I've been collecting appetizer recipes for more than 20 years and have a host of tasty treats. These crescent roll bites are perfect for parties because they let you munch while you mingle. -Carol Nelson, Cool, California

6 ounces cream cheese, softened
1 cup shredded cheddar cheese
1/4 cup chopped green chiles
1/4 cup chopped ripe olives, drained
2 teaspoons dried minced onion
1/4 teaspoon hot pepper sauce
2 tubes (8 ounces each) refrigerated crescent rolls

Steps:

  • In a small bowl, beat cream cheese. Add the cheddar cheese, chiles, olives, onion and hot pepper sauce. Separate each tube of crescent dough into 4 rectangles; press perforations to seal., Spread cheese mixture over dough. Roll up jelly-roll style, starting with a long side. Cut each roll into 10 slices; place on greased baking sheets. Bake at 400° until golden brown, 8-10 minutes.

1/2 teaspoon salt
1 1/2 cups finely shredded Monterey Jack cheese
1 cup finely shredded Four Cheese Mexican cheese (or sharp cheddar)
1 can (4 oz finely diced green chiles (hot or mild), drained)
45 fillo shells (or 45 pie crust rounds in mini muffin tin)

Steps:

  • Beat eggs until light and frothy
  • Combine flour, baking powder, and salt in a mixing bowl.
  • Add dry ingredients to eggs and mix well to combine. Fold in cheeses and chiles.
  • Spoon 1 teaspoon of mixture into each fillo shell (or pie crust round).
  • Bake at 350 degrees F. for 20 minutes.

1 cup all-purpose flour
1/2 cup finely grated cheddar cheese
1/4 teaspoon salt
1 egg, beaten
1/2 teaspoon dry mustard
1 tablespoon cold water
1/2 teaspoon hot chili powder
1 tablespoon sesame seeds
1 pinch cayenne pepper
1 tablespoon poppy seed
1/4 cup butter or 1/4 cup margarine

Steps:

  • Preheat oven to 400 degrees F (205'C).
  • Sift flour, salt and spices into a bowl.
  • Cut in butter finely until mixture resembles breadcrumbs.
  • Add grated cheese and mix well.
  • Mix egg with cold water.
  • Add 2 tablespoons of egg mixture to cheese mixture and mix to form a fairly stiff dough.
  • Knead gently on a lightly floured surface.
  • Roll out dough to a 12x6" rectangle.
  • Trim edges.
  • Cut in half lengthwise and transfer to a baking sheet.
  • Brush each half with remaining egg mixture.
  • Sprinkle 1 half with sesame seeds and the other half with poppy seeds.
  • Cut each half in 10 triangles and separate slightly to prevent sticking.
  • Bake in preheated oven 10-12 minutes or until light golden and cooked through.
  • Cool on a wire rack.
  • Store in an airtight container up to 2 weeks.

Steps:

  • Heat the oven to 400 degrees F. Lightly grease 24 (3-inch) muffin-pan cups.
  • Beat the eggs, picante sauce, flour and chili powder in a medium bowl with a fork or whisk. Stir in the cheese and onion.

1 tablespoon water
1/2 cup finely shredded Cheddar cheese (2 oz)

Steps:

  • Thaw pastry sheet at room temperature 30 minutes. Meanwhile, in small bowl, beat egg and water until well blended; set aside. In another small bowl, mix cheese and chili powder.
  • Heat oven to 400°F. Spray large cookie sheet with cooking spray.
  • On lightly floured surface, roll thawed pastry sheet with rolling pin into 14x10-inch rectangle; cut in half lengthwise. Brush egg mixture over both rectangles; reserve remaining egg mixture. Spread cheese mixture evenly over 1 rectangle; top with second rectangle, egg side down. Gently roll pastry to seal.
  • Cut pastry crosswise into 28 (1/2-inch) strips. Twist strips; place 2 inches apart on cookie sheet, pressing ends down. Brush with remaining egg mixture.
