Steps:
- In a microwave, melt chocolate chips; stir until smooth. Dip curved ends of candy canes in chocolate; allow excess to drip off. Place on waxed paper., In a microwave, melt white baking chocolate; stir until smooth. Drizzle over chocolate. Decorate with toppings if desired. Let stand until set., Use to stir servings of hot cocoa.

WHITE CHOCOLATE DIPPED PEPPERMINT COOKIES RECIPE
These White Chocolate Dipped Peppermint Cookies are the BEST Christmas cookies. They taste like the holidays, and are beyond easy to make.

Steps:
- Preheat oven to 350 degrees
- In a medium size bowl, add the cake mix, eggs, and oil, mixing until fully combined.
- Fold in the mini chocolate chips.
- Roll into 1 inch balls and place on a cookie sheet.
- Bake Cookies for 7-8 minutes or until the middle isn't doughy.
- Remove from oven and let cool completely for about 30 minutes - 1 hour.
- Melt the white chocolate chips, stirring every thirty seconds until smooth.
- Dip half the chocolate cookie into the melted white chocolate and sprinkle candy cane crumbles on top.
- Place cookie on wax or parchment paper until the white chocolate has hardened.
- Enjoy! (They also taste delicious dipped in hot chocolate)

- Heat the oven to 300 degrees F and then turn it off. While the oven is heating, line 1 large or 2 standard size baking sheets with parchment paper or a silpat.
- After turning off the oven, beat the egg whites with the whisk attachment of a stand mixer for 3 minutes until peaks have formed. Sprinkle in the cream of tartar and beat in (10-15 seconds).
- As the mixer continues to run on high, slowly spoon in the sugar a little at a time until fully incorporated. The mixture will have a glossy finish.
- Spoon the meringue mixture into the pastry bag and pipe small meringues onto the prepared baking sheets. Pipe until a 1-inch meringue is created then lift the pastry bag up to create a tip (refer to photos).

- To crush mint candies: Place unwrapped mints into a freezer zip plastic bag. If using multiple colored candies and wishing to keep them separate, use separate plastic bags for each color. Using a rolling pin, pound the candies to crush them into small pieces. Over pounding will reduce them to a fine dust which is not desirable. Remove candies and place them into a large, flat dinner plate or baking sheet which will allow the candy canes to be rolled in the crushed candy.
- 2-3 inches of water to boil over a small to medium saucepan. Place the chocolate chips in a metal bowl that sits on top the saucepan without going into the pan. Alternatively the chocolate chips can be melted in a microwave by placing them in a microwave safe bowl, melt on high/100% for one minute, stir and microwave in 10 second increments, stirring in between, until the chocolate is melted fully. Do not over heat in the microwave.
- Using a dinner knife, dip the knife into the melted chocolate and cover the stem of the candy cane, starting directly across from the end of the curved end continuing to the end of the candy cane stem. The coating should be thick enough for the crushed candies to stick but not so much that is coats the crushed candies or drips from the cane.
