PERUVIAN CHICKEN & GREEN SAUCE



Peruvian Chicken & Green Sauce image

Peruvian chicken is slightly citrusy from the lemon, tangy from the vinegar, earthy from the oregano, and spicy--from the cumin, paprika, and garlic. The green sauce is similarly multidimensional green sauce made of jalapeños, cilantro, garlic, lime, and vinegar are flavors that were meant to go with roast chicken.

3 garlic cloves ((minced))
1 tablespoon ground cumin
1 tablespoon paprika
2 teaspoons kosher salt
½ teaspoon black pepper
½ teaspoon dried oregano
1 tablespoon olive oil
1 tablespoon white vinegar
1 lemon
4 pound whole chicken
1 medium onion ((sliced))
2 whole jalapeños ((roughly chopped))
1 cup fresh cilantro leaves
2 cloves garlic
1/2 cup mayonnaise
Juice of 1 lime
1 teaspoon distilled white vinegar
2 tablespoons extra virgin olive oil
salt and freshly ground black pepper

Steps:

  • In a bowl, combine the garlic, cumin, paprika, oregano, salt, pepper, olive oil, vinegar, and both the zest and juice of the lemon.
  • Rinse the chicken, remove any giblets, and pat the bird dry with paper towels. Place the chicken over the sliced onions in an enameled baking dish, and use your fingers to gently spread the spice mixture under the skin, on the outside of the chicken, and inside the cavity, until it is thoroughly seasoned. Tie the legs together with kitchen string. Cover and refrigerate for 4-24 hours.
  • When you're ready to roast the chicken, remove it from the refrigerator, and allow it to come back up to close to room temperature (it shouldn't be ice cold from the fridge). Meanwhile, preheat your oven to 425 degrees F.
  • Roast the bird in the oven for 15 minutes and then baste it with any juices in the roasting pan. Reduce the heat to 375ºF (190°C) and continue to roast, for 45 to 60 more minutes, or until the juices of the chicken run clear when the thigh is pierced with a fork and an instant-read thermometer inserted into the thickest part of the thigh reads 165ºF (74°C). You can baste it a couple times as it continues to roast. Allow the chicken to rest for a few minutes after you remove it from the oven.
  • While the chicken is roasting, prepare the sauce. Combine jalapeños, cilantro, garlic, mayonnaise, lime juice, and vinegar in the jar of a blender. Blend on high speed, scraping down as necessary, until smooth. With the blender running, slowly drizzle in the olive oil. Season to taste with salt and pepper. Transfer to a sealed container and refrigerate until ready to use.

Tender and juicy Peruvian-style roast chicken with a spicy, luscious green sauce.

3 tablespoons extra virgin olive oil
¼ cup lime juice, from 2 limes
4 large garlic cloves, roughly chopped
1 tablespoon kosher salt
2 teaspoons paprika
1 teaspoon black pepper
1 tablespoon cumin
1 teaspoon dried oregano
2 teaspoons sugar
4 pound whole chicken
3 jalapeño chili peppers, seeded if desired (I use about half the seeds for a medium-hot sauce), and roughly chopped (see note)
1 cup packed fresh cilantro leaves
2 cloves garlic, roughly chopped
½ cup mayonnaise, best quality such as Hellmann's
¼ cup sour cream
1 tablespoon fresh lime juice, from one lime
½ teaspoon salt
⅛ teaspoon freshly ground black pepper
2 tablespoons extra virgin olive oil

Steps:

  • Combine all of the ingredients except the chicken in a blender or mini food processor, and blend until smooth. Remove the giblets from the inside of the chicken and pat the outside of the chicken dry with paper towels; place in a bowl, breast side up with the legs facing you. Using the handle of a wooden spoon or your fingers, loosen the skin from the flesh over the breasts and legs, being careful not to tear the skin or push all the way through (you want the marinade to stay inside the bird). Spoon about ⅔ of the marinade evenly underneath the skin, and spread the remaining ⅓ evenly over the skin. Marinate the chicken in the refrigerator for at least 6 hours or overnight.
  • Adjust the oven rack to the lower-middle position, and preheat the oven to 425 degrees. Line a roasting pan with aluminum foil for easy clean-up. Spray a rack (preferably a v-shape) with non-stick cooking spray and place the chicken on top. Tie the legs together with kitchen string. Roast for 20 minutes, until the skin is golden. Turn the heat down to 375 degrees, and continue to roast for about an hour and ten minutes more, or until the juices run clear when you cut between the leg and thigh. (Keep an eye on it -- if it's browning too quickly, cover it loosely with foil.) Tent the chicken with foil and let rest for about 20 minutes. Tilt the chicken over the roasting pan to release the juices, then transfer to a cutting board. Carve the chicken and serve with green sauce.
  • Combine all of the ingredients except the olive oil in a blender or food processor and blend into a smooth sauce. With the motor running, open lid and slowly drizzle in olive oil. It will seem very runny at this point but, don't worry, it will thicken up as it sits. Transfer the sauce to a bowl, cover and refrigerate until ready to serve.
  • Note: Be sure to wash your hands well after handling hot peppers, and do not touch your eyes while working with them.

