CHIPOTLE BLACK BEANS (COPYCAT)
These copycat Chipotle Black Beans are easy to make, inexpensive, and healthy! Add to burritos and salads or serve with rice for a tasty vegetarian meal.

Steps:
- In a Dutch oven or large pot over medium high heat, heat oil until shimmering. Add onion and cook until softened, about 5 minutes. Stir in garlic until fragrant, about 30 seconds.
- Add beans, chipotle peppers and adobo sauce, cumin, oregano, and bay leaf. Add enough water to cover and stir to combine. Bring to a boil over medium high heat. Reduce heat and simmer until beans are tender, about 1 1/2 to 2 hours.
- Remove from heat. Remove chipotle chilies if desired and bay leaf. Stir in lemon and lime juices, and season to taste with salt and pepper.

- In a large bowl, combine beans, tomatoes, onion, green pepper, chipotle peppers, adobo sauce and garlic. In another bowl, combine beef, cumin, oregano, salt and pepper., Pour half of the tomato mixture into a 4- or 5-qt. slow cooker; add beef. Top with remaining tomato mixture. Cover and cook on low for 7-9 hours or until meat is tender. Serve with toppings of your choice. Freeze option: Before adding toppings, cool chili. Freeze chili in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little broth if necessary. Sprinkle with toppings.

MIKE'S CHIPOTLE SALSA
I came up with this recipe by adding several ingredients together. After many, many varieties, my wife decided this is the one she loves the most. We make it for almost every get-together with friends and it is always a hit. Enjoy!

- Combine tomatoes, chiles in adobo sauce, cilantro, onion, jalapenos, lime juice, garlic, and salt in a blender. Blend on low speed until all ingredients are coarsely chopped.

CHIPOTLE BLACK BEAN SALSA
I got this "in a hurry" salsa recipe from the McCormick's website. The chipotle chile powder that I use is pretty hot and it is not McCormick's, so I might scale the powder back a little next time. Brought this to a party and it was eaten in a hurry. Because it requires very little chopping, it was ready quickly. I easily doubled the recipe with good results. Prep time does not include 30 minutes in the fridge.

- In a heavy bottomed Dutch oven over medium high heat, heat the olive oil until it shimmers. Saute the onion for 5 minutes, stirring occasionally with a wooden spoon. Add the garlic and cook until fragrant, usually a minute. Remove from the heat.
- Sort and rinse the dried black beans in a metal sieve, then drain them in a metal colander. Dump them into the Dutch oven. There is no need to pre-soak, since they'll be cooked with a little extra water and for a longer time.
- Add the bay leaves, chipotle chili peppers, adobo sauce, cumin, oregano, and the water. We used 8 cups and didn't have to add anymore during the simmering.
- Cover the Dutch oven and bring it to a boil, then reduce the heat to a gentle simmer and cook for 2 1/2 hours or until tender. Stir the beans every 15 minutes so they don't stick on the bottom and to help them cook evenly.
