Easy Sesame Chicken Salad image

This sesame chicken salad is delicious, light, and perfect for lunch or dinner.

1 tablespoon olive oil, or to taste
3 pounds skinless, boneless chicken breasts
salt and ground black pepper to taste
1 cup olive oil
7 tablespoons white vinegar
6 tablespoons soy sauce
3 tablespoons minced fresh ginger
3 tablespoons light brown sugar
3 cloves garlic, minced
2 teaspoons crushed red pepper, or to taste
4 tablespoons sesame seeds
1 (16 ounce) package mixed salad greens
1 ¼ cups halved cherry tomatoes
¾ medium red onion, thinly sliced
3 mandarin oranges, peeled and segmented

Steps:

  • Heat oil in a large skillet over medium-high heat. Add chicken, season with salt and pepper, and cook until no longer pink in the center and the juices run clear, about 5 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove from the heat and set aside to cool.
  • While chicken is cooling, combine olive oil, vinegar, soy sauce, ginger, brown sugar, garlic, and red pepper in a Mason jar; close lid and shake vigorously until combined.
  • Chop cooled chicken and place in a bowl with dressing and sesame seeds; toss to combine.
  • Combine mixed greens, cherry tomatoes, and onion in a large bowl. Mix in dressed chicken and top with mandarin oranges.

1/3 cup sherry or chicken broth
1/3 cup soy sauce
2 green onions, chopped
3 tablespoons apricot preserves
1 tablespoon canola oil
2 garlic cloves, minced
2 teaspoons minced fresh gingerroot
1/2 teaspoon hot pepper sauce
3 teaspoons sesame seeds, toasted, divided
1-1/2 pounds boneless skinless chicken breasts, cut into 1-inch cubes
1 medium sweet red pepper, cut into 1-inch pieces
1 medium sweet yellow pepper, cut into 1-inch pieces

Steps:

  • In a large bowl, combine the sherry or broth, soy sauce, onions, preserves, oil, garlic, ginger, hot pepper sauce and 1-1/2 teaspoons sesame seeds. Pour 1/3 cup into another bowl for basting; cover and refrigerate. Pour remaining marinade into a large resealable plastic bag; add chicken. Seal bag and turn to coat; refrigerate for 2-3 hours or overnight, turning occasionally., Drain and discard marinade from chicken. On metal or soaked wooden skewers, alternating, thread chicken and peppers. Grill, uncovered, over medium heat for 6 minutes, basting with reserved marinade. Grill 5-10 minutes longer or until meat juices run clear, turning and basting frequently. Sprinkle with remaining sesame seeds.

4 (4 ounce) skinless, boneless chicken breast halves
¼ cup soy sauce
2 tablespoons brown sugar
1 teaspoon minced fresh garlic
½ teaspoon grated fresh ginger
1 cup mayonnaise
1 tablespoon sesame oil
1 tablespoon white sugar
½ teaspoon grated fresh ginger
1 tablespoon sesame seeds
1 medium head napa cabbage, thinly sliced
¼ medium head green cabbage, thinly sliced
1 medium carrot, shredded
½ cup crispy fried rice noodles

Steps:

  • Place chicken in a large glass or ceramic bowl. Whisk soy sauce, brown sugar, garlic, and ginger for marinade together in a small bowl; pour over chicken and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator, 8 hours to overnight.
  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Combine mayonnaise, sesame oil, sugar, and ginger for dressing in a small bowl. Cover and refrigerate while you cook the chicken.
  • Remove chicken from the marinade and shake off excess. Discard the remaining marinade.
  • Cook chicken on the preheated grill until no longer pink in the center and the juices run clear, about 10 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove from the grill and chop when cool enough to handle.
  • While the chicken is cooking, place sesame seeds in a dry pan over medium-high heat. Shake the pan like you are making popcorn and toast until seeds give off a lovely toasted smell, 3 to 5 minutes. Quickly remove from the heat and transfer to a bowl to cool; if you leave them in the pan they will continue to cook and burn.
  • Place napa cabbage, green cabbage, and carrot in a large bowl with chicken and toasted sesame seeds. Toss together, then mix in the dressing. Divide salad onto plates and top with crispy fried noodles.

1/4 cup soy sauce
1/4 cup Russian salad dressing
1 tablespoon sesame seeds

1 green bell pepper, cut into 1 inch pieces
2 medium onions, cut into eighths
3 small zucchini, cut into 3/4 inch pieces (or use 2 large)

Steps:

  • Place chicken cubes in a large shallow container. Combine soy sauce, dressing, sesame seeds, lemon juice, garlic posder, and ginger in a jar; cover tightly and shake vigorously. Pour over the chicken. Cover and refrigerate at least 2 hours, stirring the chicken occasionally.
  • Remove the chicken from the marinade, reserving the marinade. Alternate the chicken and vegetables on skewers.
  • Grill the kabobs over medium-hot coals for 15 to 20 minutes or until the chicken is done. Turn and baste frequently with the marinade.

1/4 cup HEINZ Apple Cider Vinegar
2 Tbsp. sesame oil
2 Tbsp. water
2 lb. boneless skinless chicken breasts, cut into 1-1/2-inch pieces
2 Tbsp. creamy peanut butter
1/3 cup KRAFT Asian Toasted Sesame Dressing
2 each green and yellow peppers, each cut into 12 pieces
1 large red onion, cut into 12 wedges

Steps:

  • Mix first 4 ingredients in medium bowl until blended. Add chicken; stir to evenly coat. Refrigerate 20 min. to marinate. Meanwhile, mix peanut butter and sesame dressing until blended.
  • Heat grill to medium-high heat. Remove chicken from marinade; discard marinade. Thread chicken, peppers and onions alternately onto 12 skewers.

4 ounces chicken breasts, skinless, boneless and cut into thin strips or 4 ounces chicken, stir-fry strips
3 tablespoons lemon juice, divided
1 1/2 tablespoons soy sauce, divided
1 teaspoon honey
6 ounces mixed salad greens
1 red onion, thinly sliced
1 large carrot, peeled and grated
1 bunch radish, trimmed, washed, and sliced
1 tablespoon sesame seeds
3 tablespoons low-fat plain yogurt

Steps:

  • Thread the chicken onto 8 presoaked wooden skewers.
  • Mix 2 tbs of lemon juice, 1 tbs of soy sauce, and the honey together in a small bowl.
  • Brush the mixture over the chicken and let marinate for at least 15 minutes.
  • Preheat the broiler to high and line the broiler rack with foil.
  • Arrange the salad greens on a large serving platter and top with the sliced onion and grated carrot.
  • Scatter the radishes over the greens.
  • Cook the chicken kabobs under the broiler for 8 to 10 minutes or until the chicken is thoroughly cooked.
  • Remove from the broiler and sprinkle with the sesame seeds.
  • Mix the yogurt, the remaining lemon juice, and soy sauce in a small bowl and drizzle over the salad.
