- TO PREPARE THE RIB CHOPS: Preheat the grill to medium. Combine the ingredients for the glaze and mix well. Grill the chops, brushing well with glaze, for about 6 minutes on each side. You can also roast the chops in a preheated 425 degree oven for 10 to 12 minutes, brushing often with glaze, to an internal temperature of about 130 degrees for medium rare, which is suggested.
- TO PREPARE THE GREENS: Melt the butter in a large saute pan over medium heat. Add the shallots and leeks and cook gently for 10 minutes without browning. Add the chard and spinach, cover, and steam for 2 minutes. Uncover, stir well, and cook off the moisture. Deglaze over high heat with bourbon. Season with salt and pepper and serve with grilled chops.

- Preheat oven to 425 degrees.
- In a food processor or blender, blend chipotle peppers, salsa, and lime juice. Place in a shallow bowl.
- Place crushed tortilla chips in a separate shallow bowl.
- Dredge tilapia through the chipotle mixture and then through the tortilla chips. Place the fillets in a greased 9 x 13 inch baking dish.
- Bake for about 20 minutes, until the fillets easily flake with a fork and the edges are browning.
- Garnish with limes and cilantro before serving.

SMOKED HONEY GLAZED TILAPIA
Tried this for a different way to serve Tilapia. Made it up from several different recipes I found online. It really turned out really yummy!!! The salty, spicy, sweet combination with the smoke infusion makes the fish really flavorful. Preparation time includes brine time. I took the advice of the review and cut the salt down from 1 cup to 1/2 cup. I agree, made it a better recipe, thanks for the advice.

Steps:
- Dissolve sugar and salt in the water. Stir and dissolve.
- Add the fillets and refrigerate for minimum of 1 hour and up to 4.
- About an hour before marinating is complete start up smoker.
- You are looking for a temperature of about 200 F and no higher than 225°F.
- Use a good hard wood of your choice. I use pecan most of the time. Alder, hickory, mesquite and cherry are all nice.
- Mix up the salt, pepper and cayenne.
- Take out the Fillets, rinse then pat dry.
- Drizzle olive oil on a platter.
- Place fish on the platter and slide em around to oil the bottoms.
- Generously coat the tops only with honey.
- Sprinkle the mixed seasonings on top only.
- Place fillets directly on grate of prepared smoker and smoke for 1 hour.

- Open can of chipotle peppers in adobo sauce and take out 3 to 5 peppers. Measure 2 tablespoons adobo sauce. Store remaining peppers and sauce for another use.
- Blend chipotle peppers and 2 tablespoons adobo sauce, honey, lime juice, soy sauce, garlic powder, and flour in a blender until almost smooth.

CILANTRO-CHIPOTLE TILAPIA
Steps:
- Preheat broiler.
- Purée cilantro, oil, chiles with some adobo sauce, water, cumin, 3/4 teaspoon salt, and 1/2 teaspoon pepper in a blender until smooth, then coat fish with sauce.
- Line rack of a broiler pan with foil, then broil fish 3 to 4 inches from heat until just cooked through, 6 to 9 minutes.
HONEY LIME TILAPIA
Steps:
- In a large bowl, mix the honey, lime juice, and garlic. Season tilapia with salt and pepper, place in the bowl, and marinate 1 hour in the refrigerator.
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
- Arrange the squash and asparagus in the baking dish. Place tilapia on top of vegetables, and season with poultry seasoning. Discard remaining marinade.
- Bake 20 minutes in the preheated oven, until vegetables are tender and fish is easily flaked. Sprinkle with mozzarella, and continue baking 5 minutes, or until cheese is lightly browned.

- Combine all ingredients for the dressing in a small bowl. Set in the frig. for two hours.
- In a food processor, put Doritos, spices and jalapeno and process until finely crushed. Place on waxed paper when ready to cook.
- Preheat oven to 350 Degrees.
- In a med. bowl, whisk egg.
- Dip fish into egg and then coat both sides of the fish with crust ingredients. Be sure they are well coated.
- Place fish on parchment paper lined baking sheet and squeeze lime over the fish.
- Bake for 30 minute.

- Preheat oven to 325°. Place ham on a rack in a roasting pan. Using a sharp knife, score surface of ham with 1/2-in.-deep cuts in a diamond pattern.
