This recipe, from Cynthia Avice of Lusby, Maryland, calls for a cup of freshly brewed coffee to be added to the batter. You won't taste it in the finished cake; the coffee is there to intensify the flavor of the chocolate.

1/2 cup (1 stick) unsalted butter, cut into small pieces, plus more for pans
4 ounces unsweetened chocolate, chopped
2 cups granulated sugar
1 1/2 cups all-purpose flour, (spooned and leveled)
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup sour cream
2 large eggs
1 cup strong coffee, cooled
1 package (12 ounces) semisweet chocolate chips, (2 cups)
6 tablespoons unsalted butter, cut into small pieces
1 teaspoon vanilla extract
1/2 teaspoon salt
2 1/2 cups confectioners' sugar
1/3 cup milk

Steps:

  • Make cake: Preheat oven to 350 degrees. Butter two 8-inch round cake pans. Line bottom of pans with parchmentpaper rounds; butter parchment. Set pans aside.
  • Heat butter and chocolate in a bowl set over (not in) a pan of simmering water, stirring occasionally, until almost melted. Remove from heat; stir until completely melted.
  • In a medium bowl, whisk together granulated sugar, flour, baking soda, and salt. In a large bowl, combine sour cream and eggs; whisk in coffee. Gradually add dry ingredients then chocolate mixture, stirring until just combined. Divide batter equally among prepared pans.
  • Place pans on same rack in oven; bake, rotating pans halfway through, until a toothpick inserted in the center comes out with a few moist crumbs attached, 30 to 35 minutes. Cool in pans 10 minutes; run a knife along edge of cakes, then invert onto a wire rack to cool completely before frosting.
  • Make frosting: Heat chocolate and butter in a mixer bowl set over (not in) a pan of simmering water, stirring occasionally, until almost melted. Remove from heat; stir until completely melted.
  • With mixer on low speed, add vanilla and salt. Gradually add confectioners' sugar and milk in alternating batches; beat until smooth. Let stand 5 minutes.
  • To frost cake, place a cake layer bottom side up, on a serving plate (tuck strips of waxed or parchment paper under edge of cake), spread about 3/4 cup frosting over the top. Place the other cake layer on top; cover assembled cake with remaining frosting.

1 cup plus 2 Tbsp oat flour
1 cup plus 2 Tbsp barley flour
1 1/4 cups unsweetened cocoa
2 1/2 teaspoons baking soda
1 1/4 teaspoons double acting baking powder
1 1/4 teaspoons salt
3 teaspoons Ener-G Egg Replacer mixed with 4 Tbsp rice milk
1 cup plus 2 Tbsp rice milk
1/2 cup plus 2 Tbsp canola oil
1 3/4 cups plus 2 Tbsp maple syrup
1 1/2 teaspoons vanilla extract
1 cup warm water
AGAVE SWEETENED CHOCOLATE FROSTING
4 ounces unsweetened chocolate
1 cup vegetable shortening
1 cup light agave nectar
2 teaspoons vanilla extract
pinch of salt

Steps:

  • Preheat oven to 350 degrees. Grease two 8-inch round cake pans. Cover the bottoms with a piece of parchment paper cut to fit, then grease again and dust with cocoa powder. In the bowl of an electric mixer, whisk together oat and barley flours, cocoa powder, baking soda, baking powder, and salt. Add egg replacer, rice milk, canola oil, maple syrup, vanilla extract, and warm water, and beat on medium-low about 3 minutes until smooth, scraping down sides of bowl as necessary. Pour even amounts of batter in the two pans, smooth surface, and bake in center of oven about 45 minutes, or until cake is beginning to pull away from sides of pan and a skewer inserted into the center of the cake comes out clean. Cool the pans on a wire rack about 30 minutes. To remove the cakes, cover each pan (one at a time) with a large plate, flip over, and tap the bottom to release the cake. Peel off the parchment paper and flip back onto wire rack right-side-up. Cool the cakes completely before adding frosting. To make the frosting, melt the chocolate and vegetable shortening in a heavy saucepan over very low heat, stirring constantly. Be careful, chocolate burns easily. Once melted, remove from heat. Combine melted chocolate mixture and the remaining ingredients in the bowl of an electric mixer. Beat on medium speed about 15 minutes until cooled and smooth.

