2 cups all-purpose flour
2 1/4 teaspoons baking powder
1 teaspoon coarse salt
1/4 teaspoon ground cinnamon
3 extra-ripe bananas, mashed (1 cup)
3/4 cup light brown sugar
1 stick unsalted butter, melted
1 large egg
1/4 cup milk
1 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350 degrees. Line a standard 12-cup muffin tin with baking cups. In a medium bowl, whisk together flour, baking powder, salt, and cinnamon. In a separate bowl, whisk together banana, sugar, egg, butter, and milk. Stir wet ingredients into dry ingredients then stir in chocolate chips.
  • Divide batter evenly between prepared cups, adding a scant 1/4 cup to each. Bake until tops spring back when lightly touched, about 20 minutes. Cool in pans 5 minutes, then remove to wire rack to cool completely.

1/3 cup low-fat buttermilk or 1/3 cup milk

1 1/2 cups flour
1 teaspoon baking soda

2 -3 tablespoons chocolate chips
2 tablespoons chopped walnuts (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Lightly coat 12 muffin tin liners with cooking spray and place in muffin tin.
  • In large bowl, mash bananas with fork.
  • Whisk in egg, milk, granulated sugar, and brown sugar.
  • In separate bowl, combine flour, baking soda, and salt.
  • Add flour mixture to banana mixture and combine well.
  • Fold in chocolate chips and walnuts.
  • Spoon equal amounts of batter into 12 muffin cups.
  • Bake 20 minutes or until toothpick inserted in center comes out clean.
  • Allow to cool slightly in pan, then remove to wire rack.

1/2 cup old fashioned oatmeal
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup stick butter (softened, 1/2)
1/2 cup mashed banana (about 1 large)
3/4 cup packed light brown sugar
1/4 cup sugar
2 eggs
2 teaspoons vanilla extract
1 1/2 cups chocolate chips

Steps:

  • Preheat oven to 350° F.
  • Line a mini muffin tin with mini cupcake liners.
  • Combine the flour, oatmeal, baking soda and salt in small bowl. In a large mixing bowl, or bowl of a stand mixer, beat the butter until light and fluffy. Beat in the mashed banana. Add the brown sugar, sugar and vanilla extract and beat until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in chocolate chips using more or less depending on how much chocolate you like. Obviously, around here the only choice is - very chocolatey!
  • Drop about a teaspoon or so of batter into each cupcake liner. Liners should be filled pretty close to the top, but with just a little room left.
  • Bake for 13 to 18 minutes or until the tops of the muffins have crisped and turned golden brown. Allow to cool (or not).

Steps:

  • Preheat oven to 400°F. Remove 1/2 cup of the crushed cookies; set aside for the topping. Mash bananas with fork in large bowl. Add egg, milk and oil; mix well. Stir in combined flour, sugar and baking powder just until moistened. Stir in remaining crushed cookies.
  • Spoon evenly into 12 medium muffin cups sprayed with cooking spray. Sprinkle with reserved crushed cookies.

2 large eggs, at room temperature
2 medium bananas
1/3 cup 2 percent milk
1 teaspoon vanilla extract
1/2 cup semisweet chocolate chips

Steps:

  • Preheat the oven to 375 degrees F.
  • Line a 12-cup muffin pan with parchment squares so they come up over the sides, and set aside.
  • Whisk together the flours, wheat germ, baking soda and salt in a medium bowl. Beat the butter and sugars together with an electric mixer until light and fluffy, about 5 minutes. Add the eggs one at a time, beating well after each addition.
  • Mash the bananas with a fork in a separate bowl. Stir in the milk and vanilla. With the mixer on low, alternately add thirds of the flour mixture and halves of the banana mixture to the butter mixture, beginning and ending with the flour mixture. Mix until just combined. Fold in the chocolate chips.
