An awesome alternative to the usual refried beans and tortilla chips. Serve this dip with pita chips or veggie wheat crackers.

- In a food processor, combine the cannellini beans, cilantro, garlic, olive oil and lemon juice. Process until smooth, or to your desired consistency. Taste, and season with salt and pepper.

WHITE BEAN DIP WITH PITA CHIPS

Steps:
- Preheat the oven to 400 degrees F.
- Place the beans, garlic, lemon juice, 1/3 cup olive oil, and parsley in the work bowl of a food processor. Pulse until the mixture is coarsely chopped. Season with salt and pepper, to taste. Transfer the bean puree to a small bowl.
- Cut each pita in half and then into 8 wedges. Arrange the pita wedges on a large baking sheet. Pour the remaining oil over the pitas. Toss and spread out the wedges evenly. Sprinkle with the oregano, salt, and pepper. Bake for 8 to 12 minutes, or until toasted and golden in color.
- Serve the pita toasts warm or at room temperature alongside the bean puree.

Steps:
- Pulse garlic in a food processor until minced. Add beans, cumin, lime juice, and salt; pulse until all ingredients are well combined, 5 to 10 seconds.
- With the motor running, slowly pour olive oil through the feed tube and process until mixture is creamy, about 20 seconds. Transfer to a microwave-safe serving bowl.
- Heat in the microwave on high for 30 seconds.

WHITE BEAN AND CILANTRO DIP WITH TOASTED PITA CHIPS

Steps:
- Special equipment: food processor
- In a food processor add all ingredients and blend until smooth, adding more olive oil to loosen dip, if needed. Season with salt and pepper, to taste, and refrigerate at least 1 hour or overnight, then serve with Toasted Pita Chips.
- Toasted Pita Chips:
- Heat the oven to 400 degrees F.
- Split the pita pockets along the edge to make 2 circles. Slice the garlic cloves in half and rub both sides of the pita disks with the cut side of the garlic. Stack a few pita halves at a time and like a pizza, cut them into 8 wedges. Arrange the wedges on 2 baking sheets and drizzle with olive oil. Mix and toss the wedges with your hands then sprinkle with salt and pepper to taste. Bake until golden brown, about 10 minutes. To store, let cool and put in an air tight container or plastic bag.
VEGGIE BEAN DIP
A sweet and tangy veggie bean dip that goes great with white corn chips like Tostitos Scoops! I got this recipe from a friend who made it when she had game night with her friends. I cut everything by hand to give it a nice look...no food processor! Enjoy...It's addictive!

Steps:
- Drain and rinse the black eyed peas, black beans, pinto beans, white corn and put into a large bowl.
- Finely dice the red pepper, green pepper, celery (enough for one cup) and red onion and add to bowl.
- In a 2 quart sauce pan, combine the vinegar, oil, water, sugar, salt, pepper and garlic (finely minced) and bring to a boil.
- Add boiling mix to bean mix and stir until well coated.
- Cover and refrigerate overnight.
- Drain liquid as you serve it and enjoy with your favorite corn chips!