2 teaspoons baking powder
8 tablespoons (1 stick) unsalted butter, at room temperature, plus more for buttering the dish
2/3 cup dried apricots
2/3 cup golden raisins
1 tablespoon orange juice plus 1/2 teaspoon orange zest (from 1 orange)
1 3/4 cups whole-wheat pastry flour
1 teaspoon ground cinnamon
1/2 teaspoon fine salt
1 large egg plus 1 large egg yolk
1 teaspoon pure vanilla extract
1/2 cup sour cream
5 pitted dates, chopped
1 ounce unsweetened chocolate, roughly chopped
1/2 cup heavy cream
1 tablespoon unsweetened cocoa powder

Steps:

  • For the cake: Preheat the oven to 350 degrees F and butter an 8-by-8-inch baking dish.
  • Set aside 1/4 cup each of the apricots and raisins and dice; reserve for later. Put the remaining apricots and raisins in a medium bowl and cover with very hot water, then let soak until the fruit is very soft, about 5 minutes. Drain and puree in a food processor along with the orange juice until very smooth.
  • Whisk the flour, baking powder, cinnamon and salt together in a medium bowl.
  • Beat the butter in a large bowl with an electric mixer on medium-high speed until smooth. Add the apricot-raisin puree and beat until incorporated and smooth. Add the egg and egg yolk, vanilla and orange zest and beat until incorporated. Lower the mixer speed to medium-low and add half the flour mixture, then all of the sour cream and then the remaining flour mixture, stopping to scrape down the sides of the bowl as needed (it's ok if the batter has some lumps). Fold in the diced apricots and raisins.
  • Transfer the batter to the prepared baking dish. Bake until golden, the cake bounces back when pressed in the center and a toothpick inserted in the center comes out clean, 25 to 30 minutes. Cool in the pan on a rack.
  • For the frosting: Soak the chopped dates in very hot water until very soft, about 5 minutes. Drain and transfer to the food processor. Put the chocolate in a small microwave-safe bowl and heat for 30 second increments, stirring after each, until melted and smooth. Add to the dates along with the heavy cream and cocoa powder. Process until light and smooth.
  • Once the cake is completely cooled, spread the chocolate-date frosting over the top. Cut into squares and serve.

3 cups light brown sugar, packed
4 eggs
2 teaspoons pure vanilla extract
3/4 cup unsweetened cocoa powder
1 tablespoon baking soda

3 cups sifted cake flour
1 1/3 cups sour cream
1 1/2 cups hot coffee
8 tablespoons (1 stick) unsalted butter, softened at room temperature
16 ounces cream cheese, softened at room temperature
8 ounces unsweetened chocolate, melted
1/2 cup cooled coffee
4 teaspoons pure vanilla extract
6 cups confectioners' sugar

Steps:

  • Preheat the oven to 350 degrees. Butter and flour 3 (9-inch) cake pans. Cut 3 circles of waxed paper or parchment paper to fit the bottoms of the pans, then press them in.
  • In a mixer fitted with a whisk attachment (or using a hand mixer), cream the butter until smooth. Add the sugar and eggs and mix until fluffy, about 3 minutes. Add the vanilla, cocoa, baking soda and salt and mix. Add 1/2 of the flour, then 1/2 of the sour cream and mix. Repeat with the remaining flour and sour cream. Drizzle in the hot coffee and mix until smooth. The batter will be thin. Pour into the prepared pans and bake until the tops are firm to the touch and a toothpick inserted into the center comes out clean (a few crumbs are okay), about 35 minutes. Halfway through the baking, quickly rotate the pans in the oven to ensure even baking, but otherwise try not to open the oven. Let cool in the pan 10 minutes. Turn out onto wire racks and let cool completely before frosting.
  • Frosting: In a mixer fitted with a paddle attachment, cream the butter and cream cheese together until smooth. Drizzle in the melted chocolate and mix. Add the coffee and vanilla and mix. Add the sugar, 1 cup at a time, mixing after each addition. Mix until well blended and fluffy. To frost the cake, use a spatula to cover 2 of the cake layers with frosting. Stack them together. Flip the third cake layer over and rest it on the top to create a very flat top for the cake. Frost on the sides and top. Cover and refrigerate until ready to serve.

