This is so good! I felt like I had ordered takeout! The flavors were all spot-on with the slightly crunchy vegetables and the sauce was light, but just enough to coat the noodles, veggies, and shrimp.

8 ounces chow mein noodles
¼ cup chicken stock
2 tablespoons dry sherry
2 tablespoons oyster sauce
1 ½ tablespoons soy sauce
2 teaspoons toasted sesame oil
1 teaspoon light brown sugar
¼ teaspoon ground black pepper
2 tablespoons canola oil
½ cup matchstick carrots
½ cup thinly sliced onion
½ stalk celery, diagonally sliced
1 ½ tablespoons finely chopped fresh ginger
1 teaspoon finely chopped garlic
¾ pound uncooked medium shrimp, peeled and deveined
1 cup bean sprouts
4 stalks green onions, thinly sliced on the diagonal
2 cups fresh baby spinach

Steps:

  • Fill a large pot with lightly salted water and bring to a rapid boil. Cook noodles at a boil until tender yet firm to the bite, 3 to 5 minutes. Drain, rinse, and set aside.
  • Whisk together chicken stock, sherry, oyster sauce, soy sauce, sesame oil, brown sugar, and pepper in a small bowl.
  • Heat a large 12-inch cast iron skillet or wok over medium-high heat until hot. Add canola oil and swirl to coat the bottom of the pan; heat until it just begins to smoke. Add carrots, onion, celery, ginger, and garlic to hot oil and cook, stirring constantly, just until vegetables begin to soften, about 1 minute. Add shrimp and cook, stirring constantly, until almost done, about 2 minutes. Push vegetables and shrimp to one side of the pan and add chicken stock mixture; stir constantly until sauce is hot.
  • Add noodles and stir well to mix with sauce and vegetables (using a metal spatula and chopping noodles slightly helps to mix this together.) Cook, stirring constantly, until the noodles have absorbed the sauce, about 2 minutes. Stir in bean sprouts and green onions and cook, stirring constantly, until just cooked, 1 to 2 minutes. Remove from heat and stir in baby spinach until just wilted. Serve immediately.

1 large pack of "Flour Rice Stick" Noodles
3 chicken leg quarters
2 4 oz bags of "salad shrimp"
1 red bell pepper
1 green bell pepper
1 14 oz can of baby corn
2 large carrots
1/2 head of Savoy Cabbage
2 large onion
2 celery stalks
1 bay leaf
1 tsp oregano
2 TBL soy sauce
3 TBL vegetable oil
1 TBL cornstarch
salt & pepper

Steps:

  • Julienne(cut into matchstick pieces) all the vegetables. In a 14 inch pan, heat 3 TBL of oil and sautee all the vegetables and cornstarch except for the cabbage until tender (not wilted). While the veggies are sauteing, take the dried noodles and boil them in the poaching liquid for about 3-4 minutes. This will give the noodles great flavor. Once the noodles have softened, take them out of the poaching liquid (DO NOT DISCARD) and set aside. When the vegetables are done, add 2 cups of the poaching liquid until the sauce thickens a bit and add soy sauce. Add the 2 bags of shrimp, pulled chicken and noodles, and toss gently. Add the cabbabe and heat through and until the cabbage has slightly wilted. Plate and serve!

9 tablespoons oil
4 ounces shrimp, shelled and deveined
1 1/4 teaspoons salt
1/2 teaspoon cornstarch
1/2 lb lean pork, shredded
1 tablespoon sherry wine
2 tablespoons light soy sauce, light
1/2 teaspoon sugar
1/2 lb bok choy
1/4 lb mushroom, sliced
2 tablespoons chicken stock
1 teaspoon cornstarch, dissolved in 2 teaspoons water

Steps:

  • Drop noodles into boiling water and boil for five minutes.
  • Rinse under cold water; drain.
  • Mix with 1 tablespoon oil.
  • Set aside.
  • Mix shrimp with 1/4 teaspoon salt and cornstarch.
  • Heat 1 tablespoon oil to 400ºF in wok and stir fry shrimp until they turn pink, about 1 minute; remove.
  • Heat 2 tablespoons oil to 400ºF.
  • Stir fry pork until color changes.
  • Add sherry, 1 tablespoon soy sauce and sugar.
  • Stir fry 1 minute; remove.
  • Heat 2 tablespoons oil to 400ºF.
  • Stir fry bok choy 1 minute.
  • Add pork, mushrooms, 1 teaspoon salt, and 1 tablespoon soy sauce.
  • Add stock; cook 3 minutes.
  • Thicken with dissolved cornstarch.
  • Pour in shrimp and bring to boil.
  • Remove.
  • Heat 3 tablespoons oil to 400ºF.
  • Turn down to 350ºF and stir fry noodles until outside is golden brown but inside is soft. (They will form a cake).
  • Cook 5 minutes on each side.
  • Remove to platter.
  • Place cooked mixture on top of noodles.

