CHILI LIME ROASTED SWEET POTATOES

3 tbsp. coconut oil
3 cloves garlic
1 small lime
4 large sweet potatoes
1 tsp. chili powder
2 tsp. sea salt
1 tbsp. Dijon mustard
ground black pepper, to taste
1 pinch cayenne pepper, optional

Steps:

  • Preheat oven to 400F.
  • Melt the coconut oil. Mince the garlic. Juice the lime. Wash and cut the sweet potatoes into spears.
  • Mix all ingredients apart from sweet potatoes in a large bowl.
  • Toss sweet potatoes in mixture and combine well.
  • Place potatoes on baking sheet lined with parchment paper or silpat and bake for 20 minutes. Then turn over and cook for another 10 minutes.
  • Remove from oven. If necessary, reduce heat and return potatoes to the oven to keep warm.

zest and juice of one lime
3 Tbsps unrefined coconut oil, or avocado oil (melted if using coconut)
2 tsp sea salt
1 tsp chili flakes, or more if desired
1-1/2 lbs. sweet potatoes or yams
coarsely chopped fresh cilantro, for serving
Optional: crumbled cotija cheese & fresh lime wedges to garnish

Steps:

  • Preheat your oven to 425 degrees f.
  • Line a large baking sheet with parchment paper.
  • In a large mixing bowl, whisk lime zest, juice, oil, sea salt and chili flakes.
  • Rinse and scrub your sweet potatoes thoroughly to remove any dirt. Pat the excess moisture with a paper towel.
  • Carefully cut your potatoes into large pieces using a very sharp knife.
  • Add your potato pieces onto the bowl of prepared lime dressing, tossing until very well coated.
  • Now spread the potatoes onto your prepared baking sheet in a single layer, with space in between, and bake for 30 minutes flipping halfway through until fork tender and nicely browned.
  • Once done, remove from the oven and transfer to a serving platter.
  • Garnish with fresh cilantro leaves, and crumbled cotija cheese if desired. Serve while warm and enjoy!

  • Toss 1 1/2 pounds sweet potatoes(cut into 1-inch pieces) with 2 tablespoons olive oil, 1 teaspoon each chili powder and kosher salt and a few grinds of pepper. Spread on a baking sheet and bake at 450 degrees F, stirring halfway through, until crisp, 35 to 45 minutes. Puree 1/4 cup warm water, 1 minced garlic clove, the juice of 1 lime, 2/3 cup cilantro, 3 tablespoons sunflower seed butter and 1/4 teaspoon kosher salt in a blender. Serve with the potatoes.

1/3 cup olive oil
1/4 cup lime juice
4 teaspoons chili powder
3/4 teaspoon salt