3 1/2 tablespoons cornstarch
5 large egg yolks
6 ounces milk chocolate, chopped
1 tablespoon butter
1 teaspoon vanilla extract
1 1/2 cups sugar
1 1/3 cups all-purpose flour
2/3 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup strong fresh-brewed coffee
3/4 cup buttermilk
6 tablespoons vegetable oil
2 large eggs, beaten to blend
1 teaspoon vanilla extract
1 1/2 cups whipping cream
12 ounces bittersweet chocolate (not unsweetened) or 12 ounces semisweet chocolate, chopped
2 tablespoons light corn syrup

Steps:

  • For filling: Bring milk to simmer in heavy medium saucepan.
  • Remove from heat.
  • Combine sugar and cornstarch in large bowl.
  • Beat egg yolks into sugar mixture.
  • Gradually whisk hot milk into yolk mixture.
  • Return mixture to saucepan.
  • Whisk over medium heat until mixture boils and thickens, about 1 minute.
  • Remove from heat; add chocolate, butter and vanilla and whisk until mixture is smooth.
  • Transfer filling to medium bowl.
  • Cool, stirring occasionally.
  • Gently press plastic wrap directly onto surface of filling; cover and chill until cold, at least 3 hours.
  • For cake: Preheat oven to 325°F.
  • Butter 17 1/4 x 11 1/2 x 1-inch jelly roll pan.
  • Line pan with parchment paper.
  • Sift first 6 ingredients into large bowl.
  • Whisk coffee, buttermilk, oil, eggs and vanilla in medium bowl.
  • Add liquid ingredients to dry ingredients; mix just until combined.
  • Transfer batter to prepared pan, spreading evenly.
  • Bake cake until tester inserted into center comes out clean, about 20 minutes.
  • Cool cake completely in pan on rack.
  • Using small knife, cut around edges of pan.
  • Turn cake out onto work surface.
  • Peel off parchment.
  • Trim tough edges.

Steps:

  • Make the cake: Preheat the oven to 350F. In a small saucepan, gently melt the 1 1/4 sticks of butter. Remove from heat and whisk in the milk, oil, and vanilla. Meanwhile, grease two 8-inch round cake pans, then line the bottoms with circles of parchment paper.

Steps:

  • Make cake:
  • Put oven rack in middle position and preheat oven to 350°F. Butter 2 (9- by 2-inch) round cake pans and line bottom of each with a round of parchment or wax paper. Butter paper and dust pans with flour, knocking out excess.
  • Sift together flour, cocoa, baking soda, and salt into a small bowl. Beat together butter and sugars in a large bowl using an electric mixer at medium-high speed until light and fluffy, 3 to 4 minutes in a standing mixer or 4 to 5 minutes with a handheld.   • Make frosting:
  • Heat milk in a 1- to 1 1/2-quart heavy saucepan over moderate heat until hot. Whisk together yolks, flour, 1/3 cup confectioners sugar, and a pinch of salt in a bowl, then add hot milk in a stream, whisking. Transfer custard to saucepan and bring to a boil over moderate heat, whisking. Reduce heat and simmer, whisking, 2 minutes (mixture will be very thick), then transfer to a large bowl. Cover surface of custard with a buttered round of wax paper and cool completely, about 45 minutes.
  • Add vanilla and remaining cup confectioners sugar to custard and beat with cleaned beaters at moderate speed until combined well, then increase speed to medium-high and beat in butter, 2 tablespoons at a time, until smooth. Add chocolates and beat until combined well.
  • Frost cake:
  • Halve each cake layer horizontally using a long serrated knife. Layer cake, using a heaping 1/2 cup frosting between each layer, then frost top and sides with remaining frosting.

