CHOCOLATE CHIP COOKIES WITH CHOCOLATE CHUNKS

Steps:
- Beat the butter, granulated sugar and brown sugar in a bowl with a mixer on medium speed until fluffy. Add the egg and vanilla; beat.
- Whisk the flour, baking soda and salt in a bowl. Add to the butter mixture and beat until just combined. Stir in the chocolate chunks.
- Preheat the oven to 350 degrees F. Scoop rounded tablespoons of dough and roll into balls. Arrange on parchment-lined baking sheets about 2 inches apart. Refrigerate 30 minutes, then bake until the cookies are golden on the bottom, 12 to 15 minutes. Cool on the baking sheets, 10 minutes, then transfer to racks to finish cooling.
CHOCOLATE CHUNK COOKIES
Steps:
- Preheat the oven to 350 degrees.
- Cream the butter and two sugars until light and fluffy in the bowl of an electric mixer fitted with the paddle attachment. Add the vanilla, then the eggs, one at a time, and mix well. Sift together the flour, baking soda, and salt and add to the butter with the mixer on low speed, mixing only until combined. Fold in the walnuts and chocolate chunks.
- Drop the dough on a baking sheet lined with parchment paper, using a 1 3/4-inch-diameter ice cream scoop or a rounded tablespoon. Dampen your hands and flatten the dough slightly. Bake for exactly 15 minutes (the cookies will seem underdone). Remove from the oven and let cool slightly on the pan, then transfer to a wire rack to cool completely.
CHOCOLATE CHIP CHUNK COOKIES
This is my recipe that won the local Wal*Mart Cookie Bake Off in Napoleon, Ohio this year.

Steps:
- Combine flour, baking soda, and salt. Set aside.
- In a large bowl , cream the vegetable shortening and the two sugars. Beat in the egg and vanilla. Gradually blend in the dry ingredients.
- Fold in the chocolate chips and the nuts. Cover and chill for 2 to 3 hours.
- Preheat oven to 350 degrees F (175 degrees C).
- Drop cookie by teaspoonfuls onto shiny lightly greased cookie sheets. Bake 10-12 minutes and transfer to wire racks to cool. Take out of oven when lightly colored - they will darken after being taken off cookie sheet.

OREO CHUNK COOKIES
I'm sure I'm not the first genius to devise this concoction, but please let me believe I am. I used, with some modifications, recipe #76416 chocolate chip cookie base, which is a great cookie btw. I thought these were darn good (even though I dislike using pre-packaged foods to bake with!)

Steps:
- Preheat oven to 350.
- Cut oreos in four to six pieces with a sharp knife; set aside. Don't bash them, it doesn't work as well. You want somewhat sizable chunks. Try not to sample chunks.
- Blend flour, salt and baking soda together in a bowl.
- In another bowl, cream together butter, shortening and sugars.
- Add eggs and vanilla.
- Blend in flour mixture in thirds; do not overmix.
- Fold in (by hand) chopped Oreos and the Oreo "dust" left from chopping them up.
- Drop by rounded tablespoons and bake 8 minutes. Do NOT overbake these!

- Preheat oven to 375°. In a large bowl, cream butter, sugar and brown sugar until light and fluffy. Beat in eggs and vanilla. In another bowl, whisk flour, cocoa, baking soda and salt; gradually beat into creamed mixture. Stir in remaining ingredients., Drop by tablespoonfuls 2 in. apart onto greased baking sheets. Bake 6-8 minutes or until set. Cool on pans 1 minute. Remove to wire racks to cool completely. Store in an airtight container.

- Preheat the oven to 350 degrees F (175 degrees C). Line two baking sheets with aluminum foil.
- Beat butter, brown sugar, and white sugar in a large bowl with an electric mixer on medium speed for at least 3 minutes. Scrape down the sides of the bowl and add eggs, vanilla, and cinnamon; beat on low speed until incorporated and fluffy, about 1 minute.
- Scrape down the sides of the bowl again. Mix in 1 cup of flour and baking powder until incorporated. Fold in 1 cup of flour. Fold in remaining 1 cup flour with chocolate chips until nicely incorporated.
- To form cookies, press 1 tablespoon batter between your hands and flatten slightly. Put an Oreo® on top and add another tablespoon dough on top of the Oreo®. Shape dough softly around the cookie to sandwich it. Place on a prepared baking sheet. Repeat to form remaining cookies, spacing them 1 inch apart on the sheets.
- Bake in the preheated oven until edges are golden, about 15 minutes. Cool on the baking sheets briefly before removing to a wire rack to cool completely, 20 to 30 minutes.
