Ordinary rice cakes get a taste lift with some simple pizza toppings. I keep small portions of the beef mixture in the freezer to quickly thaw for fast snacks.-Gayle Richardson, Great Falls, Montana

1 can (8 ounces) tomato sauce
1 package (4-1/2 ounces) plain or cheese-flavored rice cakes
Italian seasoning to taste
1 pound ground beef
1 medium onion, chopped
1 medium green pepper, chopped
2 cups shredded part-skim mozzarella cheese
1 can (2-1/4 ounces) sliced ripe olives, drained

Steps:

  • Spread tomato sauce over the rice cakes. Sprinkle with Italian seasoning. , In a large skillet, cook the beef, onion and green pepper over medium heat until meat is no longer pink; drain. Spoon over rice cakes. Sprinkle with cheese and olives. Place five pizzas on a microwave-safe plate. , Microwave, uncovered, on high for 30 seconds or until cheese is melted. Repeat with remaining pizzas.

  • Place English muffins on a baking sheet lined with aluminum foil.
  • Top with barbecue sauce, scallion and chicken.
  • Sprinkle with cheese and bake for 12 to 15 minutes until cheese is melted.

JERK CHICKEN PIZZA

This is another recipe that my boyfriend and I made up. We decided that the normal combo pizza was getting boring so we spiced it up - A LOT. This recipe may not be for the weak at heart. It has some great ingredients such as German salami, portobello mushrooms, and jerk sauce.

1 green bell pepper
4 teaspoons olive oil, divided
1 skinless, boneless chicken breast half - finely chopped
1 tablespoon jerk sauce, or to taste
3 cloves garlic, diced
1 portobello mushroom, finely chopped
1 (10 ounce) package pre-baked thin pizza crust
½ cup pizza sauce
1 (4 ounce) package thinly sliced salami
1 ½ cups shredded mozzarella cheese

Steps:

  • Preheat the oven broiler. Brush the green pepper with 1 teaspoon olive oil, and place on a baking sheet. Broil about 5 minutes on each side, until skin begins to scorch. Remove from heat, and seal in a plastic container for 15 minutes. Cut into strips, remove seeds, pulp, and skin, and dice.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat the remaining olive oil in a skillet over medium heat, and cook the chicken 10 minutes, until juices run clear. Mix in the roasted green pepper, jerk sauce, garlic, and portobello mushroom. Cook and stir 5 minutes, until heated through.
  • Place the pizza crust on a pizza pan, and spread with pizza sauce. Arrange the salami, then the chicken mixture evenly over the sauce. Top with mozzarella cheese.
  • Bake pizza 10 minutes in the preheated oven, or until cheese is melted and bubbly.

Pizza at home can be just as tasty as one from a local pizzeria. This pizza gets a jumpstart by using a lot of ready-made ingredients, including the dough. The trick is how you cook the dough.

¼ teaspoon salt
¼ teaspoon garlic powder
1 cup fresh spinach
1 tablespoon water
1 (14 ounce) package refrigerated pizza dough
1 tablespoon olive oil
⅓ cup pizza sauce
⅔ cup shredded Italian cheese blend, divided
⅓ cup chopped cooked chicken breast
¼ cup sun-dried tomatoes, cut into thin strips
1 tablespoon butter

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Mix salt and garlic powder together in a small bowl.
  • Combine spinach and water in a microwave steamer. Microwave on high for 60 seconds. Drain spinach, then squeeze out any excess water.
  • Roll pizza dough on a lightly floured surface to a 14-inch circle.
  • Pour oil into a 12-inch cast iron skillet. Sprinkle 1/2 of the garlic salt over the bottom of the skillet. Place dough into the skillet and shape crust so edges come up the sides of the skillet. Prick holes in the bottom of the dough with a fork.
  • Spread pizza sauce over the dough. Sprinkle 1/2 of the Italian cheese over the sauce. Add spinach, chicken, then sun-dried tomatoes. Top with remaining cheese.
  • Bake in the preheated oven for 20 minutes.
  • Remove from the oven. Run butter along the edges of the crust, then sprinkle the remaining garlic salt over the melted butter. Bake for 5 more minutes.
  • Transfer pizza to a pizza peel and let rest for 5 minutes before slicing.

3 tablespoons pizza sauce
1 tablespoon parmesan cheese, grated
2 tablespoons cooked chicken, shredded
1/4 cup assorted fresh vegetable, chopped
2 tablespoons mozzarella cheese

Steps:

  • Mix pizza sauce and parmesan cheese, spread evenly over rice cakes. Top each with 1 tbsp shredded chicken.
  • Top each with a few tbsp veggies and 1 tbsp cheese.
  • Bake about 5 minutes on 450 degrees. Or you can broil them.
