. Cook over low heat uncovered 10 minutes. Cover tightly and cook 10-15 minutes longer.
- Remove dumplings and gradually stir in sour cream and heat but do not boil. Spoon chicken and gravy onto plates, top with dumplings and garnish with parsely.
CHICKEN PAPRIKASH
I adapted this from a recipe by Pierre Franey that originally appeared in the New York Times. You may use 1 cup water plus 2-3 chicken bouillon cubes instead of the broth.

- Saute onion and garlic in oil.
- Add chicken; brown on all sides. Add broth (or water and bouillon cubes) and 2 teaspoons or so paprika. Cover and simmer until chicken is tender (do not boil but simmer; this may take longer). You may want to remove the white meat first. Remove all chicken; keep chicken warm while preparing sauce.
- Mix flour and sour cream, add a bit of sauce from chicken and mix together. Put this back into the pot - mix with sauce. Cook 1 minute without boiling. Taste for seasoning - add salt if necessary or more paprika. Return chicken pieces to the pot.
- Serve with buttered noodles or rice.

- Heat olive oil in a pot, add chicken and garlic and sautee.
- Add onions and just enough broth to cover.
- Stir in spices, bring to a boil, turn down heat and simmer until chicken and onions are fully cooked.
- While it's simmering, eat the Fudgesicle. You can also make the Spaetzel and Halouskies now.
- When the chicken and onions are fully cooked, bring to a roiling boil and drop in the Spaetzel.
- If needed you may add the starch as a thickening agent, by mixng it into the set aside broth and pouring it into the pot.
- Remove from heat and let it thicken.
- Mix in sour cream, and it's ready to serve.

This classic Hungarian dish will fill you up and keep you warm on a chilly fall night. A healthy dose of paprika gives this dish its deep brick-red color. If you enjoy spicy food, try replacing half of the sweet paprika with hot Hungarian paprika.

- Season chicken with salt and pepper. In a large Dutch oven or heavy pot, heat oil over high. Cook chicken, skin side down, until golden and crisp, 6 minutes. Flip chicken and cook until browned, 6 minutes more. Transfer to a plate.
- Discard all but 1 tablespoon fat from pot and reduce heat to medium. Add onion and cook, stirring frequently and scraping up any browned bits with a wooden spoon, until beginning to soften, 2 minutes. Add garlic and cook, stirring frequently, 3 minutes. Add paprika and flour, season with salt and pepper, and stir constantly until paprika is fragrant and mixture begins to stick, 1 minute. Add broth and whisk until smooth. Add tomatoes and bring to a boil over high. Return chicken to pot in a single layer, skin side up, and reduce heat to medium. Cover and cook until chicken is cooked through, 20 minutes.
- Meanwhile, in a large pot of boiling salted water, cook noodles according to package instructions. Drain noodles and divide among four bowls. Top with chicken. Stir sour cream into sauce, then ladle over chicken and noodles.