5 large eggs, plus 2 large egg yolks
3/4 cup granulated sugar
6 tablespoons ( 3/4 stick) unsalted butter, melted and cooled
2 large eggs, separated
2 cups mascarpone cheese, room temperature
1 cup confectioners' sugar
1/3 cup unsweetened cocoa powder
1 tablespoon orange zest (optional)
3 tablespoons brandy or Grand Marnier
Chocolate Glaze

Steps:

  • Make cake: Preheat oven to 450 degrees, with racks in upper and lower thirds. Coat two 10 1/2-by-15 1/2-inch jelly-roll baking pans with cooking spray. Line with parchment paper; coat with cooking spray. Dust with flour, tapping out excess. In a bowl, whisk together flour and teaspoon salt.
  • In a large bowl, using an electric mixer, beat eggs, yolks, and sugar on medium-high, 2 minutes; increase speed to high and beat until pale and thick, 5 minutes. Sift flour mixture over egg mixture; with a large rubber spatula, fold together until almost blended. Pour butter down side of bowl, folding to combine. Divide batter between pans; smooth with a table knife. Immediately transfer pans to oven and bake until cakes are golden brown and springy when pressed, 6 to 7 minutes, rotating pans halfway through. Let cool completely.
  • Make filling: In a large bowl, stir together egg yolks, mascarpone, sugar, cocoa, orange zest (if using), and pinch of salt. In another large bowl, using an electric mixer, beat egg whites and pinch of salt until soft peaks form. With a large rubber spatula, fold one-third whites into mascarpone mixture; fold in remainder.
  • Invert cakes onto a work surface and gently peel off parchment. Using a serrated knife, trim cakes to measure 10 by 15 inches, then cut each crosswise into thirds. Place 1 cake layer, golden side up, on a platter; brush with brandy and spread with 1 cup filling. Repeat with remaining cake, brandy, and filling, ending with a layer of brandy-brushed cake. Refrigerate until set, about 30 minutes.
  • Make Chocolate Glaze. Pour over top of cake and spread so it drips down sides (or spread along sides). Cover and refrigerate 1 hour (or up to 2 days).

Combine the flour, cocoa, baking powder, baking soda and salt; add to creamed mixture alternately with milk, beating well after each addition. , Pour into a greased and floured 9-in. round baking pan. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool in pan for 10 minutes before removing to a wire rack to cool completely., For frosting, in a small bowl, cream butter until light and fluffy. Gradually beat in the confectioners' sugar, cocoa, vanilla and enough water to achieve spreading consistency., Cut cake horizontally into two layers. Frosting
1 cup whipping cream
1/2 cup (1 stick) unsalted butter, cut into 1/2-inch pieces
1/3 cup sugar
1/4 cup water
2 teaspoons instant espresso powder
1/4 teaspoon salt
16 ounces semisweet chocolate, finely chopped
1 teaspoon vanilla extract

Steps:

  • For cake:
  • Preheat oven to 325°F. Butter and flour two 9-inch round cake pans with 2-inch-high sides. Whisk first 4 ingredients in large bowl to blend. Bring 1 cup water to simmer in heavy small saucepan. Remove from heat. Add 2 tablespoons espresso powder; stir to dissolve. Add chocolate; whisk until chocolate is melted and smooth. Cool slightly.
  • In another large bowl, whisk vegetable oil, sour cream, eggs and vanilla to blend. Add chocolate mixture and whisk to blend well. Add 1/3 of chocolate-sour cream mixture to dry ingredients and whisk to blend. Add remaining chocolate-sour cream mixture in 2 more additions, whisking well after each addition. Divide batter equally between prepared pans. Gently tap each filled pan atop counter to burst any air pockets.
  • Bake cakes until tester inserted into center comes out clean, about 40 minutes. Let cool 5 minutes. Run knife around sides of cakes and turn out onto rack. Cool completely.
  • For frosting:
  • Bring first 6 ingredients to simmer in heavy large saucepan over medium heat, stirring until butter melts. Remove from heat. Add chocolate and whisk until melted and smooth. Whisk in vanilla. Pour frosting into large bowl; cool until thick enough to spread, stirring occasionally, about 3 hours.
  • Place 1 cake layer on plate. Spread 1/3 of frosting over cake. Top with second layer; spread remaining frosting over top and sides of cake. Allow cake to stand 2 hours before serving. (Can be prepared 1 day ahead. Cover and refrigerate. Bring to room temperature before serving.)
