APPLESAUCE BREAD WITH CHOCOLATE CHIPS

Steps:
- Preheat oven to 325 degrees. Grease a 9"x5" loaf pan, set aside.
- In your mixing bowl with an electric mixer, cream together butter, sugar and eggs.
- Sift in four, baking soda and spices, alternating with applesauce, mixing slowly until it's all combined.
- Fold in chocolate chips.
- Pour into prepared loaf pan.
- Bake for one hour, or until bread is golden brown on top and a toothpick inserted inside comes out clean. Cool for a bit in the pan before transferring to a wire rack to cool the rest of the way.
CHOCOLATE APPLESAUCE BREAD
I got this from another recipe site, so I don't know the original source. It is nice and moist and has a good chocolately flavor. The original recipe said to put it in 2 1-lb. loaf pans, but they were so full that the middle was still gooey when the outside was done, so I'm suggesting 3 pans and a slightly shorter baking time.

Steps:
- Beat margarine and sugar at medium speed until smooth and fluffy.
- Add eggs and beat for 1 minute.
- Blend in applesauce (Mixture will look curdled).
- Combine dry ingredients and mix well.
- Make a well in the center; add applesauce mixture and chips and stir just until combined and flour is evenly moistened.
- Spray one 9x5 loaf pan or 3 1-lb.
- pans with nonstick spray and spoon in batter.
- Bake at 350* for about 60 minutes for one loaf or about 35-40 minutes for 3.
- Cool in pan for 10 minutes, then remove from pan and cool on rack.

- In a large bowl, cream butter and sugar. Add the egg and applesauce; mix well. Combine the flour, baking soda, cinnamon, baking powder, salt, nutmeg and cloves. Stir into creamed mixture just until moistened. Fold in raisins and nuts. , Pour into a greased 8x4-in. loaf pan. Bake at 350° for 60-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.

- To make the topping, in a small bowl mix the sugar, cinnamon and finely chopped walnuts. Set aside.
- In a medium bowl combine flour, salt, baking powder, baking soda, cinnamon, and nutmeg. Set aside.
- In a separate large bowl cream butter and sugar. Add eggs and vanilla extract, and mix well. Gradually beat in flour mixture alternately with buttermilk. Stir in apples, walnuts, and semi-sweet chocolate chips. Pour into a greased 9x5x3 inch loaf pan. Sprinkle with topping.
- Bake in a preheated 350 degree F (175 degree C) oven for 50 to 60 minutes. Cool for 15 minutes. Remove from pan. Cool on a wire rack.

- Heat oven to 325 degrees. Brush a 9 1/2-inch kugel-hopf ring mold or Bundt pan with soft butter. Coat with 1/4 cup superfine sugar; tap out excess sugar; set mold aside.
- In the bowl of an electric mixer fitted with the paddle attachment, combine the butter and remaining 2 cups superfine sugar. Beat on medium speed, scraping down the sides with a rubber spatula, until mixture is light and fluffy, about 5 minutes. Add the eggs, and beat 2 to 3 minutes more. Fold in the applesauce, being careful not to overmix.
- In a large bawl, sift together the flour, cocoa powder, cinnamon, nutmeg, ginger, salt, and baking powder.
- Fold the flour mixture into applesauce mixture. Add the vanilla, Calvados, and chocolate pieces; mix until just combined. Pour batter into prepared pan; use a rubber spatula to clean bowl and smooth top.
- Bake until cake pulls away from sides of pan and is springy to the touch or until a cake tester inserted into center comes out clean, about 2 hours. Transfer to a wire tack to cool slightly; turn out cake; let cool completely.
- Sift confectioners' sugar over cooled cake. Pour cider glaze over top of cake, allowing to drip down sides. Garnish with apple chips and crystallized ginger. Serve cake with whipped cream, if desired.
