4 (8-inch) flour tortillas
1/2 cup shredded jack cheese
1 cup bean chili (leftover from Barbeque Bean Chili Dogs, recipe follows)
1/4 cup sour cream or salsa for serving
1 cup barbeque sauce
1 (15-ounce) can kidney beans, drained and rinsed
1 (15-ounce) can black beans, drained and rinsed

PICADILLO GROUND BEEF QUESADILLAS

Picadillo Ground Beef Quesadillas image

Picadillo is popular Latin comfort food, and it's typically served with rice. But it's equally delicious served as a quesadilla, and it's a great way to use leftover picadillo. Feel free to garnish with some pico de gallo, pickled hot peppers, cilantro, more cheese, or with your favorite toppings.

SPICY BEEF QUESADILLAS

Spicy Beef Quesadillas image

I did use just a little more cumin and chill powder than called for but I like those two flavors together. I also spray the outside of my quesadillas with cooking spray so they get nice and crispy.
