EASY HOMEMADE CHINESE LEMON CHICKEN



Easy Homemade Chinese Lemon Chicken image

A simple Chinese-inspired dish of lemon chicken. Pair with fried rice or steamed vegetables.

1 cup soy sauce
1 large egg
¼ cup lemon juice
2 tablespoons rice vinegar
2 teaspoons white sugar
1 teaspoon Chinese hot prepared mustard
4 skinless, boneless chicken breasts, cut into small chunks, or more to taste
½ cup cornstarch
2 tablespoons canola oil
1 cup chicken broth
2 tablespoons lemon juice
1 tablespoon honey
1 tablespoon cornstarch

Steps:

  • Whisk soy sauce, egg, lemon juice, rice vinegar, sugar, and hot mustard together in a medium bowl. Add chicken, cover, and let marinate in the refrigerator for at least 1 hour.
  • Remove chicken from marinade and toss in a large mixing bowl with 1/2 cup cornstarch. Be sure to coat thoroughly. Discard marinade.
  • Heat oil in a large skillet over medium heat. Pan-fry chicken in batches until browned and no longer pink in the center, about 5 minutes per batch. Transfer to a tray covered with paper towels to absorb excess oil.
  • Whisk chicken broth, lemon juice, honey, and cornstarch together in a medium saucepan. Bring to a boil; reduce heat and stir constantly until sauce becomes translucent and begins to thicken, about 10 minutes. Remove from heat and top cooked chicken with sauce.

1 c chopped cooked chicken
1/4 c sliced almonds
1/4 c chopped red bell pepper
2 tbsp sliced green onions
2 tbsp chutney
1/2 tsp curry powder
1/3 c mayo
2 (12oz) cans refrigerated crescent roll dough

Steps:

  • Preheat oven to 350. Combine chicken, almonds, bell pepper, green onions, chutney, curry powder and mayo in a medium bowl Unroll crescent dough on a lightly floured surface. Seperate into rectangles. Cut each rectangle into 8 squares Place a tbsp of chicken mixture on each square of dough. Fold corners to enclose filling; press to seal Place filled pastries on an ungreased baking sheet. Bake until golden brown, about 10 min

1 1/2 lbs chicken breasts, boneless, skinless
1/2 cup lemon juice
1/4 cup soy sauce
1/4 cup Dijon mustard
2 teaspoons vegetable oil
1/4 teaspoon cayenne pepper
1 cup long-grain rice, uncooked

Steps:

  • Cut chicken breasts into 1-inch cubes. Mix lemon juice, soy sauce, mustard, oil, and cayenne pepper. Put marinade and chicken in a 1-gallon bag and freeze.
  • To prepare, thaw chicken and remove from marinade. Bring marinade to a boil in a small saucepan.
  • Spray broiler pan with nonstick spray and place cubed chicken on the pan, with pieces about 1 inch apart.
  • Broil 4 to 5 inches from heat for about 7 minutes, brushing with marinade once.
  • Turn cubed chicken and broil another 4 minutes.
  • While chicken is cooking, prepare rice according to package directions.
  • Suggested sides: Lentil salad.
