- Place egg whites in a large bowl; let stand at room temperature for 30 minutes. Line a greased 15x10x1-in. baking pan with waxed paper; coat the paper with cooking spray and set aside. , In a large bowl, beat egg yolks on high speed for 5 minutes or until thick and lemon-colored. Gradually beat in sugar. Stir in the orange zest, lemon juice and vanilla. Sift flour and salt together twice; gradually add to yolk mixture and mix well (batter will be very thick). , In a large bowl with clean beaters, beat egg whites on medium speed until stiff peaks form. Gradually fold into batter. Spread evenly into prepared pan. , Bake at 350° for 12-15 minutes or until cake springs back when lightly touched in center. Cool in pan on a wire rack for 5 minutes. , Invert onto a kitchen towel dusted with 1 tablespoon confectioners' sugar. Gently peel off waxed paper. Roll up cake in the towel jelly-roll style, starting with a short side. Cool completely on a wire rack., Unroll cake; spread marmalade evenly over cake to within 1/2 in. of edges. Roll up again. Place seam side down on a serving platter. Cover and refrigerate for 1 hour. Dust with remaining confectioners' sugar. Garnish with orange zest strips if desired.,

CHOCOLATE-ORANGE CAKE ROLL (ROULAGE)
A show-stopping classic rolled cake that may remind you of a jellyroll. This never-fail cake is wrapped around a flavored whipped cream filling and also has a quick sauce to compliment, if desired. The steps may seem lengthy, but these are really quick and easy to prepare. They are great to have in the freezer for drop-in guests or last minute gifts. - Cake Roll:.
- Coat 2 (15 x 10 x 1-inch) jellyroll pans with cooking spray; line with wax paper, and coat again with cooking spray. Set aside.
- Beat eggs in a large mixing bowl at medium-high speed with an electric mixer 5 minutes. Add water, beating at low speed to blend. Gradually add cake mix, beating at low speed until moistened. Beat at medium-high speed 2 minutes. Divide batter in half, and spread batter evenly into prepared pans. (Layers will be thin.).
- Bake each cake at 350 on the middle rack for 13 minutes or until cake springs back when touched in the center.
- When cakes are done, immediately loosen from sides of pans. Sift 4 tablespoons cocoa (or more, as needed) either directly on top of cake or onto a cloth towel. (Do not use terry cloth to avoid sticking.) Turn each cake out onto the prepared towels. Peel off wax paper. Starting at narrow end, roll up each cake and towel together; place cakes, seam side down, in freezer for 15 minutes (recommended), in regrigerator for 1 hour or on wire racks. Cool cakes completely. Yield: 2 cake rolls.
- Filling:.
- Beat whipping cream at medium-high speed with an electric mixer until soft peaks form. Fold in 3 tablespoons Grand Marnier and orange rind; set aside.
- Unroll cake rolls; brush each lightly with remaining 3 tablespoons Grand Marnier. Spread each cake with half of whipped cream mixture. Reroll cakes without towels; place seam side down, on a baking sheet. Cover and freeze at least 1 hour (or up to 3 months, wrapped in foil.).
- Dust cakes with cocoa, and cut into slices (cakes thaw almost as quickly as you can slice them.) Garnish, if desired. Yield: 5 to 6 servings each cake roll.
- Sauce:.
- Heat half-and-half in a heavy saucepan over low heat. Stir in chocolate morsels, marshmallows, and salt. Cook over low heat, stirring constantly, until chocolate and marshmallows melt. Remove from heat; stir in Grand Marnier. Yield: 2 cups.
- * 1/4 cup frozen orange juice concentrate, thawed and undiluted, may be substituted.

