BASIC CHICKEN SALAD
This basic chicken salad is a family favorite. I like to use baked thighs or breasts that have been sprinkled with basil or rosemary.

Steps:
- Place almonds in a frying pan. Toast over medium-high heat, shaking frequently. Watch carefully, as they burn easily.
- In a medium bowl, mix together mayonnaise, lemon juice, and pepper. Toss with chicken, almonds, and celery.

CHICKEN SALAD - QUICK, EASY, BIG!
Recipe video above. Here's a speedy main course size salad that's filled with all my favourite vegetables. I like this because it's filled, colourful, interesting enough to serve to friends, but quick enough for a fast lunch, filling enough for dinner.

- Dressing: Place ingredients in a jar, shake, set aside for at least 10 minutes to let flavours meld.
- Salad: Place all ingredients except bacon in a big bowl. Drizzle over most of the Dressing, then toss well.
- Transfer to serving bowl, drizzle with remaining Dressing. Sprinkle with bacon. Serve immediately!

QUICK AND EASY CURRY CHICKEN SALAD FOR LUNCHES
Curry chicken salad is one of my favorite recipes to make ahead for a week of effortless but delicious lunches. This recipe is so flavorful and has ton of great texture. There are so many ways you can eat this chicken salad: sandwich, mixed into a salad, scooped into lettuce cups, spooned into cucumbers or other veggies, dipped with pita, spread on top of toast, or just eaten straight out of the container! Curry chicken salad is also a great party app, just place dollops in little cucumber cups, finger sandwiches, or crackers and serve!

- Whisk yogurt and mayonnaise together in a medium bowl until blended. Add curry powder and stir to combine. Stir in shredded chicken until evenly coated. Add apple, celery, green onion, almonds, and raisins; season with salt and pepper. Stir gently to until thoroughly combined and all ingredients are coated with curry-yogurt.
- Serve immediately or refrigerate until ready to serve.

I copied this down once while sitting in the waiting room for a doctor's appointment. (Goodness knows there's always time enough for copying recipes!) I think it came from "Child" magazine. I estimated number of servings.

- In medium mixing bowl combine first three ingredients.
- Stir in the lemon juice and pepper.
- Combine the mayo, pickle relish and prepared mustard.
- Add this sauce to chicken and gently stir in the eggs.
- Cover and chill until ready to serve.
EASY CHICKEN SALAD
I used to make this when I was kid (I started cooking at age 7) and recently started bringing it to work. My co-workers now bother me about making more! It's soooo easy to make and nice summer dish to top salads, in a sandwich, crackers, whatever you think of! When I have them, I add chopped celery...yummy!

- Boil until chicken is done.
- Let cool.
- With hands, shred cooked chicken in bowl.
- Add chopped onions and green peppers.
- Add Mayo to your liking.
- Sprinkle with salt Pepper and chill.
- You can prepare a salad and add this.
- Alternatively, Take a pita bread and open.
- Spread chicken mixture and add tomatoes and lettuce.
