GHIRARDELLI LAYERED CHOCOLATE CHEESECAKE WITH GANACHE GLAZE
The show-stopping recipe will wow holiday guests with two layers of cheesecake, a mirror-like glazed topping, and a crunchy chocolate crust. Pro tip: For the creamiest cheesecake, don't overmix the batter, especially after adding the eggs. Over-beating the eggs can cause the cheesecake to souffle, fall, and crack. Garnish with seasonal fruit such as sugared cranberries, strawberries, etc.

Steps:
- Prepare the Crust: Preheat oven to 350 degrees F. Stir together cookie crumbs, butter, and sugar in a medium bowl until well blended. Press mixture into bottom and up sides of a 9-inch springform pan coated with cooking spray.
- Bake in preheated oven 10 minutes. Cool crust completely in pan on a wire rack, about 30 minutes. Reduce oven temperature to 325 degrees F.
- Prepare the Cheesecake: Beat cream cheese with a heavy-duty stand mixer fitted with paddle attachment on medium speed until smooth and creamy, about 2 minutes. Gradually add sugar and flour, beating until smooth. Add eggs and egg yolks, one at a time, beating on low speed just until yellow disappears after each addition. Beat in vanilla.
- Divide batter into 2 equal portions in separate medium bowls. Pour 1 portion into prepared crust; spread evenly.
- Place Ghirardelli 60% Cacao Bittersweet Chocolate Baking Chips in a small microwaveable bowl. Microwave on medium (50% power) until melted and smooth, 1 1/2 to 2 minutes, stirring every 30 seconds.
- Stir together coffee liqueur and espresso granules in a small bowl until espresso dissolves; stir mixture into remaining bowl of cheesecake batter. Stir melted bittersweet chocolate into coffee batter until blended.
- Gently pour over plain cheesecake batter in prepared crust, and spread evenly. Pan will be very full. Place springform pan on a rimmed baking sheet.
- Bake at 325 degrees F until center is almost set but center still jiggles slightly when pan is prodded, 1 hour and 5 minutes to 1 hour and 15 minutes. Remove to a wire rack and cool completely, about 2 hours.
- Cover pan loosely with aluminum foil and chill 8 to 12 hours. Gently run a knife or offset spatula around outer edge of cheesecake to loosen from sides of pan. Remove sides of pan.
- Prepare the Topping: About 1 hour before serving, bring cream and corn syrup just to a simmer in a small saucepan over medium. Place Ghirardelli Semi-Sweet Chocolate Baking Chips in a small heatproof bowl; pour cream-syrup mixture over chocolate chips. Let stand 1 minute. Whisk gently until smooth. Cool slightly, about 15 minutes.
- Pour chocolate mixture over top of cheesecake, and gently spread to edge of crust. Chill until set, about 30 minutes. Garnish if desired.

Steps:
- Preheat the oven to 350 degrees F. Butter 2 (8-inch) cake pans and line with parchment. Butter the parchment. Sift together the cocoa, baking soda, and 1/2 teaspoon salt into a medium bowl. Into a separate bowl, sift the cake flour.
- In the bowl of an electric mixer, beat the brown sugar and butter until very light and fluffy, 5 minutes. Meanwhile, stir together eggs and vanilla in a small bowl. With mixer on medium speed, add the eggs in two batches, scraping bowl occasionally, until incorporated. Beat the batter on high speed 1 minute.
- Lower the mixer speed to low; add the sifted cocoa mixture and mix until just combined. Alternately, add flour in three parts with sour cream, beginning and ending with flour. With motor running, gradually add the hot water; beat until just combined. Scrape the bowl thoroughly and beat on low speed for 30 seconds.
- Divide the batter evenly between the prepared pans. Bake until the cake pulls away from sides of pan, 30 to 35 minutes. Transfer the cakes to wire racks to cool in pans 30 minutes; remove from pans to cool completely. Meanwhile, make the filling.
- To make the filling: In a medium saucepan, combine 2 1/2 cups water, sugar, corn syrup and cocoa. Bring the mixture to a boil over medium-high heat, stirring often. In a small bowl, combine the cornstarch and the remaining 1/2 cup water; stir into cocoa mixture. Return to a boil over medium heat, whisking constantly, boil 4 minutes or until the mixture is very thick and cornstarch is cooked. Remove from heat; stir in the butter and vanilla. Pour into a bowl and cover the surface directly with plastic wrap; cool completely. Refrigerate until chilled, at least 1 hour, before using.
- To make the frosting: In a microwave-safe bowl, combine the butter and chocolates; microwave until melted. Stir thoroughly to combine, then set aside. In a medium saucepan, whisk the eggs, sugar, and salt until combined; whisk in water. Cook the egg mixture over medium to medium-high heat until it registers 160 degrees on a candy thermometer, stirring constantly with a whisk (create as little foam as possible). Strain mixture through a fine-mesh sieve into a bowl; whisk in the reserved chocolate mixture. Cool completely; refrigerate until stiff enough to spread, about 2 hours and up to overnight.
- To assemble: Cut the tops off the cake layers to make them flat and even on top. Place the bottom layer with trimmed-side facing up on a serving platter; spread blackout filling on top. Place the top layer with trimmed-side facing down on top of the filling. Coat the cake with the frosting.
CHOCOLATE LAYER CAKE WITH CREAM CHEESE RECIPE - (3.8/5)

Steps:
- Preheat the oven to 350°F. Coat three 8-inch cake pans with nonstick spray. Line the bottoms of the pans with parchment paper. Spray each pan again and coat with a thin layer of flour. In a large bowl, combine the sugar, flour, cocoa, baking powder, baking soda, and salt. Add the eggs, milk, oil, and vanilla, and mix until everything is thoroughly incorporated. Stir in the boiling water; the batter will be very thin. Divide the batter evenly among the prepared cake pans. Bake for 30 to 35 minutes, or until a toothpick inserted in the center of each layer comes out clean. Cool the layers in the pans for 10 minutes before transferring to a wire rack to cool completely. Wrap each layer in plastic wrap and refrigerate for several hours or overnight. Make the cream cheese filling and chocolate buttercream (see recipes below). When you're ready to assemble the cake, remove the layers from the refrigerator. If needed, level each layer with a serrated knife or cake leveler. Place the bottom layer on a cake plate. Evenly spread about 3/4 cup of the cream cheese filling over the cake, leaving about 1/2 inch margin around the edges. Top with the second layer and repeat. Finally, top with the third layer. Apply a thin layer of chocolate buttercream over the top and sides of the cake. This is only a crumb coat, so it doesn't need to be perfect. Refrigerate the cake for about 30 minutes. Remove the cake from the refrigerator and apply a final layer of chocolate buttercream, as well as any desired embellishments. CREAM CHEESE FROSTING: Beat the cream cheese and butter with an electric mixer at medium speed for about one minute. Add the vanilla and beat one minute more. Reduce the mixing speed to low, and add the powdered sugar about 1/2 cup at a time. Once the sugar is completely incorporated, beat at medium speed for about two minutes or until fluffy. CHOCOLATE BUTTERCREAM: In a large bowl, combine the powdered sugar and cocoa powder. Beat the butter with an electric mixer at medium speed for about one minute. Reduce the mixing speed to low, and add the sugar/cocoa mixture about 1/2 cup at a time. Halfway through this process, add the milk and vanilla. Once all of the ingredients are thoroughly incorporated, beat at medium speed for about two minutes or until fluffy.
