My family loves this simple parfait for breakfast or dessert (depending on your yogurt and granola choices). The orange zest adds a fresh pop to your usual yogurt parfait. I like serving these on the 4th of July!

¾ cup vanilla yogurt
1 teaspoon grated orange zest
2 large fresh strawberries, sliced
¼ cup maple nut granola
½ cup fresh blueberries

Steps:

  • Mix yogurt and orange zest together in a bowl.
  • Layer some of the strawberries, yogurt mixture, granola, and blueberries in a parfait glass. Repeat layers until all the ingredients are used up.

1 cup chilean raspberries or 1 cup blueberries
1 cup fresh pineapple, chopped
1 cup low-fat yogurt, vanilla or 1 cup lemon
1 medium banana, sliced
1/3 cup dates, chopped
1/4 cup toasted sliced almonds

Steps:

  • Set aside 4 whole Chilean cherries. Remove the pits and slice the remaining cherries in half. In tall or stemmed glasses, layer the cherries, pineapple, raspberries, yogurt, banana and dates. Sprinkle the almonds on top and garnish with a whole, sweet cherry.

This parfait would be a wonderful presentation layered in a glass ice bucket, -or- in a standard trifle dish if you have a large group for brunch...simply increase the quantities to suit. ENJOY!

4 ounces yogurt (plain or your favorite flavor)
4 ounces sweetened whipped cream

  • Place the granola (or muesli) in the bottom of a parfait glass, and top with fruit.
  • In a small bowl, stir together equal parts of yogurt and sweetened whipped cream. Spoon atop the parfait.
