HAM FRIED RICE WITH EGGS
This family-friendly dinner comes together quickly on a busy weeknight, all in one skillet. As the eggs cook atop the rice, the rice forms an irresistible crispy layer on the bottom. Starting with purchased matchstick-cut carrots cuts down on prep work, and the slender pieces cook much more quickly than chopped carrots.

- Heat oil in a large nonstick skillet over medium-high heat. Add bell pepper and carrots; saute 2 minutes. Add 3/4 cup green onions, ham, green peas, and garlic; saute 3 minutes.
- Add unheated rice to skillet. Drizzle with soy sauce and vinegar; cook 3 minutes, stirring occasionally. Make 4 indentations in rice mixture; crack 1 egg into each indentation. Cover pan; cook until egg whites are set and yolks are cooked to desired degree of doneness, 5 to 7 minutes. Uncover and garnish with remaining 1/4 cup green onions.

- In a large nonstick skillet, heat 1 tablespoon oil over medium-high. Add ham, scallion whites, garlic, and ginger; season with salt and pepper. Cook, stirring frequently, until beginning to brown, 2 to 4 minutes.
- Add rice, scallion greens, vinegar, and soy sauce. Cook, stirring, until heated through, 2 to 4 minutes. Divide fried rice among four serving bowls.
- Wipe out skillet with a paper towel. Heat 1 tablespoon oil over medium. Gently crack eggs into skillet; season with salt, and cook until whites are set, 2 to 4 minutes. Top each bowl of rice with a fried egg.

HAM AND EGG FRIED RICE
Steps:
- Heat a wok or a small, heavy skillet over high heat. Add 1 1/2 tablespoons oil, swirl to coat the pan. Add eggs and scramble them. As soon as there is no more freely running egg, turn them out into a bowl and break them into small bits. They should be soft and a bit runny -- not brown.
- Heat the wok or a large skillet and add 2 tablespoon oil to coat. Add the rice and toss briskly to coat and separate each grain, about 2 to 3 minutes. Add the ham and peas. Toss to mix in the ingredients and allow the mixture to heat through, about 30 seconds. Return the eggs to the pan and toss to combine. Season with salt, scallions and peanuts, tossing another 5 to 10 seconds to let the eggs get hot.
FRIED RICE WITH HAM
An authentic Chinese fried rice that uses leftover ham. Shrimp or other ingredients can also be added. It can be prepared with or without soy sauce.

Steps:
- The rice should be smoothed out to get rid of any lumps.
- Day old, cold rice works best.
- If using eggs (recommended), lightly beat them with a pinch of salt.
- Heat a little oil in your wok, pour eggs in and tilt the wok back and forth to spread evenly.
- Lift the edges to let the uncooked portion come in contact with the hot pan so it cooks evenly.
- After the eggs set up a little, lightly scramble them so you have medium small pieces.
- Remove eggs to a bowl.
- Wipe out wok.
- If adding raw shrimp, heat a little more oil and stir fry them to just cook.
- Remove to a bowl.
- Wipe out wok again.
- Heat a little more oil.
- Add the onions& stir fry until they start to darken.
- Stir in the rice, breaking up any lumps you missed.
- Drizzle a little dry sherry down the sides of the wok.
- (The surface of the wok should be slick with oil. If too dry looking, drizzle a little more oil down the sides of the wok).
- If you want the rice to look brown, drizzle in a little light soy sauce.
- Stir in all of the other ingredients and season to taste with salt and white pepper.
- Continue to stir and cook until heated through.
FRIED RICE WITH HAM
This is a great recipe that your family will love and is easy to make. Cook the rice a day ahead or buy some from a local Asian restaurant. The quality of the ham used makes a big difference in the recipe results.

- 1. Heat a 14-inch flat-bottomed wok over high heat until a bead of water vaporizes within 1 to 2 seconds of contact. Swirl in 1 tablespoon of the oil, add the garlic and scallions, and stir-fry 10 seconds. Add the rice and the peas and stir-fry 2 to 3 minutes, breaking up the rice with a metal spatula.

- Get all of your ingredients ready: a bottle of vegetable oil; 4 cups cooked rice that you have separated into individual grains with wet fingers (rinsing your hands frequently to remove the starch); 3 eggs that you have beaten in a cereal bowl; 1-2 cups diced cooked ham; 2 green onions that you have thinly sliced; in a ramekin or other small bowl put 1/4 -1/2 teaspoons coarsely ground black pepper, 1/2 teaspoon sugar, and 1 teaspoon salt-stir to combine; and get out a bottle of sesame seed oil.
- Heat a large frying pan over medium-high heat for about 3 minutes (for an electric stove, less time for a gas stove).
- Add 2 Table. vegetable oil and swirl to coat the pan.
- Add the eggs, and again, swirl the pan so that the eggs are covering the whole surface.
- When the eggs have started to set up, use a spatula to stir and flip over the eggs until they are firm and cooked. Add the ham, and the spices from the ramekin and stir for about 15 seconds.
- Add 2 Tablespoons more oil to the pan and then the rice. Use the spatula to frequently stir and flip over the rice. Cook for about 4 minutes to toast the rice a bit.
- Add the green onion, stir to blend and cook for about 30 seconds.
- Check for salt. Drizzle 1 teaspoon sesame seed oil over the rice and remove from heat. Lightly toss for the sesame oil to blend a bit.
- Variations: If you have leftover hash brown potatoes, you can also stir them in the last couple of minutes. If making for lunch or dinner, I often add 1 teaspoon minced garlic (or 1 teaspoon minced ginger or 1/2 teaspoons of each) and some petite frozen peas (You don't have to thaw the peas, as the heat from the rice will thaw them.) During late spring, sauted asparagus is delicious in place of the peas. Other meats that are good in this recipe, instead of ham, are crisp bacon pieces and diced Canadian bacon. You usually don't find black pepper in fried rice, but it makes the rice taste extra good.
