INDIVIDUAL CHICKEN POTPIES



Individual Chicken Potpies image

Yield 4 six-inch pies or 8 muffin-size pies

Number Of Ingredients 14

4 tablespoons (1/2 stick) butter
1 medium onion, finely diced
2 medium carrots, finely diced
1 stalk celery, finely diced
1/4 cup all-purpose flour
3 cups low-sodium chicken broth, plus more as needed
1/4 cup dry white wine (or chicken broth)
2 cups shredded or chopped cooked chicken breast
1/4 teaspoon ground turmeric
1/2 teaspoon ground thyme
Kosher salt and freshly ground pepper
1/4 cup half-and-half
2 rounds refrigerated pie crust
1 large egg

Steps:

  • Melt the butter in a large skillet over medium-high heat, then add the onion, carrots and celery. Cook, stirring the vegetables around, until they start to soften, about 3 minutes. Sprinkle the flour over the veggies and stir to combine. Cook the flour-coated veggies for 1 minute, then pour in the chicken broth (and wine, if using!) and stir to combine. Let it heat up and start to bubble and thicken, about 3 minutes.
  • Stir in the chicken, then add the turmeric and thyme, then season with salt and pepper. Add the half-and-half, then stir the mixture and let it bubble up and thicken, about 3 minutes. If it seems overly thick, splash in a little more broth. Turn off the heat and let the filling cool to room temperature.
  • Meanwhile, roll out the pie crusts slightly and cut out 8 dough circles just a bit larger than the pie pans (if using a muffin tin, you'll need sixteen 3 3/4-inch circles). Press a dough circle into each pie pan (or 8 muffin cups), making sure the dough comes almost to the top of each pan. Fill the pies with the chicken mixture. Lay a second round of dough over the top of each pie. Press the dough so that the edges meet, then use a fork to seal the edges. Mix the egg with 2 teaspoons water and brush it all over the surface of the crust. (Discard any extra egg wash.) Cut small vents in the surface of the crusts.
  • If you're baking the pies right away, preheat the oven to 350 degrees F, place the pies on a baking sheet and bake 25 to 30 minutes, until the crust is deep golden brown and the filling is bubbly. Serve them straight out of the pie pans or turn them out of the pan and serve them upside down!

2 (9 inch) deep dish pie shells
3 chicken breasts (or canned chicken can be used)
1 cup canned carrot
1 cup frozen peas
1 cup frozen corn
1 (2 3/4 ounce) can French-fried onions
2 (10 3/4 ounce) cans cream of chicken soup (undiluted)
1/4 teaspoon salt

Steps:

  • Preheat oven to 375°F.
  • Prick bottom of 1 pie shell all over with fork.
  • Bake, uncovered, for 10 minutes.
  • Set second pie shell aside to thaw a bit.
  • Combine chicken, vegetables, onions, soup and salt.
  • Fill bottom of the partially baked pie shell with mixture.
  • You will have to mound it up--but don't worry it doesn't get real runny.
  • Place second pie shell on top.
  • Prick with fork 6 times.
  • Set on foil covered oven rack or pan to catch any spills.
  • Bake, for approx 1 hour.
  • Enjoy!

This is the easiest chicken pot pie you will ever make from scratch. It uses stuff you have on hand and is great for leftover chicken. It's pretty, too! Substitute whatever frozen vegetables you have on hand.

1 sheet frozen puff pastry, thawed
1 ⅓ cups frozen peas and carrots
⅔ cup frozen corn kernels
2 tablespoons butter
¼ cup all-purpose flour
2 cups milk
1 teaspoon crumbled dried thyme, or to taste
2 cups diced cooked chicken
salt and ground black pepper to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Use a pizza cutter to slice the puff pastry into 8 equal-sized strips. Weave the strips into a square lattice and place on a greased baking sheet.
  • Bake in preheated oven until it just starts to brown, 10 to 15 minutes. Remove from oven and set aside.
  • Place the frozen peas, carrots, and corn in a microwave-safe bowl and cook in the microwave until cooked but still firm, 5 to 10 minutes.
  • Melt the butter in a skillet over medium heat. Stir in the flour and cook for 1 minute. Pour in the milk and stir while cooking until the mixture is smooth. Add the thyme and continue to cook and stir until the mixture thickens. Stir in the cooked vegetables and the chicken. Season with salt and pepper. Cook until heated through, stirring frequently, 5 to 7 minutes.
  • Pour the chicken mixture into a 2-quart baking dish. Lay the pastry lattice on top. Bake in the preheated oven until the crust is golden brown, 10 to 15 minutes.

2 (11 ounce) cans condensed cream of mushroom soup (3 cups, low-fat variety)
2 (15 ounce) cans corn (4 cups, super sweet variety, well drained)
1 (15 ounce) can sweet peas (2 cups, well drained)
2 (13 ounce) cans chicken (2 cups, precooked & chunk cut)
1 1/2 teaspoons lemon pepper
1 teaspoon garlic powder
2 tablespoons bacon (bits)
2 1/2 cups Bisquick (E-Z Low Fat Bisquick Mix preferred)
2 cups 1% low-fat milk (already prepared, "Morning Moo's" low-fat dry milk variety)
1 tablespoon dried parsley

Steps:

  • Preheat oven at 450 degrees.
  • Mix soup, corn, peas & chicken in a 9x13 glass pan & then spread it evenly & flat.
  • Evenly sprinkle lemon pepper, garlic & bacon on top of mixture.
  • In a separate bowl whisk together well Bisquick & milk & then pour on top of mixture in pan.
  • Evenly sprinkle parsley on top of the Bisquick crust.
  • Bake uncovered for 21 minute in a convection or about 30 minute in a traditional oven.
  • Let set & cool for 12 minute.
  • Variations:.
  • Use fresh vegetables & seasonings in place of the canned, see fresh measurements in the (parenthesis).
  • Swap out 1 can of corn for carrots or try a different variety of cream soup.
  • Divide recipe in half & put into 2 separate 9" glass pie pans & cook then freeze one pie for later.
  • Also this pie holds well it's texture & taste later reheated in a microwave.