4 boneless skinless chicken breast halves

3 tablespoons fresh parsley, chopped
2 tablespoons chives or 2 tablespoons scallions, minced
1/2 teaspoon dried tarragon
1/8 teaspoon red pepper flakes
1 cup frozen peas

Steps:

  • On a plate,combine the flour,1/4 teaspoon salt and pepper and dredge the chicken in it shaking off excess.
  • In a large nonstick skillet,heat oil over medium heat,adding chicken.
  • Cook until golden brown,turning once (about 5 minutes).
  • Add broth,garlic,lemon juice,parsley,chives,tarragon,red pepper flakes and remaining 1/4 teaspoon salt.
  • Bring to a boil,reduce to a simmer and cook,partially covered,until chicken is cooked through (about 10 minutes).
  • With a slotted spoon,transfer chicken onto 4 serving plates.
  • Bring sauce to a boil over medium-high heat,add the peas and cook,uncovered until the sauce is reduced to 1/2 cup (about 3 minutes).
  • Spoon the peas and sauce over the chicken and serve.

ROAST CHICKEN WITH TAQUERIA-STYLE GREEN SAUCE

One 5- to 6-pound whole roasting chicken
Kosher salt
1/3 pound tomatillos, husks removed
1 jalapeño, stemmed and halved lengthwise
1 tablespoon honey
Juice of 1 lime
1 bunch fresh cilantro, including stems
Freshly ground black pepper
4 tablespoons unsalted butter, chilled
1 teaspoon sherry vinegar
Thinly sliced scallions, for serving
Thinly sliced chives, for serving

Steps:

  • Put the chicken on a sheet pan fitted with a rack. Season liberally with salt. Refrigerate, uncovered, overnight.
  • When ready to cook, preheat the oven to 425 degrees F.
  • Season the chicken again with salt. Roast the chicken until the thickest part of the thigh reaches 160 degrees F, 50 minutes to 1 hour.
  • While the chicken is roasting, preheat a stovetop grill to high. Place the tomatillos and jalapeño on the grill. Cook until blistered and charred in spots, 8 to 10 minutes, then flip and cook for another 8 to 10 minutes. Transfer to a blender.
  • Add the honey, lime juice, cilantro and salt and pepper to taste to the blender. Process until the desired consistency, but don't let it get too smooth. Set aside.
  • Let the chicken rest for 5 to 10 minutes. Pour the pan juices into a small saucepan and bring to a simmer. Working with 1 or 2 tablespoons at a time, whisk the butter into the juices until incorporated and smooth. Whisk in the vinegar.
  • Carve the chicken and arrange on a platter. (Reserve the carcass for stock.) Pour the pan juices around the chicken. Drizzle the green sauce over the chicken and sprinkle with the scallions and chives.

1 ½ pounds boneless chicken thighs
4 cups water
1 onion, quartered

1 pound fresh tomatillos, husks removed, halved
½ jalapeno pepper, seeded and minced

Steps:

  • Remove stems from cilantro and tie together; save leaves for sauce.
  • Place cilantro stems, chicken thighs, water, onion, and garlic into a slow cooker. Season with 1 tablespoon cumin, 1 tablespoon chili powder, 1 tablespoon pepper, and 1 teaspoon salt.
  • Cook on Low until chicken is no longer pink in the centers and juices run clear, 8 to 10 hours. Transfer chicken to a plate and shred using 2 forks. Set aside. Reserve 1 to 1 1/2 cups cooking liquid. Let onion and garlic cool slightly, about 5 minutes. Dice and set aside.
  • Preheat the oven to 450 degrees F (230 degrees C). Spray a baking sheet with cooking spray.
  • Place tomatillos cut-side down and jalapeno onto the prepared baking sheet. Drizzle with canola oil.
  • Roast in the preheated oven for 25 minutes.
  • Remove from the oven and wrap jalapeno pepper in aluminum foil to let 'sweat' for about 10 minutes. Remove skin from jalapeno.
  • Transfer tomatillos, jalapeno, reserved cilantro leaves, green chiles, vinegar, cumin, chili powder, honey, pepper, and salt to a food processor or blender. Mix sauce until well combined.
  • Pour tomatillo sauce into a large pot and add shredded chicken, diced onion and garlic, and beans. Add reserved cooking liquid. Let simmer over medium-low heat for 15 minutes. Serve.

