CHOCOLATE FUDGE LOAF CAKE!
A thick, fudgey and delicious chocolate fudge loaf cake, topped with luscious chocolate fudge buttercream frosting, and more!

- Preheat your oven to 180C/160C Fan, and line a 2lb loaf tin!
- In a microwave proof bowl, add the chocolate and butter and heat and mix until melted. I usually do 30 second bursts!
- Add the coffee granules to a mug, and pour over the boiling water and mix until smooth - add the coffee mix into the chocolate/butter and mix until smooth.
- In a separate bowl, add the flour, cocoa powder, baking powder, bicarbonate of soda and sugar to a large bowl and whisk until distributed.
- In another bowl, mix together the buttermilk and eggs.
- Add the three mixes together - I pour the chocolate/coffee mix and the egg/buttermilk mix into the dry ingredients and fold until smooth. You do not need to use a stand mixer as you may over-mix it.
- Pour the mixture into the lined 2lb loaf tin - bake in the oven for 55-60 minutes, or until baked through!
- Leave to cool fully once baked!
- Make sure your butter is at room temperature!
- Beat the butter on it's own for a few minutes to soften!
- Add in the icing sugar and cocoa powder 1/2 at a time, and beat until combined.
- Add the vanilla, and then the evaporated milk a little at a time beating fully in-between each go!
- Slather the frosting onto the top of the loaf cake, and then decorate how you want - chocolates and more!
- Sprinkle on your favourite sprinkles and enjoy!

DADDY'S DELICIOUS MEATLOAF (ABM) BREAD MACHINE
There's no reason for your bread machine to be limited to just bread! Dust it off and break it out to make this delicious, moist meatloaf. You'll need to use the quick bread or cake cycle. Directions for cooking this in the oven are included as well.

- Break up the meat.
- Place all ingredients into bread machine and start on quick bread/cake cycle.
- When machine is done mixing, pause the machine, remove the paddle, and smooth the loaf down if you like.
- Mix the topping ingredients (3/4 cup ketchup with 3 Tablespoons brown sugar) together.
- Pour topping over the top of the meatloaf.
- When done baking, use a spatula and/or fork to remove the loaf from the pan.
- This can be made in the oven. Bake at 350 degrees Fahrenheit for 1 hour.

CHOCOHOLICS DEEPLY DELICIOUS DARK CHOCOLATE RAISIN LOAF (ABM)
Spicy Fruits bread are wonderful, I make them all the time, but sometimes nothing else but chocolate will satisfy! This is based on a Panasonic chocolate loaf, but I didn't think that the standard recipe was chocolatey enough and was too high-fat. This is much lower fat but much more chocolatey. It is wicked! - and it's delicious! (Even for chocaholics that aren't counting the calories). Incidentally I measure this entirely by weight not volume (so I can work out the calories and know exactly how naughty I'm being) so the volume measures are approximations. Including for a very thin glaze of Icing (confectioners) sugar and milk it works out at around 1990 calories for the 765g loaf or 2.6 kCal/g which is pretty excellent - lower than most store-bought fruit loaves let alone the cakes and the chocolate stuff! This is a really indulgent bread that actually is not all that bad for you (provided you don't have it every day :) - certainly a lot better than a candy bar! For serious extra luxury you might like to add a little rum, brandy or possibly sherry in place of some of the water. Yummy!

- Remove pan from bread machine and place on electronic scales and zero them.
- Weigh in the water (243ml water weighs 243g) and the rest of the loaf ingredients and replace pan in the bread machine.
- Select Speciality White / Raisin or similar programme depending on your machine and crust type if required (I use a normal crust setting) and start the machine.
- Into a small bowl weigh the raisins, cocoa powder and oat bran and chocolate chips and mix well with a teaspoon.
- I can't get bitter chocolate chips and used the remains of a bar of bitter (70% Cocoa) chocolate which I chipped up to about 1/4 inch 'cubes' with a small sharp knife. I used 22g total in the bowl putting only the bigger bits into the bowl and retained the tiny bits to sprinkle on my next Cafe latte (I guess you could just sprinkle them on top of the hot fresh-baked loaf). For greater indulgence 30g or so of chocolate would be nice but I'd run out for some reason :). The original Panasonic recipe called for 40g. I recommend staying with bitter or bittersweet chocolate (known as 'Plain Chocolate' in the UK) and avoiding milk chocolate. You could just use bitter or bittersweet chocolate chips if you can get them.
- Add the raisins and chocolate chip mix at the beep or at 4 to 5 minutes before final keading ends. (My machine beeps 9 mins before end of kneading which is too long as it always completely pulverises the fruit. Five minutes of mixing-in time is plenty.
- I glaze after baking with a very thin glaze of icing sugar (1 small Tsp) and 1/2 Tsp dried milk powder mixed with a little warm water. It keeps it a bit moister if you prefer it that way.
- You may need to add a teaspoon-ish of water if the raisins are very dried.
- Bakes approx 1 1/2lb Loaf.
- (Some chopped hazelnuts would really go great in this loaf but I seldom have them as they don't keep. You could perhaps swap all the raisins for about 50g-60g Glace cherries (but do drop the water down to 240ml) and then even perhaps substitute a bit of the water for Kirschwasser (cherry brandy) but haven't tried that combination, yet!).
- This is wonderful topped or sandwiched with Dulce De Leche or squishy banana (or both I imagine). It tastes very much like a dark chocolate Brownie.

