SIZZLER'S MALIBU CHICKEN

I have looked and looked for a recipe that is as close to Sizzler's as I can get. This one does it! It is not mine, however, it belongs to Chef-In-Training at http://www.chef-in-training.com/2014/05/malibu-chicken/

4 chicken breasts
5 egg yolks
3 tablespoons garlic, Minced
1 cup panko breadcrumbs
1 cup parmesan cheese
1 tablespoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
8 ham slices, thinly sliced
4 slices swiss cheese
2 tablespoons Grey Poupon mustard
3 tablespoons mayonnaise
1 teaspoon yellow mustard
1 teaspoon honey

Steps:

  • Combine Egg Yolk and garlic and pour into plastic bag. Place chicken inside of bag, seal shut making sure no extra air is inside, and make sure the chicken gets coated with egg yoke/garlic mixture. Place in fridge and marinate chicken for 4 hours.
  • In a medium bowl, mix Panko, Parmesan cheese, garlic powder, salt and pepper and dump evenly in the bottom of a 9 X 13 baking dish.
  • Remove chicken from bag, place chicken in baking dish. Coat chicken with mixture and bake at 350 degrees F and depending on the size of your chicken breasts, cook for 40 minutes to one hour or until chicken is cooked through. Monitor it starting at 40 minutes.
  • Place one slice of ham and one slice of swiss cheese over the top of each piece of chicken and bake additional two minutes until cheese is melted.
  • Malibu Dipping Sauce - Combine Grey Poupon mustard, Mayo, yellow mustard and honey in small bowl. Stir to make sure all ingredients are evenly combined. Use to dip chicken inches Enjoy!

zzzzzzzzzzzzzssssssssssssss...................... Hear the sizzle folks it is sizzler time!!! Don't you just love it when it is served in a restaurant and everybody turns to look as to who is being served!!!!! (I have been educated by a friend in the states that the concept of a sizzler does not exist in the US ) Fish or beef can be used instead of the chicken with equally good results. This recipe comes courtesy a friend.

500 g chicken breasts (4 halfs)
1 small red onion, chopped
3 teaspoons all-purpose flour
1 tablespoon chopped garlic
100 g mushrooms, sliced
1/2 teaspoon pepper
1 tablespoon chili sauce
1 teaspoon salt, to taste
1/2 cup red wine (optional)
1/2 cup water
1 teaspoon oil
4 tomatoes
1/4 medium cabbage, cut into chunks
2 cups cauliflower florets or 2 cups broccoli florets
22 French beans
any vegetables, you like can be added to this i add carrots and french fries too to the platter.
1/4 cup Worcestershire sauce
2 large onions, sliced

Steps:

  • In a non stick pan, (preferably) heat the oil Saute the garlic till light brown and then add the onion and stir fry till light brown.
  • Stir the mushrooms and the flour into the pan and brown.
  • Throw in the salt, pepper chilli sauce, chicken, wine& water.
  • Mix and simmer covered for 20 mins till the chicken is tender.
  • Put on med.
  • high and cook till the sauce thickens.
  • In the meanwhile cut the tomatoes in half and grill in a skiller.
  • Steam cabbage, cauliflower/ broccoli and the beans and carrots In another nonstick pan steep the sliced onion in the worcestershire sauce and simmer covered till onion becomes tender.
  • To Serve: Either serve on a hot platter (sizzler plate- I use cast iron skillets, I have 3) or on a warm plate.
  • If using sizzler plates make them hot.
  • Place lettuce or cabbage leaves at the bottom.
  • Place the meat slices and the vegetables on the platter and pour the sauce on top.
  • Sprinkle little cold water on the hot plate to make it sizzle just before serving.
  • Note: Fish sizzler can also be made in the same way.

A zesty chicken dish for the BBQ or the griddle pan

4 boneless, skinless chicken breasts (about 500g/1lb 2oz total weght)
1 tsp hot chilli paste or harissa
3 tbsp olive oil
1 tbsp lemon juice
1-2 lettuces , depending on size, such as cos, batavia or Webb's
½ cucumber
½ bunch radishes
25g pine nut , toasted
handful of mint leaves
2 ripe vine tomatoes
½-1 tsp hot chilli paste or harissa
1 tbsp lemon juice
4 tbsp olive oil

Steps:

  • Lay the chicken in a shallow dish. Whisk up the chilli paste or harissa, oil, lemon juice and a little salt in a small bowl. Pour over the chicken and rub in to coat each piece.
  • To make the dressing, halve, seed and dice the tomatoes. Mix in a bowl with the chilli paste, lemon juice, oil and a little salt. Set aside.
  • Heat a griddle pan or start the barbecue, then cook the chicken for 6-8 minutes on each side until cooked through. Remove and wrap in foil to keep it warm.
  • Separate the lettuces and spread the leaves over a serving platter. Slice the cucumber and radishes and scatter over the lettuce.
  • Cut the chicken into strips and toss with half the dressing in a large bowl. Tip on to the salad and scatter with the pine nuts and mint leaves. Drizzle over the remaining dressing and serve warm.

  • To begin, wash and soak the rice in water for about 20 minutes. Meanwhile, cut the chicken breast into two pieces and pound it lightly until a little flatter and marinate with lemon juice, black pepper, red chilli powder, salt for at least 30 minutes.
  • While the chicken gets marinated, cook the rice. Add 1 1/2 cups of water for 1/2 cup rice and let them boil for 10 minutes. On the other hand, take a pan and add some oil into it. Saute the garlic and then add thickly diced bell peppers and capsicum. Charr them on a high flame and add the salt and pepper.
  • Now take the marinated chicken and add it to hot oil in a pan. Let it cook thoroughly on all sides for about 5 -10 minutes on medium-low flame. Meanwhile, add 1 tbsp of oil in another pan and cook the garlic in it and add the onions to it. Assemble everything on a hot platter and serve!
