PAN-ROASTED CHICKEN WITH MUSHROOMS AND ROSEMARY

Pan-Roasted Chicken with Mushrooms and Rosemary image

Provided by Tyler Florence

Categories     main-dish

Time 40m

Yield 1 serving

Number Of Ingredients 8

1 (6-ounce) boneless chicken breast with wing attached, with skin
Kosher salt and freshly ground black pepper
2 tablespoons extra-virgin olive oil
5 fresh white mushrooms, halved
2 shallots, halved
2 sprigs fresh rosemary
1/4 cup water
1/2 lemon, juiced

Steps:

  • Preheat the oven to 350 degrees F.
  • Season the chicken on both sides with a generous amount of salt and pepper. Place a cast-iron or regular ovenproof skillet on the stove over medium heat. Drizzle the pan with the oil and lay the chicken in the hot fat, skin-side down. Cook for about 5 minutes until the skin begins to set and crisp. Throw in the mushrooms, shallots, and rosemary. Stick the whole thing in the hot oven and roast for 15 minutes until the chicken is cooked, and the mushrooms and shallots are soft and roasted.
  • The last thing to make is a quick sauce using the flavors left in the bottom of the skillet. Take all the stuff out of the pan and arrange on a dinner plate to keep warm while preparing the pan sauce. Pour out all but 1 tablespoon of the rendered chicken fat and return the skillet to the stovetop. Stir in the water and lemon juice and cook over medium heat, scraping up the flavors with a wooden spoon. Cook the liquid down to a syrup, about 5 minutes. Drizzle the pan sauce over the dish, season with salt and pepper.

Get the flavor of chicken from the Olive Garden in a make at home copy cat recipe.

Provided by Carol

Categories     chicken

Time 50m

Number Of Ingredients 13

1 large head of garlic, with the top cut off
1 tsp Olive oil. for drizzling
2 tbsp extra-virgin olive oil
1 cup mushrooms, sliced
1 1/2 pounds skinless boneless chicken breasts
1/4 tsp Kosher Salt
dash freshly ground cracked black pepper
1 tablespoon unsalted butter
2 tbsp unsalted butter, chilled
1/4 cup dry white wine
1/2 cup chicken stock
2 cups of baby spinach leaves
2 tbsp diced fresh rosemary plus sprigs for garnish

Steps:

  • Preheat the oven to 350°. Place the head of garlic on a layer of foil, with the cut side up. Drizzle with a bit of olive oil, then wrap in the foil. Roast the garlic until very soft, about 45 minutes. Let it cool, then peel, and separate the cloves.
  • While the garlic is roasting, heat the olive oil in a non stick frying pan and cook the mushrooms until they are starting to get soft, about 5 minutes.
  • Season the chicken with salt and pepper and add it to the skillet. Add the diced rosemary and cook over medium high heat until the chicken is lightly browned and well cooked, about 4 minutes on each side. Remove the chicken and keep warm but leave the mushrooms in the pan.
  • Stir in the white wine and chicken stock, and cook gently until the liquid has reduced and the sauce thickens a little - about 5-8 minutes.
  • Add the whole cooked garlic cloves and cook gently about 2 minutes more. Return the chicken to the pan and cook gently for a minute or so.
  • In a separate skillet, heat 1 tablespoon of butter over medium heat and add the baby spinach and allow it to just lightly wilt.
  • Place the wilted spinach on a serving dish and top with the chicken breasts. Spoon over the mushroom and garlic sauce and garnish with a sprig of fresh rosemary. Serve with creamy garlic mashed potatoes.

GARLIC AND HERB ROASTED CHICKEN WITH MUSHROOM GRAVY

Garlic and Herb Roasted Chicken With Mushroom Gravy image

I grow fresh herbs in my garden, so I'm always looking for ways to use them. I don't like a lot of onion in my gravy, so I simply slice an onion for flavoring the broth but remove the slices before making the gravy. Once I substituted peeled whole shallets (because I had a few laying around) for the onions, again removing them before making the gravy. Garlic lovers be sure to see notes within the recipe! This meal is best served with mashed potatoes and steamed vegetables.

