RASPBERRY MACAROONS IN CHOCOLATE SHELLS
Chocolate gives the bite-size macaroons an appealing crunch, the perfect dessert at a Passover meal. Imagine you're decorating bonbons-embellish each with a different garnish.

- Preheat oven to 350 degrees. Combine coconut, granulated sugar, egg white, and salt in a food processor and pulse until combined, scraping down sides of bowl, if necessary. Add raspberries and pulse until just incorporated. (Do not overprocess.)
- Scoop mounds of coconut mixture 1 inch apart onto a parchment-lined baking sheet, using a 1/2-ounce (1 1/4-inch) ice cream scoop or a tablespoon to form small mounds.
- Bake until macaroons are lightly golden, 28 to 30 minutes, rotating baking sheet halfway through. Transfer macaroons to a wire rack and let cool.
- Place chocolate in a bowl set over a saucepan of simmering water and stir until melted. Add coconut oil, stirring until combined, then remove from heat.
- Dip bottoms of macaroons in chocolate or completely cover with chocolate, transferring as dipped to a wax-paper-lined rimmed baking sheet. Garnish as desired while still warm, then refrigerate until firm, at least 30 minutes and up to 1 day. Serve chilled.

- Mix chocolate graham cracker crumbs and butter together in a small bowl. Press into a 9x13-inch baking pan. Sprinkle walnuts evenly on top. Top with dark chocolate chips, white chocolate chips, and coconut.
- Drizzle sweetened condensed milk evenly over coconut layer. Drop spoonfuls of raspberry preserves on top so there will be some on each bar once baked and cut.

- Preheat oven to 350°F. Press cookie dough evenly onto bottom of lightly greased 13x9-inch baking pan. Bake 16 to 18 min. or until golden brown.
- Melt butter in large saucepan on low heat. Add marshmallows; cook until marshmallows are completely melted and mixture is well blended, stirring frequently. Remove from heat; stir in coconut.

- Preheat oven to 350°F.
- Butter and flour a 13 x 9 inch Pyrex baking dish.
- Melt butter with chocolate over low heat.
- Beat in ½ cup sugar and egg.
- Stir in 1 tsp of vanilla, the flour and a pinch of salt.
- Spread mixture in prepared pan and bake for 15 minutes.
- Let cool 5 minutes.
- Whisk liqueur into jam until smooth and spread over chocolate layer to with a ½ inch of the edge of pan.
- Increase oven temperature to 375 degrees F.
- In processor, grind hazelnuts fine with remaining sugar and salt.
- Add whites and remaining vanilla and blend.
- Spoon carefully over jam topping, covering it completely.
- Bake 25-30 minutes, or until top is firm to touch and tester comes out clean.
- Let cool.
- Cut into 36 bars.

- For the crust: Place an oven rack in the middle of the oven and preheat to 325 degrees F.
- Spray the pan with vegetable oil cooking spray. Lay a 6-by-18-inch piece of parchment paper in the pan, allowing the excess paper to overhang the sides. Spray the parchment paper lightly with vegetable oil cooking spray.
- Blend the biscotti, butter, cocoa powder and brown sugar in a food processor until the mixture forms moist crumbs. Firmly press the crumbs onto the bottom of the pan. Bake for 15 minutes. Cool the crust completely, about 25 minutes.
- Spread the jam in an even layer over the crust using a spatula.
- For the filling: Place the chocolate in a small bowl over a saucepan of barely simmering water. Stir occasionally until the chocolate is melted and smooth.
- Beat the cheese, sour cream, eggs, granulated sugar and vanilla until smooth, using a whisk, in a medium bowl. Pour the batter over the cooled crust. Randomly spoon the melted chocolate over the batter. Swirl the chocolate into the batter, using the tip of a knife. Bake until light golden and the center of the filling jiggles slightly when the pan is gently shaken, about 40 minutes. Transfer the baking dish to a wire rack and cool for 1 hour. Cover the pan with plastic and refrigerate for at least 6 hours or preferably overnight until firm.
- Run a thin spatula around the sedges of the pan to loosen the filling. Cut the bars into 1 1/2-by-2-inch bars using a damp knife. Serve at room temperature.

