Over time I had developed a vague impression that griddle cakes (as opposed to pancakes) was made with cornmeal. I don't know if that is an accurate definition or not, but these are the griddle cakes that I came up with when I tried to make some. They are very good served with syrup or honey.

1/2 cup flour
1 teaspoon salt
3 teaspoons baking powder
1 tablespoon brown sugar
1 1/2 cups Jiffy corn muffin mix
2 eggs, beaten
1 1/2 cups skim milk
4 tablespoons butter, melted

Steps:

  • Lightly grease a heavy nonstick pan (i.e. spray with non-stick cooking spray), and start heating it at medium-high heat.
  • Sift together the dry ingredients in one bowl.
  • In a separate bowl, combine the eggs, milk, and butter.
  • Now combine the dry and wet ingredients together, stirring just enough to moisten the dry ingredients. Do not worry about getting rid of all of the lumps. (It is important to combine the dry and wet ingredients separately, and then combine them together to reduce the amount of time that the gluten in the flour has to toughen up.).
  • Pour the batter onto the hot pan in about 4" circles.
  • Flip the cakes when they get bubbly on the one side.
  • Continue cooking until the bottom browns. I usually peek by pulling up the edge with a spatula.
  • If the griddle cakes are cooking too fast, reduce the heat.
  • Never flip the griddle cakes more than once as this will make them heavy.
  • Serve the griddle cakes immediately even if this means that people have to eat at different times because there are not enough to go around when the first batch comes off of the griddles.

JOHNNY GRIDDLE CAKES

1 cup all-purpose flour
1/2 cup plus 1 tablespoon fine yellow or white cornmeal
2 tablespoons granulated sugar
1 tablespoon baking powder
2 teaspoons kosher salt
3/4 cup whole milk
2 teaspoons clover honey
2 large eggs, separated
2 tablespoons unsalted butter, melted and cooled, plus 1/4 cup more for frying

Steps:

  • Preheat the oven to 300 degrees F.
  • Whisk together the flour, cornmeal, sugar, baking powder and salt in a medium bowl. Whisk together the milk, honey and egg yolks together in another medium bowl until combined. Whisk the egg whites in another medium bowl until stiff peaks form.
  • Add the milk mixture to the dry ingredients and mix until just combined. Gently fold in the egg whites, and then 2 tablespoons of the melted butter. Mix until the batter is just smooth and let rest for 10 minutes.
  • Heat a large nonstick saute pan, cast-iron pan or griddle over medium-high heat. Brush the pan with some of the remaining melted butter. Spoon 2 heaping tablespoons of the batter onto the pan for each johnny griddle cake. Spread the batter slightly just to even out the top using a small offset spatula. Cook until lightly golden brown on each side, about 1 minute 30 seconds per side. Transfer to a baking sheet and keep warm in the oven until ready to serve.

Yield Makes 4 breakfast or brunch servings

1/2 cup all-purpose flour
1/2 cup quick-cooking oats
2 teaspoons sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup well-shaken buttermilk
1 large egg, lightly beaten
5 tablespoons unsalted butter, melted and cooled slightly
Accompaniments: marmalade or jam; clotted cream or crème fraîche

Steps:

  • Put oven rack in middle position and preheat oven to 200°F. Warm 4 plates in oven.
  • Heat a well-seasoned griddle or heavy skillet (preferably cast-iron) over moderately low heat until hot.
  • While griddle heats, whisk together flour, oats, sugar, baking powder, baking soda, and salt, then whisk in buttermilk, egg, and 3 tablespoons butter until combined.
  • Brush hot griddle with some of remaining butter, then spoon 3 tablespoons batter per oatcake onto hot griddle and cook until bubbles appear on surface, edges are set, and undersides are golden, 1 to 2 minutes. Flip cakes with a large spatula and cook until tops spring back when pressed gently, 1 to 2 minutes more. Transfer as cooked to plates in oven and loosely cover with foil. Brush griddle with butter between batches if necessary.
  • Brush griddle cakes with any remaining butter and serve immediately.

JUNIOR'S FAMOUS CHEESECAKE

When I orignally posted this back in Jan 2002, I said I had not tried this recipe because it looked like a lot of work. Flash forward to Easter 2007..I finally broke down and made this, and I was right, it is indeed, a lot of work. But it is so worth it. This tastes just like the Junior's cheesecake I ordered off of QVC. I made it again last night for a co-workers birthday and brought it in...everyone was swooning and begging for the recipe! Next time I make this I will make the sponge cake layer a day ahead and just cover it tightly with tin foil and leave it out overnight. You do want to make this a day ahead before you plan to serve it as it's best chilled for at least 8 hours. Enjoy!!!