Categories     Chicken

Time 3h25m

Yield 6 serving(s)

Number Of Ingredients 13

4 ounces fresh mushrooms, sliced
1/2 cup onion, finely chopped
1 (3 -5 lb) roasting chickens
1/2 teaspoon seasoning salt
1 tablespoon butter, melted
1 tablespoon fresh parsley, chopped
2 teaspoons fresh rosemary, chopped
1 teaspoon fresh thyme, chopped
1 garlic clove, crushed
water or chicken broth
1/4 cup water
2 tablespoons all-purpose flour
2 heads garlic (optional)

Steps:

  • Heat oven to 325°F In ungreased 12x8" (2 quart) baking dish, combine mushrooms and onion; spread evenly in the bottom of the baking dish.
  • Remove and discard giblets and neck (or save for another use) from the chicken body cavity. Rinse chicken inside and out with cold water; drain. Pat dry with paper towels. Rub inside of the chicken cavity with seasoning salt.
  • Close neck cavity by bringing loose skin over the opening and holding in place with metal skewer. Twist wing tips under back.
  • In small bowl, combine butter, parsley, thyme, rosemary, and garlic; mix well. Spread over chicken and inside the cavity.
  • I usually place additional fresh rosemary and thyme sprigs in the cavity before closing. With string, tie legs and tail together. Place the chicken in the baking dish over the mushrooms and onion.
  • Bake at 325F for 2 to 2 1/2 hours. Chicken is done when drumstick moves easily up and down and twists in socket, and when chicken is fork-tender and juices run clear. Don't pierce the skin too often or you'll lose some moisture in the breasts.
  • Remove chicken from baking dish; place on serving dish or carving board. Cover and let stand 10 minutes before slicing.
  • Remove mushrooms (and onion, if desired) into saucepan. Pour pan drippings into 2 cup measuring cup. Remove as much fat as possible from the top. Add enough chicken broth to equal 1 1/2 cups of liquid.
  • Mix 1/4 cup water with flour and blend well.
  • Over medium heat, add flour mixture to mushrooms, stirring to combine and cook for 2 minutes. Add some of the reserved liquid if necessary to keep from getting too pasty.
  • Add remaining reserved liquid to the mushrooms, whisk gently and bring to a boil.
  • Reduce heat slightly and cook gray until thickened. Season with salt and pepper as needed.
  • Notes for garlic lovers: I cut the tops off two garlic heads (use more or less to your individual tastes and/or the amount of potatoes you're making) and place inside the chicken cavity before closing. Then, when making my mashed potatoes, I squeeze the garlic pulp into potatoes with some butter and chicken broth.

ROASTED GARLIC ROSEMARY CHICKEN

Roasted Garlic Rosemary Chicken image

Make and share this Roasted Garlic Rosemary Chicken recipe from Food.com.

Provided by Cocinero

Categories     Whole Chicken

Time 1h55m

Yield 4-5 serving(s)

Number Of Ingredients 8

1 large chicken (open range if you can get it)
6 -8 garlic heads
1/4 cup olive oil
1 onion
1 lemon
1 tablespoon rosemary
1/2 teaspoon kosher salt
1 teaspoon black pepper (fresh ground)

Steps:

  • Cut the top 1/4 off of the garlic heads so that the tops of the cloves are exposed. Place them on a baking sheet and drizzle them well with olive oil.
  • Preheat oven to 350°, cook garlic for about 40 minutes or until you see that the garlic cloves have browned, and the head itself is soft. Remove and let cool for handling.
  • Wash chicken and place in baking pan breast up.
  • With the handle of a wooden spoon, or anything that will slide without tearing the skin, separate the skin from the meat starting at the lower breast, and taking your time until you have loosened all the skin that you can reach.
  • Make a small cut in the skin on top of the drumsticks, and insert the spoon into the cut, loosening all the skin on the legs and thighs.
  • Gently squeeze all the garlic heads into a blender, the cloves will be soft and will slide out of the shell easily.
  • Add the juice from half the lemon, the rosemary, and black pepper.
  • Turn the blender on low and after mixture is working, slowly drizzle the olive oil into the mixture. Stop when mixture is mixed.
  • Using either your fingers, a pastry bag, or however you can do it, (I just use my fingers and a spoon) insert about half of the mixture under the chicken skin and then gently press down on it to spread it around evenly under the skin.
  • Place onion and lemon inside the chicken, tie legs together, wipe the outside lightly with olive oil and sprinkle with Emeril's essence to taste.
  • Bake in preheated oven at 350° for about 50 minutes or until almost done and the outside is browning nicely.
  • Remove chicken and spread the remaining mixture over the chicken to cover.
  • Return to oven and cook until the surface is browned and the chicken is tender.
