POMODORO FRESCO SOURDOUGH BRUSCHETTA
Steps:
- Preheat the oven to 350 degrees F.
- Cut the baguette in half lengthwise, place on a sheet tray and bake in the oven until lightly brown. Rub with the garlic cloves. Drizzle with 2 ounces of the olive oil and sprinkle with the Parmigiano-Reggiano. Return to oven to melt cheese.
- In a medium mixing bowl, add the tomatoes, minced garlic, basil, vinegar, remaining olive oil, salt and pepper. Mix thoroughly and let sit for 5 minutes at room temperature.
- Remove baguette from oven and top with the tomato mixture. Garnish with basil and Parmigiano-Reggiano.
CHIPOTLE BARBACOA
This is as close to a certain big chain's barbacoa meat I have ever made! It is full of intense flavors such as garlic, cayenne, and sweet, smoky chipotle. Make sure you scale down the cayenne and serrano if you can't handle heat because this recipe is packin' lots of it! Serve on corn or flour tortillas garnished with cilantro and topped with lime cilantro rice (from this website), black beans, pico de gallo, guacamole, cheese, lettuce, and sour cream.

Steps:
- Heat oil in a large skillet over low heat, gradually increasing heat to medium-high. Add beef chuck pieces; cook until browned, about 10 seconds per side. Transfer beef to a slow cooker.
- Combine apple cider, chipotle peppers, lime juice, garlic, cumin, serrano pepper, cayenne pepper, oregano, black pepper, garlic powder, salt, and ground cloves in a blender or food processor; blend until smooth. Pour over beef in the slow cooker.
- Stir chicken broth, onion, and bay leaves into the slow cooker.
- Cook on Low until beef is fork-tender, 6 to 8 hours. Shred beef using 2 forks.

CHIPOTLE BRUSCHETTA
A friend recently made a batchof Mague's Chipotle Chutney and I thought how wonderful it would be on a bruschetta with tomato & Monteray Jack cheese. This is the result. The recipe for Mague's Chutney is recipe #117377 but you may substitute Chipoltle in Adobo sauce. Watch how much chipotle you use it can be very hot. I sometimes cut the cheese in little stick instead of grating it Serve as an appetizer.

Steps:
- Paint one side of the baguette slices with olive oil , place oil side up on a cookie sheet and toast in a 300F oven until lightly browned, flip & just dry the bottom side.
- A head of time chop your tomatoes, finely chop the chipotle peppers and grate your cheese.
- Preheat oven to 350f.
- 20 minutes before serving assemble the Bruschettas.
- Evenly distribute the tomatoes on the 12 slices, top with apprx 1 tsp chpotlr and cheese.
- Place in 350f oven for apprx 15 minutes or until the cheese has melted. I like to turn on the broiler for the last minute or two.

Ths is a recipe I threw together from thingsI had leftover on hand. I couldn't find a duplicate recipe on Zaar so I am posting this one. It is spicy but you may make it hotter or decrease the heat with the amount of Chipotle in Adobo sauce you use. Quick and easy

- Mix together the crab, chipotle & tomato.
- Put a heaping tsp on each toasted baguette slice, toasted side down.
- Shake 1/2 tsp of parmesan on top of each.
- Bake in 375F oven for 10 minutes.
- Brown under broiler for 2 minutes if necessary.

- Heat oven to 200C/180C fan/gas 6. Brush the bread on both sides with oil, then roast on the top shelf of the oven for 10 mins until golden and crisp.
- Mix together the crabmeat, lemon juice and 1/2 the zest, the chilli, yogurt and most of the radishes with some seasoning. Spoon the mixture onto the toasts, then top each with the leftover radishes, parsley and scatter over the remaining lemon zest. Season with pepper, drizzle with olive oil and serve with lemon wedges.

- Stir together marinade and chipotle chile in a small bowl. Place tenderloin in a 9-inch square pan.
- Bake at 400° for 20 minutes. Pour marinade mixture evenly over tenderloin, and bake 10 more minutes or to desired degree of doneness. Remove from oven; place beef on a platter, and cover. Let stand 10 minutes; cut into thin slices.
- Melt butter in same pan over medium heat, and cook 2 minutes, stirring to loosen particles from bottom of pan. Add tenderloin and any accumulated juices to pan; toss to coat. Arrange meat mixture evenly on bread slices, and top with desired toppings.
- CHIPOTLE BEEF BRUSCHETTA: Substitute 1 (1 1/2-pound) eye-of-round roast for tenderloin. Prepare recipe as directed, baking roast 20 minutes. Pour marinade over roast, and bake 20 more minutes. Proceed as directed.