1/2 cup sifted cake flour
1 teaspoon baking powder
1 pinch salt
3 large eggs, seperated
1/3 cup sugar
2 tablespoons sugar
1 teaspoon pure vanilla extract
3 drops lemon extract
3 tablespoons unsalted butter, melted
1/4 teaspoon cream of tartar
4 (8 ounce) packages cream cheese
1 2/3 cups sugar
1/4 cup cornstarch
1 tablespoon pure vanilla extract
2 large eggs
3/4 cup heavy whipping cream

Steps:

  • Sponge cake: Preheat the oven to 350 F and generously butter a 9-inch springform pan.
  • Sift the cake flour, baking powder, and salt together ina medium sized bowl and set aside.
  • Beat the egg yolks together in a large bowl with an electric mixer on high for 3 minutes.
  • Then, with the mixer still running, gradually add the 1/3 cup of sugar and continue beating until thick light-yellow ribbons form in the bowl, about 5 minutes more.
  • Beat in the vanilla and lemon extracts.
  • Sift the flour mixture over the batter and stir it in by hand until mo more white flecks appear.
  • Then blend in the butter.
  • In a clean bowl, using clean dry beaters, beat the egg whites and cream of tartar together on high until frothy.
  • Gradually add the remaining 2 tablespoons sugar and continue beating until stiff peaks form (the whites should stand up in stiff peaks, but not be dry).
  • Stir about 1/3 cup of the whites into the batter, then gently fold in the remaining whites (don't worry if a few white specks remain).
  • Gently spoon the batter into the pan.
  • Bake the cake just until the center of the cake springs back when lightly touched, only about 10 minutes (watch carefully!) Let the cake cool in the pan on a wire rack while you continue making the cheesecake filling.
  • Do not remove the cake from the pan.
  • Cream Cheese Filling---------------.
  • Place one 8-ounce package of the cream cheese, 1/3 cup of the sugar, and the cornstarch in a large bowl.
  • Beat with an electric mixer on low until creamy, about 3 minutes, then beat in the remaining 3 packages of the cream cheese.
  • Increase the mixer speed to high and beat in the remaining 1 1/3 cups of the sugar, then beat in the vanilla.
  • Blend in the eggs, one at a time, beating the batter well after each one.
  • Blend in heavy cream.
  • At this point mix the filling only until completely blended (just like they do at Junior's) Be careful not to overmix the batter.
  • Gently spoon the cheese filling on top of the baked sponge cake layer.
  • Place the springform pan in a large shallow pan containing hot water that comes about 1 inch up the side of the pan.
  • Bake the cheesecake until the center barely jiggles when you shake the pan, about 1 hour.
  • Cool the cake on a wire rack for 1 hour.
  • Then cover the cake with plastic wrap and refrigerate until it's completely cold, at least 4 hours or overnight.
  • Remove the sides of the springform pan.
  • Slide the cake off of the bottom of the pan onto a serving plate.
  • Or, if you wish, simply leave the cake on the removable bottom of the pan and place it on a serving plate.
  • Store any leftover cheesecake in the refrigerator.

JUNIOR'S MOST FAMOUS CHEESECAKE

7/8 cup sugar
3 tablespoons cornstarch
1 pound 14 ounces cream cheese
1 extra large egg
1/2 cup heavy cream
3/4 teaspoon vanilla

Steps:

  • Mix 7/8 cup sugar with 3 tablespoons corn starch. Add to 1 pound and 14 ounces cream cheese and mix. Add 1 extra large egg and blend. Then add 1/2 cup heavy cream a little at a time and mix. Then add 3/4 teaspoons vanilla and mix.
  • Add ingredients to well greased 7-inch pan with sponge cake on bottom of pan. Bake at 450 degrees for approximately 40 to 45 minutes until top is golden brown. Cool for about 3 hours. To simplify removal from cake pan, allow to fully cool overnight if possible, then reheat in 200 degree oven for 1 or 2 minutes, turn cake upside down and the cake will just slide out.

This is a very old-fashioned version of cornmeal pancakes which rise overnight. It came to our family via my great grandmother and dates back to the mid 1870s. The cornmeal gives these pancakes a tiny hint of fried mush, a splendid treat that exceeds my patience to make.

1 cup white cornmeal
2 cups boiling water
2 cups all-purpose flour
2 cups milk
2 teaspoons yeast
1 tablespoon brown sugar
2 eggs
1 teaspoon salt
¼ teaspoon baking powder

Steps:

  • In a large bowl, stir together the cornmeal and boiling water. Let soak for about 15 minutes. While still warm but not hot, stir in the flour, sugar, milk and yeast. Cover, and let rise overnight in the refrigerator.
  • In the morning, mix in the eggs, baking powder and salt. If the batter seems too thin, add more cornmeal to thicken it up. If desired, set aside a cupful of batter for the next morning's batch of griddle cakes (see Cook's Note).
  • Heat a lightly oiled griddle over medium heat. Spoon pancakes onto the hot griddle, and cook until browned on each side. Serve at once with butter and syrup.

2 teaspoons baking powder

1 cup milk

  • In a large mixing bowl, combine flour, graham cracker crumbs, brown sugar, baking powder, salt and pecans (if desired). In a separate bowl, stir together milk, butter and egg. Add to the flour mixture and stir well.

  • Melt 1 tablespoon butter in heavy large skillet over medium-high heat. Drop batter by scant 1/4 cupfuls into skillet. Cook pancakes until bottoms are golden brown and bubbles form on top, about 2 minutes. Turn and cook until bottoms are golden brown, about 1 minute. Transfer to platter. Tent griddle cakes with foil to keep warm. Repeat with remaining batter, adding more butter to skillet as necessary.
  • Serve pancakes hot with raspberry jam and maple syrup.
