CHOCOLATE-FILLED FRENCH TOAST

3 eggs
3/4 cup milk
1 tablespoon caster sugar (superfine)
1 pinch salt
1 tablespoon unsalted butter
8 slices white bread
3 1/2 ounces dark or milk chocolate, chopped
Confectioners' sugar, for garnish

Steps:

  • Whisk together the eggs, milk, caster sugar and salt in a flat dish.
  • Melt the butter in a large frying pan over medium heat.
  • Dip 2 slices white bread into the egg mixture, turning them over so they get completely coated.
  • Add them to the frying pan and sprinkle each one with a 1/4 of the chopped chocolate. Soak the remaining bread pieces in the egg mixture and set them atop the chocolate-slathered bread slices in the pan to make sandwiches. Press them down lightly with a spatula to seal their edges.
  • Fry for 3 minutes per side or until they are golden brown. Remove the sandwiches from the pan and serve immediately or keep them warm while you prepare the rest of the sandwiches. Serve the sandwiches dusted with the confectioners' sugar.

1 cup whole milk
1 teaspoon sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
12 slices day-old bread, crusts removed
3 milk chocolate candy bars (1.55 ounces each), halved
2 tablespoons butter
Confectioners' sugar

Steps:

  • In a large bowl, whisk the eggs, milk, sugar, vanilla and salt. Pour half into an ungreased 13x9-in. baking dish. Arrange 6 slices of bread in a single layer over egg mixture. Place 1 piece of chocolate in the center of each piece of bread. Top with remaining bread; pour remaining egg mixture over all. Let stand for 5 minutes., In a large nonstick skillet, melt butter over medium heat. Toast sandwiches until golden brown on both sides. Dust with confectioners' sugar. Cut sandwiches diagonally; serve warm.

3 eggs
1 cup milk or 1 cup half-and-half cream
2 tablespoons sugar (or more or less to taste)
1 teaspoon vanilla
1/4 teaspoon salt
12 slices day-old bread, crusts removed
3 (1 5/8 ounce) chocolate candy bars, halved
2 tablespoons butter
icing sugar (to garnish)

Steps:

  • Prepare a 13x9" baking pan.
  • In a bowl, beat eggs, milk, sugar, vanilla and salt.
  • Pour half of the egg/milk mixture into an ungreased 13x9" pan.
  • Arrange 6 slices of bread in a single layer over egg mixture.
  • Place 1 piece of chocolate in the center of each piece of bread.
  • Top with remaining bread; pour remaining egg mxture over all; let stand for 5 minutes.
  • In a large skillet, melt the butter over medium heat.
  • Fry sandwiches until golden brown on both sides; remove from frypan and dust with icing sugar.
  • Cut sandwiches diagonally; serve warm.

4 eggs
⅔ cup white sugar
⅓ cup unsweetened cocoa powder
⅛ teaspoon baking powder

Steps:

  • Beat together milk, eggs, sugar, cocoa powder, baking powder, and salt.
  • Heat a lightly buttered skillet or griddle over medium heat.

6 large eggs
2 cups whole milk
1/4 cup sugar
Pinch of kosher salt
2 teaspoons orange zest
1 teaspoon vanilla extract
1 loaf brioche bread, sliced about 3/4-inch thick
3/4 cup chocolate-hazelnut spread
3 ripe bananas, sliced on diagonal
2 tablespoons unsalted butter, plus more as needed

Steps:

  • Whisk the eggs, milk, sugar, salt, orange zest and vanilla in a large bowl. Set aside.
  • Spread half of the bread slices with the chocolate-hazelnut spread and top with the banana slices and remaining bread slices.
  • Pour the egg mixture into a 9-by-13-inch baking dish. Place the sandwiches into the baking dish on top of the egg mixture. Let soak 2 minutes. Flip the sandwiches and soak an additional 2 minutes.
  • Meanwhile, melt 2 tablespoons butter in a large skillet.
  • Remove the sandwiches from the egg mixture and let any excess custard drip off. Working in batches and adding more butter to the skillet as needed, transfer the sandwiches to the skillet and cook on each side until golden brown, about 2 to 3 minutes per side.
