CHOCOLATE CHIP PECAN COOKIES
I live with a bunch of cookie monsters and these chocolate chip pecan cookies are an all-time favorite in my house.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Combine flour, baking soda, baking powder, and salt in a medium bowl.
- Beat brown sugar, butter, evaporated milk, and vanilla extract in a separate bowl until creamy. Beat in egg. Gradually mix in flour mixture. Stir in chocolate chips and pecans. Spoon into balls and place on cookie sheets about 1 1/2 to 2 inches apart.
- Bake in the preheated oven until golden brown, about 10 minutes. Let cool for about 2 minutes before serving.

- Preheat oven to 300 degrees F (150 degrees C). Grease baking sheets or line them with parchment paper.
- In a medium bowl, whip egg whites to soft peaks. Gradually add the sugar, vinegar and vanilla while whipping to stiff peaks. Fold in chocolate chips. Drop by spoonfuls onto the prepared cookie sheets.
- Bake for 20 to 25 minutes in the preheated oven, until cookies are dry.

- Place egg whites in a small bowl; let stand at room temperature 30 minutes., Preheat oven to 325°. In a large bowl, cream butter, 1/2 cup brown sugar and sugar until light and fluffy. Beat in egg yolks, milk and vanilla. In another bowl, whisk flour, baking powder, baking soda and salt; gradually beat into creamed mixture. Press into a greased 15x10x1-in. baking pan., With clean beaters, beat egg whites on medium speed until foamy. Gradually add remaining brown sugar, 1 tablespoon at a time, beating on high after each addition until brown sugar is dissolved. Continue beating until thick and glossy. Stir in chocolate chips and pecans. Spread over dough in pan., Bake on a lower oven rack until meringue is lightly browned, 25-30 minutes. Cool completely in pan on a wire rack. Using a serrated knife, cut into bars. Store in an airtight container.

CHOCOLATE CHIP AND PECAN MERINGUES
Steps:
- Preheat the oven to 200°F (95°C).
- Line two baking sheets with greaseproof paper or other baking paper.
- Using an electric mixer, beat the egg whites until soft peaks are beginning to form.
- Gradually add the sugar, a bit at a time, and beat until stiff peaks form.
- Beat in the vanilla.
- Remove the bowl from the mixer, and using a rubber spatula, gently fold in the chocolate chips and the pecan halves.
- Using two tablespoons, gently drop tablespoons of batter on to the greaseproof paper.
- Bake for 40 to 50 minutes, or until the outsides are no longer sticky and are beginning to turn golden brown.
- Turn off the oven and leave the meringues inside for 20 to 25 minutes. Be careful they do not get too brown.
- Remove the baking sheets from the oven and allow the meringues to cool a bit before gently peeling them off the greaseproof paper and cooling on a wire rack.
- When cool, store in an airtight container at room temperature for up to two days.

- Preheat oven to 225 degrees. Line 2 baking sheets with parchment paper; set aside. In the bowl of an electric mixer, beat egg whites, cream of tartar, salt, and vanilla until soft peaks form.