UNLEAVENED COMMUNION BREAD
When I offered to be the person to make the Communion bread, I found myself somewhat nervous and intimidated. I tried 4 recipes, 2 leavened and 2 unleavened. I brought samples to some of the church members, and the minister. The members told me which ones they liked. The minister just smiled and said they were all fine, and whatever I did would be good. After several tries, I settled on this recipe. The minister was right... it does not matter. The bread is transformed into the Holy Sacrament at the altar. I use enough whole wheat flour to give it a nice color, and to help give the bread more body. I like to mark the bread with a cross, as a symbol and make it so that it is easily broken. We have 2 services, so I make 3 loaves. I pray as I make the loaves, and feel very humble that I am allowed to do this for our church.

- Sift dry ingredients into a bowl.
- Cut in butter with a pastry blender or 2 knives.
- Add enough milk to pull dough together.
- Turn dough onto very lightly floured surface and kneed gently for 5 minutes or so.
- Weigh dough, and divide into three portions.
- Use 3 small pieces of parchment paper, drawing circles (5 1/2", using a small lid) in pencil, and placing the penciled side down so that the pencil marks do not show on the finished breads.
- Place each portion onto the parchment paper.
- Flatten and shape each loaf into size wanted, (using the markings as a guide) and score. (I flatten to about 1/4" and score with biscuit cutter, pizza wheel, and a fork).
- The photos show how I score the loaves. I score them so there will be 40 pieces per loaf.
- Bake at 400° to 15-20 minutes until slightly brown at the edges. (I place the parchment and bread on a pizza stone to bake and bake them one at a time since my stone only accommodates one).

- Line an 18cm square tin with greaseproof paper.
- Put the milk, sugar and butter in a heavy-based saucepan. Heat gently, stirring continuously with a wooden spoon, until the sugar has dissolved and the butter has melted.
- Bring to the boil for 15-20 mins, still stirring all the time. The mixture will bubble up - when it does, take it off the heat and keep stirring it until it sinks back down. Then return it to the heat.
- Start to take the temperature after about 15 mins (continuing to stir or it will burn on the bottom). The time it takes to come up to temperature may vary, particularly in a cold kitchen. Once it reaches 115C on a temperature probe, remove it from the heat and stir in the vanilla extract and a good pinch of sea salt. Leave to cool for 5 mins.
- Stir in the chopped chocolate and the mixture and keep stirring until the chocolate has melted. Quickly pour the mixture into your prepared tin and leave to set at room temperature.
- Before the fudge has completely set, you can add rows of different toppings like nuts, toffees or mini chocolate buttons - just scatter them over the surface and gently press into the fudge until they stick. Make sure the fudge is only slightly warm when you do this - if it's too hot the toppings can melt. Once set, cut the fudge into small pieces and store in a sealed container.

- Grease an 8x8 inch square baking pan. Set aside.
- Combine sugar, cocoa and milk in a medium saucepan. Stir to blend, then bring to a boil, stirring constantly. Reduce heat and simmer. Do not stir again.
- Place candy thermometer in pan and cook until temperature reaches 238 degrees F(114 degrees C). If you are not using a thermometer, then cook until a drop of this mixture in a cup of cold water forms a soft ball. Feel the ball with your fingers to make sure it is the right consistency. It should flatten when pressed between your fingers.
- Remove from heat. Add butter or margarine and vanilla extract. Beat with a wooden spoon until the fudge loses its sheen. Do not under beat.
- Pour into prepared pan and let cool. Cut into about 60 squares.