2 pounds uncooked medium shrimp, peeled and deveined

1 cup diced celery

1 (4 ounce) can sliced mushrooms, drained
⅓ cup cold water
2 tablespoons cornstarch

Steps:

  • Bring a large pot of water to a boil. Add chow mein noodles and cook over medium heat until cooked through but still firm to the bite, 4 to 5 minutes. Drain and rinse with cold water.

1 tablespoon ginger, minced
2 tablespoons garlic, minced
¼ cup soy sauce
½ cup honey
1 lb jumbo shrimp, peeled and deveined
3 tablespoons cooking oil, divided
1 package chow mein noodle, hong kong style pan fried noodles, par cooked according to package instructions
1 cup white onion, sliced
1 cup broccoli floret
½ cup carrot, julienned
½ cup cabbage
salt, to taste
pepper, to taste
scallion, for garnish

Steps:

  • In a 2-cup (480ml) liquid measuring cup, combine the ginger, garlic, soy sauce, and honey.
  • Pour about ⅓ cup (80 ml) of sauce over the shrimp in a medium bowl and toss to coat. Reserve the rest of the sauce. Cover the shrimp with plastic wrap and marinate in the refrigerator for 30 minutes to 1 hour.
  • In a wok or deep skillet over medium-high heat, heat 2 tablespoons of cooking oil, then add the par-cooked noodles. Cook for 1-2 minutes, allowing the noodles to crisp, then flip and cook for another 1-2 minutes. Transfer to a plate and set aside.
  • In the same wok, heat 1 tablespoon of cooking oil, then add the onion, broccoli, carrots, and ⅓ cup (80 ml) of the sauce. Cook for 2-3 minutes, or until the onions are translucent.
  • Add the cabbage and season with salt and pepper to taste. Cook for 2 minutes more, or until the vegetables have softened.
  • Push the vegetables to one side of the wok and add the remaining cooking oil to the empty side, followed by the marinated shrimp. Cook for 1 minute without disturbing, then flip the shrimp over and cook for another 2 minutes, until the shrimp are pink and their tails have curled in.
  • Mix the cooked shrimp with the vegetables and add the crispy chow mein noodles and the remaining sauce. Toss gently and cook for another 2-3 minutes, or until everything is well combined. Garnish with sliced scallions.

Found this on another web site and just tried it. I actually used 5 packets of chicken ramen noodles instead of the lo mein noodles and chicken broth. I prepared them as directed, then used a slotted pasta spoon to remove the noodles to a cold bowl, leaving the broth behind. I then put 2 ladles of the "ramen" broth in the pan instead of the broth. The sambal oelek is hot, so cut back on it if you want less heat. I did not add salt because the ramen broth already contains some.

1/4 cup dry sherry or 1/4 cup marsala wine
1/2 cup oyster sauce
1 tablespoon finely chopped fresh ginger
1 bunch scallion, white and green parts, sliced 1/8 inch thick
1 teaspoon fresh ground black pepper, plus additional
1 tablespoon sambal oelek
1 lb chicken meat, preferably from legs and thighs, cut into 1/2-inch pieces
1 lb egg noodles, fresh or 1 lb dried lo mein noodles
5 tablespoons canola oil
6 garlic cloves, thinly sliced
2 cups quartered fresh shiitake mushroom caps
3 heads bok choy, cored and cut into 1/2-inch slices
1 cup snow pea pods
1 cup chicken stock or 1 cup low-sodium canned broth
salt (optional)

Steps:

  • In a large bowl, combine the cornstarch and wine and mix. Stir in the oyster sauce, ginger, scallions, the 1 teaspoon pepper, and the sambal oelek. Add the chicken, stir to coat, and allow to marinate covered and refrigerated for at least 2 hours and preferably overnight.
  • Bring a large pot of salted water to a boil. Fill a bowl with water and add ice. Add the lo mein to the boiling water and cook until al dente, about 5 minutes for fresh, 10 to 15 minutes for dried. Drain and transfer the noodles to the ice water. When cold, drain and toss with 1 tablespoon of the oil. Set aside.
  • Heat a wok over high heat. Add 2 tablespoons of the oil and swirl to coat. When the oil shimmers, add the garlic and shiitakes and stir-fry until the mushrooms are soft, about 4 minutes. Remove the mushrooms and set aside. Add the remaining 2 tablespoons of the oil and, when hot, add the chicken (shake off excess marinade) and stir-fry until almost cooked through, 6 to 8 minutes. Add the bok choy and pea pods and stir-fry until crisp-tender, about 3 minutes.
  • Add the stock and season with the salt and pepper to taste. Add the reserved shiitakes and the noodles. Stir to coat, and heat through, about 5 minutes.
  • Correct the seasonings and serve.