CHOCOLATE RASPBERRY ROULADE

- Have ready meringue and cake roll. In a small bowl stir together yogurt, vanilla, and 1 tablespoon sugar.
- In a large bowl with a whisk or an electric mixer beat cream and 2 teaspoons sugar until cream just holds stiff peaks. Crumble meringue into 1/2-inch pieces and gently fold into whipped cream. Reserve 1/2 cup raspberries and add remaining berries and yogurt mixture to whipped cream mixture. Gently fold mixture until just combined.
- Unroll cake roll on kitchen towel and brush inside with Chambord. Gently spoon whipped cream mixture lengthwise along center of cake and roll cake around filling so that long edges just come together. Place roulade, seam side down, on a platter and chill 1 hour to facilitate slicing.
- Just before serving, sprinkle roulade with remaining 2 teaspoons sugar. Cut roulade into slices (each a little less than 1 1/2 inches thick) serve with some reserved berries.
- To make chocolate-covered meringue:
- Preheat oven to 325°F.
- In a bowl with an electric mixer beat whites on high speed until foamy. Add cream of tartar and continue beating until whites hold soft peaks. Add sugar and beat until meringue holds stiff, glossy peaks.
- Line a baking sheet with parchment paper or foil and on it spread meringue about 1/2 inch thick (shape does not matter). Bake meringue in middle of oven 45 minutes, or until crisp. Turn off oven and let meringue stand 1 hour. Remove meringue from oven and cool completely on baking sheet on a rack.
- Carefully peel parchment paper or foil and put meringue, flat side up, on a work surface. In a small heavy saucepan melt chocolate over low heat, stirring occasionally, and spread on meringue in a thin layer. Chill meringue until chocolate is set, about 10 minutes. (Meringue may be made 1 week ahead and kept in a sealed plastic bag in a cool place.)
- To make cocoa cake roll:
- Preheat oven to 425°F. and line a greased 17- by 10 1/2-inch jelly-roll pan with wax paper or parchment paper. Butter paper and dust with flour, shaking off excess flour.
- In a small saucepan bring water to a boil over moderate heat. Remove pan from heat and stir in cocoa powder and vanilla until smooth.
- In a large bowl with an electric mixer beat yolks and 1/3 cup sugar on high speed until pale and thick, about 5 minutes. Add cocoa mixture and beat until mixture is thick again, 3 to 5 minutes. Add flour and salt and beat 1 minute. (If using a standing electric mixer, transfer mixture to a large shallow bowl better suited to folding.)
- In a medium bowl with cleaned beaters beat whites on high speed until foamy. Add cream of tartar and continue beating until whites hold soft peaks. Add remaining 1/3 cup sugar and beat until meringue holds stiff, glossy peaks.
- Stir about one fourth whites into cocoa mixture to lighten and fold in remaining whites gently but thoroughly. Spoon batter into a large pastry bag fitted with a 1/2-inch plain tip and, holding bag with tip about 1/2 inch from surface of pan, pipe lengthwise in side-by-side strips, filling pan. (Alternatively, batter may be gently spread into pan.) Bake cake 8 minutes, or until it springs back when touched lightly in center with finger. Cool cake in pan, covered with a damp kitchen towel, on a rack.
- Invert cake onto towel and gently peel off wax paper or parchment paper. Beginning with a long side, roll up cake in towel jelly-roll fashion.

- Place egg whites in a bowl. Preheat oven to 325°. Line bottom of a greased 15x10x1-in. baking pan with parchment; grease paper. Sift cocoa, flour and salt together twice., In a large bowl, beat egg yolks until slightly thickened. Gradually add 1/3 cup confectioners' sugar, beating on high speed until thick and lemon-colored. Cover cake with waxed paper; cool completely on a wire rack., Remove waxed paper; invert cake onto an 18-in.-long sheet of waxed paper dusted with confectioners' sugar. Gently peel off parchment., In a small bowl, beat cheeses and sugar until blended. Stir in Kahlua, orange zest and vanilla. Spread over cake to within 1/2 in. of edges. Roll up jelly-roll style, starting with a short side. Trim ends; place on a platter, seam side down., Refrigerate, covered, at least 1 hour before serving. To serve, dust with confectioners' sugar.

- Cake:.
- Lightly oil bottom and sides of a 15x10x1 inch jellyroll pan with vegetable oil; line with wax paper and lightly oil and flour wax paper. Set prepared pan aside.
- Beat egg yolks at high speed with an electric mixer until foamy. Gradually add 1/4 cup sugar; beat until mixture is thick and pale (about 5 minutes). Stir in vegetable oil and vanilla; set aside.
- Beat egg whites at high speed with an electric mixer until foamy. Gradually add remaining 1/2 cup sugar, 1 tablespoon at a time, beating until stiff peaks form and sugar dissolves; fold into yolk mixture. Combine flour, baking powder and salt; gradually fold into egg mixture. Spread batter evenly into pan. Bake 350 degrees for 8 to 10 minutes.
- Sift powdered sugar in 15x10 inch rectangle on a cloth towel. When cake is done, immediately loosen from sides of pan and turn out onto towel. Carefully peel off wax paper. Starting at narrow end, roll up cake and towel together; cool completely on a wire rack, seam side down.
- Unroll cake; spread spread with White Chocolate Cream Filling and carefully reroll. Place cake on platter, seam side down. Can sift powdered sugar over roll or frost with Buttercream Frosting and top with chocolate curls.
- White Chocolate Cream Filling:.
- Sprinkle gelatin over water in a small saucepan; let stand 1 minute. Cook over low heat, stirring until gelatin dissolves. Add grated white chocolate, stirring constantly, until chocolate melts; cool 5 minutes.
- Combine whipping cream and gelatin mixture in a small mixing bowl; beat at medium speed with an electric mixer until thickened (do not overbeat). Stir in vanilla and chill. (Yields 1 1/2 cups).
- Buttercream Frosting:.
- Beat butter at medium speed with an electric mixer; gradually add sugar, beating until light and fluffy. Add 1 teaspoon milk; beat until spreading consistency. Add milk, if needed. Stir in vanilla. (Yield 1 1/2 cups).
- Note:.
- To make white chocolate curls, melt 3 ounces white chocolate-flavored baking bar; pour onto wax paper in a 3 inch wide strip. Let cool until chocolate feels slightly tacky, but is not firm. Pull a vegetable peeler or cheese plane across chocolate until curl forms.
