This Middle Eastern Chickpea Salad called Balela Salad, is vegan and healthy! Made w/ finely chopped veggies, fresh herbs, lemon & olive oil. Serve it in a pita with tahini sauce or over greens.

3 cups cooked garbanzo beans- ( 2 cans, drained and rinsed)
1 red bell pepper-diced
1 yellow bell pepper-diced
1 cup chopped vine ripened tomatoes
1 cup chopped cucumber
5 scallions, sliced on the diagonal
½ cup to 1 cup fresh mint- chopped
½ cup to 1 cup Italian parsley - chopped
1 garlic clove finely minced
1 teaspoon salt and pepper, plus more to taste
½ cup olive oil
zest of one lemon
¼ cup lemon juice
1 teaspoon sumac ( optional)
¼-½ teaspoon cayenne or aleppo chili flakes
Optional sides -toasted pita bread, or tortilla wraps, baba ganoush, tahini sauce for drizzling, hummus, crumbled feta or a big bed a of greens.

Steps:

  • Place all ingredients in a big bowl.
  • Toss well and taste, adjusting salt, lemon, and spice level.
  • Serve with salad greens or pita and tahini sauce,

I like to mince the herbs and the garlic in my food processor, it makes the job quick and easy and everything gets finely and evenly chopped.

15 ounce can of chickpeas, drained and well rinsed
7 ounces canned black beans, drained and rinsed
1/2 cup finely chopped tomatoes
1/3 cup minced red onion
1/3 cup finely chopped bell peppers, assorted colors
1/3 cup finely chopped cucumber
1/4 cup finely chopped black olive
1/4 cup halved or sliced stuffed green olives
2 cloves garlic, very finely minced
1 packed cup parsley leaves, minced
1/2 packed cup mint leaves, minced
1/4 cup extra virgin olive oil
1/4 cup fresh squeezed lemon juice
1 tsp sumac, or more to taste
salt and fresh cracked pepper to taste

Steps:

  • Whisk together the dressing and taste to adjust any of the ingredients.
  • Add all the salad ingredients to a large bowl and toss lightly with the dressing.
  • Serve with labneh, either along side, or on top, and fresh pita bread, toasted or not.

2 cans (14 oz.) chickpeas (garbanzo beans), drained and rinsed
1 can (14 oz.) black beans, drained and rinsed
2 firm roma tomatoes, seeds removed and diced
1/2 red onion, diced
1/2 English cucumber, diced
3 cloves garlic, minced
2 tablespoons fresh mint, chopped
1/4 cup fresh parsley, chopped
1 teaspoon sumac
mineral salt & fresh cracked pepper, to taste
3 - 4 tablespoons olive oil (I used a garlic infused olive oil)
juice of 1 large lemon
pita bread
hummus
arugula

Steps:

  • In a large mixing bowl, combine the chickpeas, black beans, tomatoes, onion, cucumber, garlic, mint and parsley. Add the sumac, a good drizzle of olive oil, lemon juice, salt and pepper. Mix well to combine.
  • Serve at room temperature or chilled. Store leftovers in an airtight container in the refrigerator for up to 5 days.
  • This salad is perfect in pita bread that's been slathered with hummus and layered with arugula. Alternately, you can add a large handful of arugula to the salad and serve with pita bread and hummus on the side.
  • Serves 6
  • Try adding a dash of cayenne pepper or red pepper flakes for a little heat.

I love this salad, the ingredients and the flavors are great. It is a fresh yet flavorful salad that can be used as a side dish or main dish lunch as I usually make it. I found this recipe in The Arab Table by: May Bsisu http://www.amazon.com/Arab-Table-Recipes-Culinary-Traditions/dp/0060586141 a few years back and have been making it ever since.

32 ounces cooked chickpeas
1/2 large white onion, finely diced
1 jalapeno, seeded and minced
2 garlic cloves
1 1/2 teaspoons salt
1 1/2 teaspoons ground cumin
1/4 cup fresh lemon juice
1/3 cup extra virgin olive oil
1 medium tomatoes, chopped-for garnish
2 tablespoons fresh parsley, chopped-for garnish
1/4 teaspoon cayenne, for garnish

Steps:

  • Drain and rinse chickpeas(if using canned) and place in a medium sized bowl.
  • Add the onions and jalapeno.
  • Whisk together the garlic, salt, cumin, lemon juice, and olive oil.