2/3 cup low-salt chicken broth
1 cup bottled green salsa

  • Pour buttermilk into shallow dish. Combine cornmeal, chili powder, and salt in separate shallow dish. Place chicken in buttermilk and turn to coat. Place chicken in cornmeal mixture and turn to coat.
  • Heat 1 tablespoon oil in large nonstick skillet over medium heat. Add 2 chicken breasts; sauté until cooked through, about 3 minutes per side. Transfer chicken to plate; tent with foil. Repeat with remaining oil and chicken.

GREEN SAUCE CHICKEN (CROCK POT) OAMC

I came up with this when I have left over green enchilada sauce. DH really liked this. Great served with mashed potatoes or rice. This would be a great OAMC dish because you can put the sauce over the chicken before freezing and use it like a dump chicken dish.

Steps:

  • Brown chicken (or not).
  • Place in crock pot.
  • Add onions.
  • Pour enchilada sauce over chicken.
  • Cook for at least 4 hours.
  • You can make a gravy after chicken in cooked by adding cornstarch slurry to the sauce and cook on high for 15 to 20 minutes.
  • I did not brown chicken because I had bl/sl chicken thighs, but if I had skin on I would have browned first.

2 cups canned chicken broth
1 tablespoon vegetable oil
1 small onion, chopped

6 medium tomatillos, husked and quartered
2 , serrano chile kimmy
1/2 cup loosely packed cilantro sprigs
1 teaspoon dried oregano (Mexican variety preferred), crumbled
1/2 teaspoon ground cumin
1/2 teaspoon sugar
1/2 teaspoon salt, or to taste
1/8 teaspoon pepper, or to taste

Steps:

  • 1. In a medium saucepan, simmer the chicken with the chicken broth, over medium-low heat until the chicken is no longer pink inside, about 12 minutes. Remove the chicken to a bowl, cover and let stand while making the sauce. Reserve the broth. 2. In a skillet, heat the oil and cook the onion and garlic until softened, 3 to 4 minutes. Scrape the mixture into a blender or food processor. Add the tomatillos, serranos, cilantro, oregano, cumin, sugar, and 1/4 cup of the chicken broth. Purée until smooth. 3. Transfer the mixture to a saucepan and cook about 8 minutes, stirring, to reduce the liquid and blend the flavors. Add salt and pepper. Shred the cooled chicken and mix with the sauce. GREEN GODDESS ROASTED CHICKEN

Green Goddess dressing - a creamy, piquant blend of herbs, garlic and anchovies - is good to eat on salad. And it's wonderful as a dipping sauce for vegetables. But its best use may be as a marinade for roast chicken. The mild chicken absorbs all the zippy flavors of the dressing, to emerge from the oven fragrant and golden, flecked with green. To intensify the herbal flavor, some of the green goddess mixture is set aside to use as a sauce. You could even pour a little on a salad or some vegetables on the side, and enjoy the best of all the Green Goddess variations in one savory bite.

1 1/2 cups buttermilk or plain yogurt
1 cup packed basil leaves
1/4 cup packed chives

2 anchovy fillets (optional)

1 (4- to 5-pound) chicken, halved through the breast and back bones, patted dry with paper towels

8 thigh pieces (second joints) of chicken, skinned
1/4 cup olive oil
3 cloves garlic, peeled and cut in half
About 20 large sprigs fresh parsley, preferably Italian
5 whole scallions
Salt and pepper as desired

Steps:

  • Arrange the chicken pieces in a large, deep skillet and pour the olive oil over them. Turn the pieces to coat them evenly with oil. With the blender still running, pour in all the juices from the skillet and puree until a smooth green sauce is achieved. Taste the sauce and season as desired with salt. Remove the chicken pieces to a serving platter, pour the sauce over them to coat evenly and serve.
