Five Spice Slow Cooker Pork with Noodles image

With a nod to the sweet, savory flavor of char siu (Cantonese-style barbecue pork), this set-it-and-forget-it-style slow cooker recipe yields wonderfully tender pork shoulder that pairs perfectly with Chinese egg noodles.

3 pounds trimmed pork shoulder
1 teaspoon Chinese five-spice powder
1 teaspoon kosher salt
3 cups chicken broth
1 cup dark soy sauce
1/4 cup packed dark brown sugar
2 tablespoons toasted sesame oil
1/2 teaspoon crushed red pepper
4 scallions, cut into 2-inch pieces
1 garlic head, halved
1 (2-inch) knob unpeeled fresh ginger, thinly sliced
8 dried shiitake mushrooms, optional
Hot cooked Chinese egg noodles, for serving

Steps:

  • Rub the pork all over with the five-spice powder and salt. Add the chicken broth, soy sauce, brown sugar, sesame oil, and red pepper to the slow cooker. Stir to dissolve the sugar. Add the scallions, garlic, ginger, the mushrooms, if using, and the meat, turning it a few times to coat. Cover the cooker, set it on HIGH, and cook for 4 hours. Set the cooker on LOW and cook until the meat is very tender, at least another 2 hours (6 hours total).
  • Transfer the pork to a platter, cover lightly, and let rest 15 minutes. Meanwhile, pour the cooking liquid into a measuring cup and skim off and discard the vegetables and fat that rise to the surface. Slice the meat and serve warm or at room temperature with noodles and the sauce on the side.

1 (2-3 inch) knob unpeeled fresh ginger, thinly sliced

Steps:

  • Rub the pork all over with the five-spice powder. Add the chicken broth, soy sauce, brown sugar, sesame oil, garlic powder and red pepper to the slow cooker. Stir to dissolve the sugar. Add ginger, the mushrooms, if using, and the meat, turning it a few times to coat. Cover the cooker, set it on HIGH, and cook for 6 hours. Steps:

  • Place onions in a 5-qt. slow cooker. In a small bowl, combine the garlic, salt and pepper. Cut roast in half; rub with garlic mixture. Put roast in the slow cooker and add bay leaves.
  • In a small bowl, combine hot water and honey; stir in the soy sauce, vinegar, ginger and cloves. Pour over pork. Cover and cook on low for 4-5 hours or until a meat thermometer reads 160°F.
  • Remove meat and onions from slow cooker; keep warm. Discard bay leaves. In a small bowl, combine cornstarch and cold water until smooth. Gradually stir into slow cooker. Cover and cook on high for 30 minutes or until thickened, stirring twice.
  • Slice pork; top with onions, sauce and sesame seeds. Serve on a bed of rice if desired.

Red-cooking is a popular technique for slow-cooking meat, poultry, and even tofu in a soy-based liquid to give it a deep reddish brown color. Traditionally, the cooking liquid is reserved and used repeatedly, as its flavor intensifies with each use. The meat need not be browned, it gets plenty of color and flavor from the soy sauce. Use a good quality, naturally fermented soy sauce if you can find one. Serve with plain white rice. I got this recipe from The Joy of Cooking. It is sooooooo wonderful. This also works very well in the crock pot on low for 8 hours, or high for 3-4 hours.

4 scallions, cut crosswise in thirds
2 large garlic cloves, crushed
ginger, thinly sliced
4 cups water (or 2 cups chicken stock and 2 cups water)

3/4 cup rice wine, Scotch or 3/4 cup sherry wine
1/4 cup packed brown sugar
4 star anise or 1 1/2 teaspoons anise seed
1 (3 inch) cinnamon sticks
1 (7 lb) picnic pork shoulder

Steps:

  • Heat oil in a large, heavy Dutch oven over medium-high heat.
  • Add scallions, garlic, and ginger and toss in the oil until heated through, about 1 minute.
  • Add water (or stock and water mix), soy sauce, rice wine (or scotch or sherry), brown sugar, anise, and cinnamon stick.
  • Bring to boil, then add pork picnic shoulder.
  • Turn the meat to cover it with liquid and color it.
  • Reduce the heat and cover the pan.
  • Simmer, turning the meat every hour and basting it, until it's fork tender, 3 to 4 hours.
  • Remove the meat from the pan and spoon off the fat from the pan juices.
  • Slice the meat.
  • Serve with the pan juices.

2 tbsp olive oil
1.5kg piece pork shoulder
250ml white wine
250ml chicken stock
4 bay leaves
2 sprigs of rosemary
1 tsp black peppercorns
1 garlic bulb

Steps:

  • Remove the fat from the pork shoulder (you can get your butcher to do this bit for you). Season the pork with salt and pepper then heat the oil in a large frying pan over a medium to high heat. Brown the pork shoulder on all sides then transfer to a slow cooker. Add all the other ingredients, then cook on low for 6-8 hours until the meat pulls apart when pressed with two forks.
  • Remove the meat, place on a plate and shred it with two forks. Remove the herbs from the sauce and squeeze the garlic cloves out of their skins back into the pot. Put the meat back into its sauce for wonderfully tender and moist slow cooker pork. Serve as an alternative to your Sunday roast with roasted new potatoes, or with a big green salad, mustard and warmed baguettes.

1/2 cup hoisin sauce
1/4 cup soy sauce
1/4 cup ketchup

1/2 cup chicken broth
Fresh cilantro leaves

Steps:

  • Combine first 7 ingredients; pour into a large shallow dish. Add pork; turn to coat. Refrigerate, covered, overnight., Transfer pork and marinade to a 4-qt. slow cooker. Cook, covered, 5-6 hours on low or until tender. Remove; when cool enough to handle, shred meat using 2 forks. Skim fat from cooking juices; stir in chicken broth.   • Preheat oven to 170°C. Remove string from the pork shoulder and place in a large deep roasting pan.
  • Combine the ginger, soy sauce, 2 tsp oil, hoisin sauce, 1½ tbs honey and ¼ cup (60ml) water. Pour marinade over the pork and cover with baking paper.
  • Meanwhile, place the rice in a large saucepan with 2 cups (500ml) water. Bring to the boil over high heat and cook until the water has been absorbed.
  • Place the cucumbers on a chopping board. Use a cleaver or pestle to gently crush until cucumbers start to split and the edges become jagged. Coarsely chop into 3cm pieces and place in a large bowl.
  • Combine the chopped chilli, garlic, vinegar, remaining honey and remaining oil in a bowl. Add the cucumber. Sprinkle with coriander and sesame seeds and toss to combine.
  • Use 2 forks to shred the pork. Transfer to a serving platter and drizzle with pan juices. Sprinkle with sliced red chilli and sesame seeds. Serve with the rice and smashed cucumbers.
