3/4 cup all-purpose flour
3/4 teaspoon ground chipotle pepper
1/4 teaspoon salt
1 cup butter
4 ounces unsweetened chocolate
1 chili dark chocolate candy bar (3-1/2 ounces)
4 large eggs, lightly beaten
1 teaspoon vanilla extract
ICING:
12 ounces cream cheese, softened
2 cups confectioners' sugar
1-1/2 teaspoons vanilla extract
1/4 teaspoon ground chipotle pepper

Steps:

  • Preheat oven to 350°. Sift together sugar, flour, ground chipotle pepper and salt. Set aside., In top of a double boiler or a metal bowl over simmering water, melt butter and both types of chocolate; stir until smooth. Cool slightly. Stir chocolate mixture into dry ingredients. Beat in eggs and vanilla., Spread batter into a 13x9-in. baking pan coated with cooking spray. Bake until center is set, about 25 minutes (do not overbake). Cool completely. , For icing, beat together cream cheese, confectioners' sugar, vanilla and chipotle pepper. Spread over brownies. Cut into 24 bars.

  • In medium bowl, beat powdered sugar, dulce de leche, butter, milk, and vanilla with electric mixer on low speed until smooth and creamy. Spread onto cooled brownies.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine 2/3 cup flour, cocoa powder, 1/4 teaspoon salt, and 1/4 teaspoon baking powder in a large bowl.
  • Stir 3/4 cup sugar, coffee liqueur, 2 eggs, and 1 teaspoon vanilla extract together in a large bowl. Add melted butter and the flour mixture; stir and spread batter into an ungreased 9x13-inch baking pan.

1 cup milk
2 tablespoons melted butter

1/4 cup cornmeal

Steps:

  • Preheated oven 425 degrees.
  • Combine the eggs, milk and butter, beat until smooth.
  • Combine the flour, cornmeal, seasonings, chili and cumin and stir to combine well.
  • Pour the liquid ingredients in and quickly stir to combine and eliminate all lumps.
  • Pour the batter into the muffin tins filling 3 quarters full.
  • Place the popovers into the oven and bake for 35 minutes at the end of the roast=s cooking time and during the rest period, turning the oven up to the desired temperature after you have removed the roast from the oven. Serve immediately.

1 cup butter or margarine, chilled
½ cup confectioners' sugar
½ teaspoon chipotle chile powder
⅓ cup apricot preserves, or preserves of your choice
½ teaspoon chipotle chile powder

1 ¾ cups white sugar
⅜ cup lemon juice
⅓ cup all-purpose flour
1 teaspoon baking powder
¼ teaspoon salt
⅓ cup confectioners' sugar for dusting
½ teaspoon chipotle chile powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch square pan.
  • Combine 2 cups flour, butter, 1/2 cup confectioners' sugar, and 1/2 teaspoon chipotle chile powder in a food processor; pulse until mixture resembles coarse crumbs. Press the mixture into the prepared pan.
  • Bake in preheated oven for 30 minutes, or until firm and golden. Remove from oven and allow to cool at least 20 minutes in the pan.
  • Reduce the oven temperature to 325 degrees F (165 degrees C).
  • In a small bowl, whisk together the preserves and 1/2 teaspoon chipotle chile powder; spread over the cooled crust. Whip eggs with a wire whisk until foamy. Beat in sugar, lemon juice, and salt until the sugar has dissolved. Sift together 1/3 cup flour and baking powder; whisk into eggs until smooth. Pour onto the preserve-topped crust.
  • Bake in preheated oven an additional 35 to 40 minutes, until the center of the egg mixture has set. Sift together 1/3 cup confectioners' sugar with 1/2 teaspoon chipotle powder, and sprinkle over hot lemon bars. Cool completely before cutting into bars.

Pure chile powder is found in gourmet grocery stores and Latino/Mexican markets and specialty online spice stores.

1/4 cup pure chile powder, plus

unsalted butter, for the pan
5 ounces bittersweet chocolate or 5 ounces semisweet chocolate, chopped

Steps:

  • Position oven rack in the lower third of oven; preheat oven to 350°; butter and flour a 13x9 inch baking pan; set aside.

3 large eggs, at room temperature

Steps:

  • 1. Position the rack in the lower third of the oven. Preheat the oven to 350°F. Butter and flour a 9x13-inch baking pan; set it aside.
  • 2. In a medium bowl, whisk the flour, chile powder, baking powder, and salt until well combined. Set aside.

  • 5. With a wooden spoon or a rubber spatula, stir in the flour mixture just until incorporated. Do not beat. Spoon the batter into the prepared pan, spreading it gently to the corners.
  • 6. Bake for 20 minutes, or until a toothpick or cake tester comes out with a few moist crumbs attached. Set the pan on a wire rack to cool for at least 30 minutes.
  • 7. Cut the brownies into 24 pieces while they're still in the pan. Carefully remove them with an offset spatula. Serve immediately, or let cool completely before covering with plastic wrap for storage at room temperature. They will stay fresh for up to 3 days. The brownies can be tightly wrapped in wax paper, sealed in a freezer-safe bag, and frozen for up to 2 months; allow them to thaw at room temperature before serving.

Steps:

  • Heat oven to 350°F Spray 13x9-inch pan with Crisco® Original No-Stick Cooking Spray.
  • In large bowl, stir brownie mix, oil, water, eggs, chili powder and espresso powder 50 strokes with spoon. Spread batter in pan. Drop spoonfuls of preserves onto batter; swirl preserves and batter with knife in S-shaped curves.
  • Bake 25 to 30 minutes or until toothpick inserted 2 inches from side of pan comes out almost clean. Cool completely, about 1 hour.
  • In medium microwavable bowl, microwave chocolate chips and cream uncovered on High 30 to 60 seconds, stirring every 30 seconds, until smooth. Pour mixture over brownies. Refrigerate 30 minutes (topping will be soft). For brownies, cut into 6 rows by 3 rows. Store loosely covered in refrigerator.