- Measure flour and baking powder into a bowl. Add 1/2 cup butter, and use a hand mixer to blend butter into flour until well mixed (about 1 minute on med. speed). Stir in 1 egg and the tablespoon of milk. Mix until soft and a ball of dough forms.
- Pat dough into an ungreased 8" square pan, pressing with fingers to evenly cover bottom. Spread raspberry jam over crust layer. Stir together remaining egg, melted butter, sugar, coconut, and extracts. Spread evenly over jam layer.

RASPBERRY CHOCOLATE FRENCH MACAROONS

- Make macaroons:
- Line 2 baking sheets with parchment paper.
- Pulse almonds with 1/2 cup confectioners sugar in a food processor until very finely ground, 2 to 3 minutes, then transfer to a bowl. Sift in remaining cup confectioners sugar, stirring to combine.
- Beat egg whites with salt in another bowl with an electric mixer at medium speed until they just hold soft peaks. Add granulated sugar, a little at a time, beating, then increase speed to high and continue to beat until whites just hold stiff, glossy peaks. Add drops of food coloring to reach desired shade and mix at low speed until evenly combined. Stir almond mixture into meringue with a rubber spatula until completely incorporated. (Meringue will deflate.)
- Spoon batter into bag, pressing out excess air, and snip off 1 corner of plastic bag to create a 1/4-inch opening. Twist bag firmly just above batter, then pipe peaked mounds of batter (the size of a chocolate kiss) onto lined sheets about 1 1/2 inches apart. Let cookies stand, uncovered, at room temperature until tops are no longer sticky and a light crust forms, 20 to 30 minutes.
- Meanwhile, put oven racks in upper and lower thirds of oven and preheat oven to 300°F.
- Bake cookies, switching position of sheets halfway through baking, until crisp and edges are just slightly darker, 20 to 25 minutes. Cool completely on sheets on racks, about 30 minutes.
- Make ganache while macaroons bake:
- Melt chocolate with cream in a metal bowl set over a pan of barely simmering water or in top of a double boiler, stirring until smooth. (Bowl should not touch water.) Remove bowl from heat, then add butter and raspberry extract, stirring until butter is melted. Let stand at room temperature until cooled completely and slightly thickened.
- Assemble cookies:
- Carefully peel cookies from parchment (they will be fragile). Sandwich a thin layer of ganache (about 1/2 teaspoon) between flat sides of cookies.

- Take the eggs out of the refrigerator and leave on the counter to come to room temperature. Line a baking sheet with either a silicon mat or parchment paper. (I prefer parchment paper--later you can dab some macaron batter under each corner to keep it flat.)
- Grind the sugar: If you have caster sugar, lucky you! Measure it out and set aside. If you have granulated sugar, measure the sugar into a food processor and pulse for at least ten seconds. You want it finer than granulated but not as fine as powdered sugar. Set aside.
- Grind the almond flour: Measure out the almond flour and icing sugar into the food processor. Pulse the almond flour and icing sugar for at least ten seconds--you really want to get that almond flour as fine as possible. Then sift together into a medium-sized bowl. Discard any large flour or sugar granules that didn't make it through the sifter. If I want my macarons perfect, I measure the discarded clumps and replace with an equal amount powdered sugar. (This is usually less than 5 grams.) Set aside the sifted flour/sugar.
- Prepare: Measure out the vinegar into the bowl you plan to whip the eggs in. Use a paper towel to soak up the vinegar and rub down the sides of the bowl and your beaters/whisk. This helps remove any fat deposits that would hinder the meringue from whipping up. Make sure all vinegar is soaked up by the paper towel and the bowl is dry. Prepare the piping bag you plan to use to pipe the macarons. (I don't use a tip, I just snip the tip off a wilton piping bag so that there is a 1/4-inch opening.)
